I love oysters, raw, cooked, smoked or any way I can get them. Pan fried is easy, fast and really good. I can eat this by myself easily. Maybe I should double or triple this??

Steps:
- Mix dry ingredients.
- Dredge oysters in this and let sit on paper 5 minutes.
- Heat oil and butter until sizzling hot.
- Add oysters.
- Brown lightly 30-40 seconds on each side.
- Serve immediately with lemon juice or tartar sauce.

PAN FRIED FLOUNDER IN CORNMEAL WITH SMOKED OYSTER-ARTICHOKE RELISH
Steps:
- Combine the yogurt, thyme, and salt and pepper. Spread the yogurt mixture on both sides of the flounder fillets. Season the cornmeal with creole spice. Dredge the flounder in the cornmeal. Heat 1/4 cup of oil in a skillet. Place the crusted flounder into the hot oil. Cook for 3 minutes on each side Drain the fish on a paper towel. Serve the flounder on a plate, topped with the oyster relish. Garnish with parsley.
- Combine, season, and set aside.
PAN FRIED OYSTERS
Steps:
- Run the corn flakes through a food processor until just ground. In a bowl, combine the remaining ingredients, except the oysters and eggs. Add the corn flakes and stir.
- Dredge oysters in beaten egg, then place in breading mix 1 at a time. Cover oyster in mix by pressing lightly. In a medium saute pan, over high heat, heat oil and add oysters. Oysters will be done when the breading is golden.
PAN FRIED OYSTERS WITH AGED SHERRY SAUCE AND OSETRA CAVIAR

- For the Oysters: Dredge oysters in cornmeal. Heat oil in a large skillet until almost smoking. Saute oysters on each side for 1 minute. Spoon 2 teaspoons of butter sauce into each reserved shell. Top with an oyster and a heaping teaspoon of caviar
- For the Aged Sherry Sauce: Place shallots and sherry vinegar in a small saucepan and reduce to 1 tablespoon over high heat. Whisk in the butter, piece by piece. Season with salt and pepper to taste.

- Heat oil in a deep fryer to 350 degrees F.
- Whisk together the buttermilk, garlic powder, paprika and hot sauce in a casserole dish. Whisk together the flour, cornmeal, salt and pepper together in a separate casserole dish.
- Add the oysters to the buttermilk and let soak. Then remove, letting the excess drip off, and dredge through the cornmeal mixture, tapping off the excess. Fry in the hot oil in batches, until golden and crisp, about 2 minutes. Remove to a paper towel-lined plate and sprinkle with salt and pepper. Serve hot with the Remoulade Sauce.
- Mix together the mayonnaise, mustard, paprika, vinegar, Worcestershire sauce and hot sauce in a small bowl until well combined. Season with salt and pepper. Serve immediately or cover with plastic wrap and refrigerate until serving.

Steps:
- Toss the red cabbage, vinegar, salt and sugar. Set aside while you are preparing the other ingredients.
- Heat the 2 tablespoons oil in a large heavy frying pan over medium heat and sauté the garlic until light gold in color. Stir in the onion and sauté until lightly browned. Add the sausages and fry, crumbling with a fork, until cooked through. Add the apple and the red cabbage mixture and turn the heat to high. Sauté, stirring frequently, until the cabbage is glistening and heated through. Remove from the heat.
- Coat the oysters with the cornmeal mixture and place on a plate. Sprinkle the leftover cornmeal mixture over the oysters.
- Preheat the oven to 250°. Heat ½ inch vegetable oil in a large, heavy frying pan until a haze forms over the oil. Fry the oysters, without overcrowding the pan, until golden brown on both sides. Drain each batch on absorbent paper, then transfer to a baking sheet and place in the oven.
- When the oysters are all cooked, reheat the cabbage and sausage mixture over high heat, stirring frequently, until hot and tender-crisp. Place on a heated platter and surround with the oysters.

- Drain oysters, reserving the liquid.
- Mix oyster liquid, eggs, hot sauce and milk.
- Mix cornmeal, cajun seasoning, cayenne and baking powder.
- Saute oysters in butter until edges curl.
- Remove from heat and let cool.
- Dip oysters first in liquid, then dredge in cornmeal mixture.
- Fry oysters in hot pepper oil for three minutes over medium heat, turning once, they are done when golden brown.
- Remove, drain on paper towels.

- Drain oysters; blot oysters dry on paper towels.
- In a small bowl, beat the eggs slightly.
- Place flour and cracker crumbs on separate sheets of waxed paper.
- Lightly coat oysters in flour; shake off the excess; dip into egg, then in crumbs, pressing crumbs to adhere.
- Place on a sheet of waxed paper.
- Heat 2 tablespoons butter and 1 tablespoon oil in a large skillet over med-high heat until butter is melted.

PANKO FRIED OYSTERS FOR TWO
After eating the "World's Best" Fried Oysters at The Old Post Office Restaurant at Edisto, SC, I wanted to duplicate them. This comes mighty close! I believe the double breading and Panko bread crumbs are the secret to these light and crispy oysters. If served as appetizers, they will disappear faster than free money so double or triple the recipe! The Hot Sauce is a modified version of Secret's Recipe #50051 and the perfect complement to these Oysters.

- HOT SAUCE: Mix all ingredients together.
- To allow flavors to blend, refrigerate several hours.
- Hot Sauce will keep several days in the refrigerator.
- Be sure to cover it tightly.
- Line colander with two layers of paper towel.
- Rinse oysters, drain and put in colander, patting to dry.
- EGG DIP: In small bowl, add egg and milk; whisk to blend well.
- If using only egg whites, do not whisk enough to be dry/frothy.
- FLOUR COATING: Put all ingredients in small plastic bag and shake to mix well.
- PANKO COATING: in a small bowl, add ingredients and mix well.
- TO BREAD OYSTERS: Step 1: Dip 2 or 3 oysters in Egg Dip, letting any excess drain off.
- Step 2: Place them in Flour Coating, shaking to completely coat oysters.
- Remove from Flour Mixture.
- Step 3: Repeat step 1.
- Step 4: Place them in Panko Coating bowl.
- Roll them over and get them completely coated with bread crumbs.
- With tongs, gently remove them from breadcrumbs and place in a single layer on a baking tray lined with plastic wrap.
- Repeat Steps 1-4 until all oysters are breaded.
- Cover breaded oysters with plastic wrap and refrigerate at least 2 hours or more.
- This breading can be done up to 8 hours ahead.
- TO FRY OYSTERS: Heat frying oil in deep pan to 375 degrees Fahrenheit.
- With tongs, gently remove oysters from baking sheet and gently drop them into the hot oil.
- Fry the oysters in small (6-8 oysters each) batches to keep from lowering the temperature of the oil too much.
- Fry about 2 minutes or until golden brown on one side, turn and brown other side (about 1-2 minutes).
- Remove from oil and drain on layers of paper towels.
- NOTE: After cooking one batch of oysters, let the temperature of the oil return to about 375, before cooking the next batch.
- If the oil temperature is not hot enough before adding the oysters, they will taste greasy, rather than light.
- Serve immediately with Hot Sauce.
CORNMEAL-FRIED OYSTERS WITH CHIPOTLE MAYONNAISE
Everyone loves fried oysters, and this typical Cajun dish is perfect. It is excellent for a party or any time of year. Buy already shucked oysters to save time and trouble. If you buy the larger B.C. oysters for this dish, cut them in half.

- Combine cornmeal, flour, paprika, thyme, salt and pepper in a dish. Toss oysters in cornmeal mixture.
- Heat enough oil to film base of skillet on high heat. When oil is very hot, add oysters, but do not crowd pan. Sauté for about 1 to 2 minutes or until coating is browned. Remove immediately to serving dish. Add more oil as needed to fry remainder. Serve with Chipotle Mayonnaise (recipe follows).
