PAN FRIED WHITEFISH
Easy to make. Note1: Don't fry at to high of a temp or the coating will burn before the fish cooks. Note2: I like to serve with steamed broccoli and baked potato or wild rice.

Steps:
- Combine crackers, parmesan, and parsley in a shallow bowl.
- Combine flour and pepper in another bowl.
- Place lemon juice and beaten egg in separate bowls.
- Heat oil in 12" frying pan.
- Dip fish in lemon juice, then flour, then egg, and finally the crackers. Place fish in a single layer into the frying pan and fry over low - medium heat for 5-7 minutes per side. Fish should flake when done.
- Drain on paper towel and serve with lemon slices. Garnish with rosemary, parsley, and dill if desired.

PAN FRIED FISH
Steps:
- Heat a heavy pan over medium high heat.
- Season fish on meat side with salt and pepper. Lightly dredge fish in flour and shake off excess. When pan is good and hot, add Canola oil followed immediately by 1 tablespoon butter. As soon as foaming subsides, place fish in pan with the skin side down. Jiggle pan for the first 10 seconds to keep the fish from sticking. Cook until golden crust forms on meat. Carefully turn fish away from you and again jiggle pan for the first few seconds. Cook until skin turns golden brown. Remove to a warm plate.
- Pour out the cooking fat, add remaining butter and quickly fry the capers. Remove pan from the heat, add lemon juice to pan and swirl. Pour sauce over the fish and serve.
PAN-FRIED COD WITH SLAW

Steps:
- Prepare the slaw: Whisk the mayonnaise, vinegar, mustard, sugar, caraway seeds, 1 1/2 teaspoons salt, and pepper to taste in a large bowl. Toss in the cabbage, carrot, apple and scallions; cover and refrigerate.
- Prepare the fish: Whisk the egg and milk in a medium bowl; add the cod and set aside to soak. Mix the flour, cracker meal, cayenne pepper and a pinch of salt on a plate.
- Heat 1 inch of oil in a heavy-bottomed skillet over medium-high heat. Remove the fish from the milk mixture and dredge in the flour mixture, turning to coat. Fry in the hot oil until golden, 2 to 4 minutes per side. Transfer to a paper-towel-lined plate to drain; season with salt and pepper. Serve with the slaw and extra mustard.

PAN-FRIED FISH WITH PUMPKIN PIPIAN
Pipianes are one of the master sauces in Mexican cuisine. Unlike moles, they are seed- and nut- forward but are still flavored with toasted dried chiles. In my version, I use freshly roasted pumpkin purée to create a seasonal and slightly sweet and nutty sauce that is perfect for your favorite pan-fried fish, tofu or roasted vegetables.

- Heat a large skillet over medium-high heat and toast the pepitas and pecans, tossing frequently, until very fragrant and browned in spots, 3 to 4 minutes; transfer to a large heavy pot.
- Toast the ancho chiles in the same skillet, pressing them down with a metal spatula to make contact with the skillet, until lightly toasted on both sides, about 30 seconds total. They will burn easily so press down and turn them quickly. Transfer to the pot with the pepitas and pecans.
- Add 4 tablespoons of the oil to the pot with the pepitas, pecans and anchos, and heat over medium-high heat. Add the onion, oregano, cinnamon, cumin and half of the garlic and cook, stirring occasionally, until the vegetables are tender and beginning to brown, 5 to 7 minutes. Add the stock, pumpkin and salt and bring to a boil. Reduce to a simmer, cover and continue to cook until the seeds and chiles have softened and the flavors have come together, about 30 minutes. Remove from the heat and let sit covered for 20 minutes to cool slightly before blending.
- Working in batches if necessary, carefully blend the mixture until completely smooth. Transfer to a large bowl; stir to combine each batch. Keep warm while you cook the fish.
- Meanwhile, season both sides of the fish with salt and heat the remaining 2 tablespoons oil in the same large skillet over medium-high heat. Cook the fish in a single layer, undisturbed, until golden brown, about 2 minutes; flip and cook the other side, undisturbed, until golden brown and cooked through, about 2 minutes. Remove to a plate.
- Add the butter, chiles de arbol and remaining garlic to the same skillet and cook, scraping up any browned bits from the bottom of the skillet, until the garlic and butter just begin to brown, about 60 seconds. Transfer to a small heatproof bowl.
- For each serving, spread about 3/4 cup of the pipian on a plate, top with a fish fillet, a chile de arbol, a few slices of toasted garlic and a drizzle of the browned butter. Refrigerate the leftover pipian in an airtight container for up to 3 days or freeze for 3 months. Reheat gently.
PAN FRIED FISH WITH A RICH LEMON BUTTER SAUCE
A wonderful and flavorful dish that you can choose a variety of fish such as flounder, cod, trout, snapper, etc. Great served with fresh steamed veggies and steamed rice.

- LEMON BUTTER SAUCE: Heat a large skillet over high heat. Add the wine, lemon juice, garlic, and shallots. Cook for 3 minutes.
- Stir in the salt, pepper, Worcestershire, and hot sauce and simmer until the mixture is somewhat syrupy, about 3 minutes.
- Stir in the cream and cook for 1 minute. Over low heat, whisk in the butter a few pats at a time. Continue whisking until all of the butter is incorporated into the sauce. Serve immediately or keep warm until ready to use.
- FISH: Mix fish spice blend ingredients together. Season both the fish and flour with spices and dredge the fish in the seasoned flour or panko/almond mixture, coating completely.
- In a large saute pan, heat the olive oil. Add the fish to the saute pan, pan-frying for about 4 minutes on each side.
- SERVE: Drizzle some lemon butter sauce on each plate. Top with fish and drizzle more sauce over top of fish. Top with fresh parsley.

- Peel and boil the potatoes. Wash and dry the fish on kitchen paper.
- Melt the butter in a frying pan with the oil (the oil stops the butter going too brown), add the fish and fry until tender (about 5-10 minutes), spooning the melted butter over it as it cooks. (The thicker the fish, the longer it will take to cook.).
- Lift the fish carefully onto a warm plate, add a little chopped parsley (if used) to the butter in the pan and heat thoroughly. Pour the buttery juice over the fish and garnish with the lemon slice. Drain the potatoes and serve.

DEEP FRIED FISH

- Half-fill a deep pan with melted fat or oil. Heat until a faint haze rises from it (or until a bread cube sinks to the bottom of the pan, rises to the top immediately and turns golden in 50 seconds).
- Sift the flour and salt into a bowl.
- Beat to a smooth batter, unbeaten egg, butter and milk. Then add the flour and salt mixture.
- Coat 2 pieces of fish with batter.
- Lift into the pan with a fork or kitchen tongs.
- Fry until crisp and golden, allowing about 6-8 minutes for large pieces and 4-5 minutes for medium.
- Remove from the pan and drain on absorbent kitchen paper.
- Repeat with the remaining fish.
- Garnish with lemon wedges.
PAN-FRIED FISH ALMONDINE
This is a simple and versatile recipe. It lends well to any type of white fish, such as: perch, tilapia, whitefish, halibut, etc. It might even work well with salmon, but I haven't tried that yet. I love the crusty, delicious almond coating. If you can't find Panko breadcrumbs, you could try regular bread crumbs. I like to serve this alongside wild rice and a nice salad for a simple and pretty healthy meal.

- First make the almondine breading by placing Panko breadcrumbs, lemon zest, and sliced almonds into a food processor.
- Pulse until it reaches a fine consistency. *The breading adheres to the fish better this way.*.
- If applicable, debone the fish and remove the skin.
- Salt and pepper the fish, to taste.
- In a small bowl, mix eggs and water together to make an egg wash.
- Place flour in a shallow pan.
- Place the almondine breading in another shallow pan.
- Dredge each fish fillet through the flour, dusting off any excess, dip in egg wash; place in breading, coating both sides of fish. If you aren't going to fry these right away, store them in the refrigerator at this point.
- Preheat saute pan using medium heat.
- Add the butter and melt, being careful not to burn.
- Place fish in hot butter and cook on each side until golden brown, about 3 minutes on each side, which is an average time. Depending on how thick your fish is, you may need to either shorten or lengthen the time.
- Optional: Sprinkle chopped parsley on top of the fish before serving.
