PANAMAN FRICASSEE OF CHICKEN WITH TOMATOES, RAISINS AND OLIVES image

Steps:

  • Heat 2 Tbs oil and brown chicken for 10 minutes, remove. 2 Tbs oil + onion and pepper, 5 minutes. Add tomatoes, garlic, 10 minutes. Add chicken, potatoes, bread, wine, stock, rosemary, oregano, cayenne pepper, paprika, salt and pepper. Simmer for 40 minutes. Adjust seasoning, add olives and raisons and simmer 5 minutes more. Serve on rice.

4 Tb olive oil
1 Chicken (3-3.5 lbs) cut into 8 pieces
1 medium yellow onion, peeled and finely chopped
1 green bell pepper
3 medium ripe tomatoes
4 cloves garlic
2 medium red potatoes - 1/2" chunks
1 slice white bread, toasted and cut into 1" ieces
1 cup dry white wine
1 cup chicken stock
1/2 tsp dried or 1 tsp fresh rosemary
1/2 tsp dried or 1 tsp fresh oregano
1/4 tsp cayenne
1/4 tsp paprika
salt and pepper to taste
1/4 cup pitted olives cut in half
1 Tbs black raisins

Steps:

  • Finely chop the stalks from a 20g pack basil and shred most of the leaves. Heat 2 tbsp oil in a medium frying pan, then soften 2 thinly sliced garlic cloves and the basil stalks for 3 mins.
  • Tip in 2 x 400g cans cherry tomatoes, 1 tsp sugar and the shredded basil. Bring to a boil, then simmer for 15 mins until reduced and saucy. Season. Add a handful olives, the sliced meat from a whole cooked chicken and any juices. Gently stir. Simmer for 2 mins, scatter with basil leaves, then serve with crusty bread.

This recipe from the eminent American food writer came to The Times through the chef Andrew Zimmern, who was a frequent guest at James Beard's legendary Sunday and holiday open houses when he was a child. The savory combination of red peppers, onions, raisins, almonds and green olives was new and exciting to him in the 1970s, and still tastes fresh today.

James Beard's Farmer's Chicken image

Steps:

  • Pat chicken pieces dry and sprinkle with salt and pepper.
  • In a wide skillet with a lid, heat oil over medium. Working in batches if necessary to avoid crowding the pan, brown the chicken, rotating as needed, until the skin is golden and releases easily from the pan, at least 5 minutes per side. Adjust the heat to avoid scorching. As the pieces are browned, transfer them to a plate.
  • Once all the chicken is browned, add the onion and bell pepper to the skillet. Sprinkle with salt and cook, stirring, until softened and beginning to brown around the edges, about 5 minutes. Stir in the oregano and paprika.
  • Add the wine and simmer, stirring up the browned bits from the bottom of the pan, until the pan is almost dry, about 5 minutes.
  • Stir in stock, olives and currants, and bring to a simmer. Carefully return the chicken pieces to the pan. Cover and let simmer over low heat for 20 minutes. Remove the lid, stir and let simmer, uncovered, until the chicken is tender and the liquid reduces slightly, about 15 minutes. (The sauce will be quite loose.) Taste the sauce for salt and pepper. (Recipe can be made up to this point and refrigerated for up to 3 days.)
  • When ready to serve, heat through and stir in lemon zest and juice. Divide among shallow bowls and sprinkle with parsley and almonds (if using). Serve with rice, orzo or toast.

Steps:

  • Heat the oil in a large non-stick frying pan, then season the chicken and fry, flattest-side down, for 4-5 mins. Turn the chicken over, add the onion and cook 4-5 mins more. Lift the chicken from the pan and set aside. Add the garlic to the pan, then continue cooking until the onions are soft.

Steps:

  • Pat chicken dry, then place in a lidded, heavy-bottomed pot or Dutch oven.
  • In a medium bowl, combine tomato sauce, onion, garlic, vinegar, olive oil, paprika, cumin, bay leaves, salt and pepper; whisk together with a fork. Pour sauce over chicken.
  • Bring the mixture to a boil over high heat, then reduce to low, cover and simmer for 45 minutes, stirring occasionally.
  • Pour in white wine, then add olives, capers and potato slices, stirring well to incorporate. Bring back to a boil, then reduce heat to low and cover. Simmer for 30 to 40 minutes, until potatoes are tender but not falling apart.
