PANNA COTTA
A traditional, easy, and delicious Italian custard. I had a difficult time finding a good and easy recipe on the internet, so I made up my own recipe. It tastes just like the panna cotta served at Italian restaurants. Serve with warm hot fudge sauce and fresh raspberries on top. This keeps well for several days in the refrigerator.

- Pour milk into a small bowl, and stir in the gelatin powder. Set aside.
- In a saucepan, stir together the heavy cream and sugar, and set over medium heat. Bring to a full boil, watching carefully, as the cream will quickly rise to the top of the pan. Pour the gelatin and milk into the cream, stirring until completely dissolved. Cook for one minute, stirring constantly. Remove from heat, stir in the vanilla and pour into six individual ramekin dishes.
- Cool the ramekins uncovered at room temperature. When cool, cover with plastic wrap, and refrigerate for at least 4 hours, but preferably overnight before serving.

PANNA COTTA (ITALIAN FLAN)
I got this recipe off the internet, but haven't tried it yet. I thought I'd put it here for safe-keeping and easy access. Prep and cooking time do not include refridgeration time, and is a guesstimate.

- In 2 quart saucepan pour in heavy cream, milk and seeded vanilla bean, along with the seeds.
- Sprinkle the unflavored gelatin powder over mixture and whisk in thoroughly. Let rest for 5 minutes for gelatin to bloom. Then over med heat, bring mixture to a gentle boil, whisk until gelatin is dissolved, about 5 minutes.
- Whisk in powdered sugar and remove from heat.
- Remove vanilla bean pod. Strain mixture, if desired.
- Pour into 6-4oz ramekins and cool on counter for about 15 minutes, then refridgerate for at least 3 hours.
- To remove set mixture, dip ramekins in hot water 1/2 way up their side for a few seconds, then invert onto a plate.
- Dark chocolate sauce:.
- Place a glass bowl over top of, resting on a medium saucepan, that contains enough water in the saucepan to heat bowl. Bring water to a simmer, add chocolate, stir until melted. Whisk in agave nectar and 1/3 cup of hot water. Heat and stir until smooth.
- Circle Panna Cotta on plate with sauce, or drizzle over the top.

Panna cotta, a molded chilled dessert popular throughout Italy, is easy to make and can be prepared in advance. It looks and tastes wonderful with ripe red fruits such as raspberries, strawberries, or sweet cherries.

- In a very small saucepan sprinkle gelatin over water and let stand about 1 minute to soften. Heat gelatin mixture over low heat until gelatin is dissolved and remove pan from heat.
- In a large saucepan bring cream, half and half, and sugar just to a boil over moderately high heat, stirring. Remove pan from heat and stir in gelatin mixture and vanilla. Divide cream mixture among eight 1/2-cup ramekins and cool to room temperature. Chill ramekins, covered, at least 4 hours or overnight.
- Dip ramekins, 1 at a time, into a bowl of hot water 3 seconds. Run a thin knife around edge of each ramekin and invert ramekin onto center of a small plate.

- First, cut off both ends of the vanilla bean and cut it through the middle lengthwise using the tip of a sharp knife. Although you don't need to cut it all the way through, it's ok when you do so. Then open the vanilla bean and scrape out the flavorful seeds with the back of the knife. Set aside.
- Meanwhile, using a heavy-bottomed medium-sized saucepan, bring the heavy cream, sugar, vanilla seeds, and scraped vanilla bean over medium-high heat to a boil. Once it reached a boil, immediately remove the pan from the heat and carefully remove the vanilla bean. Add the bloomed gelatin and whisk until the gelatin is completely dissolved.
- Pour the cooked cream through a fine mesh strainer (to remove air bubbles and possible pieces from the vanilla bean) into molds. The cream is completely liquid and will firm when it cools. Don't overfill the molds, or it's hard to transfer them. Immediately transfer the molds to the refrigerator and chill for 8 hours or overnight. Store in the fridge for up to 3 days or freeze for up to 1 month.
