PARMESAN-BACON BUBBLE BREAD

When I needed to put some leftover bread dough to good use, I started with a recipe I often use for bubble bread and substituted savory ingredients for the sweet. -Lori McLain, Denton, Texas

Parmesan-Bacon Bubble Bread image

Steps:

  • Turn dough onto a lightly floured surface; divide and shape into 16 rolls. Place butter in a shallow bowl. In a large bowl, combine the shredded Parmesan, half the bacon, half the green onions, grated Parmesan, seasoning blend and sugar. Dip dough pieces in melted butter, then toss with cheese mixture to coat. Stack pieces in a greased 9-in. cast-iron skillet., Cover with a kitchen towel; let rise in a warm place until almost doubled, about 45 minutes. Preheat oven to 350°. Bake until golden brown, 20-25 minutes. Top with remaining bacon and green onions. Serve warm and, if desired, with Alfredo or marinara sauce.

Steps:

  • Preheat the broiler to low. In a small bowl, mix the butter, mayonnaise and cheese, then season with salt and pepper.
  • Cut the baguette in half both crossways and horizontally. Evenly spread cheese mixture on the bread. Place on a baking sheet and broil until golden, about 3 minutes.

1/4 cup unsalted butter, at room temperature
2 tablespoons mayonnaise
1/4 cup grated Parmesan
Kosher salt and freshly ground black pepper

Steps:

  • Melt 1 tablespoons butter in a small skillet over medium-high heat; add onion, and saute 4 minutes or until golden.
  • Heat bacon according to package directions until crisp; crumble.
  • Combine bacon, Parmesan cheese, and onion mixture.
  • Cut each biscuit into fourths; dip biscuit pieces into 1/4 cup melted butter.
  • Arrange one third of biscuit pieces in bottom of a lightly greased 10-inch Bundt pan.
  • Sprinkle with half of bacon mixture. Repeat layers once; top with remaining one-third biscuit pieces.
  • Bake at 350* for 30 minutes or until golden.
  • Cool in pan 10 minutes; invert onto a serving platter; and serve immediately.

These are so easy to pop in the microwave and have a basket full for appetizers, TV snacks, or card clubs. The amounts are estimates depending on the size and number of commercial breadsticks you have available. Wrap bacon barber-pole style around the breadsticks. Cleanup is easy, because all the drippings will be absorbed into the paper towels. Serve at room temperature. Make plenty -- they are highly addictive!

Steps:

  • Slice bacon stips in half, lengthwise.
  • Dredge in grated Parmesan cheese.
  • Wrap bacon, in spirals, around the breadsticks.
  • Place on microwave safe paper towel on microwave safe tray, so that breadsticks are not touching (usually 6-8 ).
  • Cover with 2 layers of paper towels.
  • Microwave on HIGH for approximately 5 minutes.
  • If not done, cook in 1 minute intervals until done.
