Garlic-Parmesan Pretzels image

Steps:

  • Toss 4 cups mini pretzel twists with 6 tablespoons melted butter, 1/2 teaspoon garlic powder and 1 grated garlic clove in a large bowl. Spread on a baking sheet and bake at 350˚ until lightly toasted but not dry, about 5 minutes. Transfer to a separate bowl and toss with 1/4 cup grated parmesan and 2 tablespoons finely chopped parsley.

Steps:

  • In a small bowl, combine the cheese, garlic powder, oregano and cayenne; set aside. In a small saucepan, heat butter and oil until butter is melted. Coat two-thirds of each pretzel rod with butter mixture, then roll in cheese mixture. Reheat butter mixture if needed. , Place in an ungreased 15x10x1-in. baking pan. Bake at 275° for 20-25 minutes or until golden brown, turning once. Cool. Store in an airtight container.

  • Warm the milk in a saucepan until it's about 110 degrees; pour into a medium bowl and sprinkle the yeast. Let the yeast soften, about 2 minutes. Stir in the brown sugar and 1 cup flour with a wooden spoon. Add 2 tablespoons of butter, keep mixing. Add the rest of the flour and the salt. The dough is going to get really sticky.
  • Dump the dough out onto a floured surface and knead. If the dough is too sticky add a few teaspoons of flour at a time until the dough is smooth but still slightly tacky. The whole process should take 5 minutes. Shape the dough into a ball and place it in a lightly greased bowl and cover with plastic wrap. Let the dough rise in a warm place for 1 hour.
  • If you're making the garlic parmesan pretzels: Combine the parmesan and the granulated garlic. Set aside for later use. Preheat the oven to 450 degrees and grease a large baking sheet. Line with parchment or a silicone pad. When the dough has risen, punch the dough to deflate it. Then turn out onto a lightly floured surface. Add 3 tablespoons of the garlic parmesan mixture and continue to knead the dough until the mixture is spread evenly. Check to see if the dough is tight. If it is, cover and let rest until it relaxes.
  • Divide the dough into 6 pieces. Roll and stretch each piece with the palms of your hands into a 30-inch rope, holding the ends and slapping the middle of the rope on the counter as you stretch. Form each rope into a pretzel shape.

  • PREP: Position a rack in the center of the oven and preheat the oven to 250ºF. Line a large baking tray with parchment paper, or if you line it with foil, spray generously with cooking spray.
  • MIX: Break the pretzels into bite-sized pieces either by hand or by placing them in a zip-top bag and giving them a couple of whacks. Be careful not to make crumbs, you want the pieces to be bite-sized so that they don't over bake. Place them in a large bowl. In a 2 cup measuring cup, whisk together the ranch seasoning, garlic powder, parsley, sugar, vegetable oil, melted butter, and parmesan cheese. Pour the prepared sauce and stir or toss the pretzels to coat them evenly. Alternately, you could also do this in a clean (crumb-free) gallon-sized zip-top bag and just shake to combine the ranch mix and the pretzels.
  • BAKE: Spread the pretzels out on to the prepared baking tray in an even, single layer. If they don’t all fit on one baking sheet, it’s best to spread them out onto two so that they bake evenly. Bake them for 35-40 minutes, stirring them every 15 minutes so that they brown evenly. Allow them to cool completely and then place them in an airtight container for up to 1 week!
