QUICK PARMESAN TOASTS
This is the easiest, tastiest and quickest appetizer you'll ever make and everybody loves it. I've been making these for at 30 years and they're always a hit at any event I take them too. Did I say FAST, too? Great for a Holiday weekend.

Steps:
- 1. Slice the baguette into thin circles. Spread melted butter (or olive oil) on one side of each slice and toast in a 350 degree oven until golden brown.
- 2. While the bread is toasting. Combine the Parmesan, mayonnaise and scallion tops.
- 3. Spread mayo mixture on the toast rounds.
- 4. Pop back into the oven for 10-15 minutes until brown and bubbly.
- 5. Enjoy!
TOAST POINTS

Steps:
- Preheat the oven to 375°F. Slice crusts off bread, and cut each slice into quarters to form four triangles. Place in a single layer on a rimmed baking sheet; toast in oven until bread is golden and beginning to crisp, about 15 minutes, turning once. Transfer to a wire rack; let cool slightly.
ITALIAN FONTINA AND PARMESAN TOASTS
Steps:
- Preheat oven to 400 degrees. In a small saucepan, melt butter in oil over moderate heat. Brush mixture onto 1 side of each bread slice. Arrange slices, buttered side up, on a baking sheet and bake for 5 minutes or until golden
- Preheat broiler. Sprinkle fontina and Parmesan cheeses evenly over toasts. Broil about 4 inches from the heat for 1 minute, or until fontina begins to melt.
TOASTED BAGUETTE

- Preheat the oven to 400 degrees F.
- Slice the baguette diagonally into 1/4-inch slices. You should have 20 to 25 slices. Place the slices in 1 layer on a baking sheet. Brush each slice with olive oil and sprinkle with salt and pepper.
- Bake the toasts for 15 to 20 minutes or until they are crisp and browned. Serve at room temperature.

- Heat oven to 400 degrees. Cut baguette at a sharp angle into 1 1/2-inch slices. Spread both sides with butter, if desired, and place on a baking sheet.

I love making this toast to have with soup or 1 pot meals! It's the only recipe I actually use that packaged dried parmesan instead of the fresh stuff. You don't get good results with fresh parmesan in this recipe.
