PARMESAN-ASPARAGUS AND BELL PEPPER

This recipe was found in one of those Pillsbury booklets--Easy Meals for 2. It is very colorful and makes a delicious veggie. It is cooked on a contact grill (George Foreman) and can be easily varied. We really enjoyed it.

Parmesan-Asparagus and Bell Pepper image

Steps:

  • Heat closed contact grill for 5 minutes.
  • In a large resealable plastic bag, mix the asparagus, bell pepper, onion and dressing; coating well.
  • When the grill is heated, place half the vegetables crosswise on bottom of grill.
  • Close grill and cook 5 to 6 minutes or until vegetables are crisp-tender.
  • Place the vegetables in a serving dish and top with cheese.
  • Repeat process with remaining vegetables.
  • Serve immediately.

8 ounces fresh asparagus spears, trimmed
1/2 medium red bell peppers or 1/2 medium yellow bell pepper, cut into 1/4 inch wide strips
1/4 medium sweet onion, sliced thin

Steps:

  • Stem, core, and quarter bell peppers; place on a baking sheet. Toss with sliced garlic, thyme, and extra-virgin olive oil; season with kosher salt and freshly ground black pepper. Arrange skin side down in a single layer and roast in a 425°F oven until softened, then top with Parmesan and broil until cheese is melted and peppers are slightly charred. Squeeze the lemon juice over peppers.

4 bell peppers (a mix of yellow, red, and orange)
1 clove thinly sliced garlic
8 thyme sprigs
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper
1/4 cup grated Parmesan

Steps:

  • Preheat a convection oven to 300 degrees F and line 2 baking sheets with parchment paper.
  • Sift the flour and 1 teaspoon salt in a large bowl.
  • Beat the butter and sugar together in a stand mixer on medium-high speed until light and fluffy, about 8 minutes. Add the Parmesan, thyme, zest, and 2 teaspoons pepper and continue mixing until evenly incorporated, about 2 more minutes. Add the flour mixture to the butter mixture just to combine.
  • Form into balls, small (1/4-ounce) or large (3/4-ounce), and place 1 inch apart on the prepared baking sheets. Bake until lightly golden on the bottoms, about 15 minutes.

  • In a large skillet, saute the peppers, onion and garlic in oil until the vegetables are tender, about 3 minutes. Add the beans, basil and salt; toss to coat. Cover and cook over medium-low heat for 7-8 minutes or until beans are crisp-tender. Stir in cheese; serve immediately.

Parmesan and Pepper Pasta image

Steps:

  • Bring water to a rolling boil and add a dash of salt and the pasta.
  • While the pasta cooks for 8-10 minutes (depending on desired firmness), chop peppers into small chunks. Chop the tomato into about 16 different segments - any smaller, and they will get lost when you mix all the ingredients together.
  • Sprinkle peppers and tomato with garlic powder, salt, and pepper.
  • Remove pasta from heat, drain water, and empty into a different container. Set aside.
  • Using the same pot (this makes sure you get the most flavor, so don't switch pots), put in half a tablespoon of red pepper olive oil and let it coat the bottom. Dump in half of the chopped peppers; stir them in the oil to make sure they are coated.
  • Let the peppers cook for about 5 minutes (or until tender), stirring occasionally to make sure they aren't sticking to the bottom. Then empty them into the container with the pasta.
  • Add another half tablespoon of red pepper olive oil to the pan, let it coat the bottom, and let the other half of the peppers cook for about 5 minutes. Then empty them into the pasta container as well.
  • Add the last half tablespoon of red pepper oil to the pan and let it coat the bottom. Add the tomato chunks. Let them cook for 2-3 minutes.
  • Pour the pasta and peppers back into the pot with the tomatoes and stir.
  • Add pasta sauce, parmesan cheese, and pesto. Mix until the pasta is evenly coated.
  • Add oregano, basil, and pepper. Mix.
  • Refrigerate until cold or eat it now! :).
  • It will keep for several days if refrigerated in a tupperware container.
