MICROWAVE POTATO CHIPS
Steps:
- Thinly slice the potatoes about 1/16-inch thick using a mandolin. Put the potato slices in a large bowl of cold water and stir to release the starch. Drain and refill the water as many times as necessary until the water remains clear. Line a baking sheet with paper towels. Transfer the potatoes to the paper towels and pat dry.
- Line a large microwave-safe plate (the biggest that will fit in your microwave) with two layers of paper towel. Arrange as many potato slices on the paper towels as will fit in one layer without touching. Lightly brush the potatoes on both sides with oil and sprinkle lightly with salt. Microwave at full power for 3 minutes. Flip the slices over and microwave at 60-percent power until crispy and golden brown in spots, about 2 minutes more. Transfer the chips to a serving bowl and repeat with the remaining potatoes.
PARSLEY SMASHED NEW POTATOES
Freshly dug, true "new" potatoes are so creamy and flavorful they hardly need any additional ingredients to make them spectacular. Here we tumble them with a bit of butter, tangy yogurt, scallions and just-chopped fresh parsley. If new potatoes are not available, use any small red potatoes.

- Bring 1 inch of water to a boil in a large saucepan fitted with a steamer basket. Add potatoes, cover and steam until very tender when pierced with a fork, 20 to 25 minutes. (Check the water level near the end of steaming to be sure the pan doesn't boil dry. Add more boiling water as needed.) Meanwhile, combine yogurt, scallions, parsley, butter, salt and pepper in a large bowl. Mix the cooked potatoes into the yogurt mixture, breaking them up with a fork until they crumble apart and lightly clump together.

This is a Penzey's Spice recipe I picked up while in Dallas. A great recipe for a real meat and potatoes meal.

- Bring a large pot of water to a boil and add the potatoes.
- Cook for 25 to 30 minutes or until potatoes are fork tender.
- Drain potatoes and place in large bowl.
- Melt the butter, stir in parlsey, paprika and salt.
- Mix well and finish off with a few grinds of black pepper.
- Serve and enjoy.

- Dice potatoes into 1 inch pieces. I leave the skin on, but you can remove if you like.
- Place potatoes and 1/4 cup water in microwave safe dish with lid. Vent lid, microwave on high about 5 minutes.
- Potatoes should be soft, but not mushy.
- Drain off water, add other ingredients and mix until butter melts.
- Put back in microwave for about 2 minutes.

- In medium pot, bring 2 qts water and 1 t salt to a boil.
- Cut a ring around the middle of each potato.
- Drop potatoes in boiling water, bring back to the boil.
- Reduce heat to simmer and cook until potatoes are tender, about 10 minutes, depending on size of potatoes.
- Drain well.
- Add butter and parsley.
- Toss to coat well.
PARSLIED POTATOES
I have always loved parslied potatoes, but could never find a recipe for them (this was before the internet!!!!) So, one day, I just experimented and came up with this. If you don't like a lot of butter, it can be reduced. I list red potatoes in the ingredient list, but have used all kinds. Also, in desperation, I have used dried parsley, and so long as it is soaked in the melted butter, it seems to work.

- Poke the potato 4 to 5 times on each side with a fork. Wet a clean sheet of paper towel with water and wring out any excess moisture. Wrap the damp paper towel around the potato and place on a microwave-safe plate. Microwave on high for 5 minutes. Remove the paper towel and flip the potato over.
- Drizzle the potato with olive oil and sprinkle with salt and pepper. Microwave on high, uncovered, 3 minutes more (see Cook's Note). Use a fork to test for doneness. - Tip the potatoes into a large pan of cold water and season with a large pinch of salt. Bring to the boil over a high heat, then immediately drain and leave to steam-dry for a few minutes in a colander.
- Heat the oven to 220C/200C fan/gas 7. Tip the potatoes onto a large baking tray along with the garlic cloves, rosemary and oil. Season well, then mix everything thoroughly so each potato cube is coated in the oil. Shake the tray gently to spread the potatoes out into a rough single layer. Roast for 30-35 mins, turning halfway through, until the potatoes are golden and crisp on the outside and tender when pierced with a fork. Serve with roast lamb, fish or as an alternative to chips or roast potatoes.
