Steps:

  • In a bowl, soak the dried beans in 6 cups water overnight.
  • Discard water and rinse the beans in fresh water. Add beans to a stockpot with 6 more cups water. On high heat, bring water to a boil and cook, turning down the heat to medium when foam appears at the top, about 30 minutes. Cover pot and cook until beans are soft, an additional 15 minutes. Drain and cool beans overnight in the fridge.
  • Add beans to a food processer with a handful of ice, the lemon juice, garlic, sesame tahini and salt. Grind in food processor until it has a pudding-type consistency. Garnish with olive oil, paprika and sumac. Can be served with pita bread or carrots.

4 cups large dried Lebanese garbanzo beans
1/2 cup fresh lemon juice
1 teaspoon minced garlic
4 cups sesame tahini, or more as needed
1 teaspoon salt
Garnish: olive oil, paprika and sumac
Serving suggestions: pita bread or carrots

MY MOM'S HUMMUS

This doesn't get cooked, so the garlic does not mellow. I've scaled back the amount I usually use so as to be slightly more reasonable, but feel free to adjust it further one way or the other to suit your own tastes. Also, if you've never made hummus, it's not the most appealing substance when it's in progress, but it really is good when it's done. And one more note: if, like me, you don't like olives, include them anyway. They do make a flavour difference, but they get completely hidden once everything's all processed and blended.

Steps:

  • Partially drain the chick peas, but leave them a little of their liquid.
  • Pour everything in a food processor, and process the heck out of it using enough of the reserved liquid to allow smooth processing.
  • You shouldn't be left with any particulate matter.
  • Serve with pita bread.
  • Crackers would probably work too.
