Party Pepperoncini Recipes

Steps:

• Wearing rubber gloves,cut pepper rings into 1/4 inch slices and rinse out seeds.
• Place peppers in a bowl and cover with cold salted water Let set 1 hours then drain.
• Bring brine mixture to a boil.
• Place 1/2 tsp pickling salt and 1 clove garlic in each clean hot pint jar.
• Pack peppers tightly into clean hot pint jars.
• Cover peppers with brine and lLeave 1/2 inch head space.
• Seal with hot sterilized lids and process for 10 minutes in a boiling water bath.
• Leave for at least 4 weeks to"cure" before using.

Steps:

• In a food processor, combine the first nine ingredients; cover and process until finely chopped. , Cut off the stem end of each pepperoncini; remove seeds. Pipe or stuff pepperoncinis with cheese mixture. Dip exposed end into additional Parmesan cheese. Cover and refrigerate until serving.

Steps:

• Drain the peppeoncinis and cut the ends off. I usually squeeze the seed bundle out, but you don't have to.
• Very lightly brush each slice of salami with olive oil.
• Put a slice of provolone on each slice of salami and lightly brush with olive oil again. (If the provolone is wider than the salami, just fold it down on one side, then roll long-wise.).
• Wrap salami and provolone around pepperoncini and secure with a toothpick.
• Cover and refrigerate.
• Note: If the provolone is significantly larger in diameter than the salami, only get half as many slices of provolone and cut them in half.

• Cook shallots and red pepper in drippings, stirring frequently, about 5 minutes.
• In a small bowl, using hand mixer, beat cream cheese and milk until smooth.
• Add bacon and shallot mixture and beat until just combined.
• Spoon cream cheese-vegetable mixture into a ziploc bag.
• Cut a small corner off to pipe filling into peppers.
• With a small knife, cut a slit lengthwise in peppers, being careful not to cut all the way through.
• Pipe cream cheese mixture into pepper.
• Cover and refrigerate up to 24 hours.

• cook pasta according to directions on box.
• in a separate saute pan; heat all other ingredients until very warm; not wilted.
• drain pasta and toss with sauteed mixture.
• if pressed for time/space you can just toss pasta with other ingredients without warming the pepper mixture; the heat from the noodles will warm them up.
• serve with good bread.

Steps:

• Mix cream cheese and cheddar. Slice pepperoncini in half; fill each half with cheese mixture. Top with bacon. Roast on a baking sheet at 450 degrees until cheese is browned, about 8 minutes.
