FRESH PASTA WITH PARMESAN BUTTER SAUCE

- For the pasta: You can prepare the dough either using a stand mixer or by hand.
- Using a stand mixer: In the bowl of a stand mixer fitted with the hook attachment, add the flours and mix to combine. Add the eggs and mix on medium speed until the dough come together and forms a ball. If the dough is dry, add a little water, 1 teaspoon at a time. Reduce the speed to low and mix until the dough is smooth, about 6 minutes. Wrap the dough with plastic wrap or a damp towel. Let it sit at room temperature for about 30 minutes.
- By hand: On a wooden table or in a bowl, create a volcano shape with the flours. Then make a large hole in the middle. Break the eggs inside of the volcano. Whip the eggs with a fork to create a uniform color (until you can't see the difference between egg yolk and egg white). Then, little by little with the tips of your fork, start to incorporate the flour, starting from the center and moving out (never break or pass beyond the volcano). If the dough is dry, add a little water, 1 teaspoon at a time. When the mixture is uniform, use your hands and knead the dough until smooth. Wrap the dough with plastic wrap or a damp towel. Let it sit for about 30 minutes.
- Flour the table and roll out the dough until very thin (until you can just see your hands through the dough). For pappardelle, roll the dough up into a log, lightly flouring the dough as you roll it. Slice into about 1-inch-thick slices. Unroll the slices and lay out the strips flat onto a floured sheet tray until ready to cook.
- For the sauce: When ready to cook the pasta, bring a pot of water to a boil and add salt. Cook the pasta for 3 minutes.
- Meanwhile, in a pan, bring the vegetable stock to a simmer. Add the butter and cooked pasta. Season it with freshly milled black pepper and salt. At the very end, add the Parmigiano-Reggiano little by little, stirring it in as you go. Garnish with fresh herbs and more cheese.
SIMPLE PASTA WITH BUTTER SAUCE
Never mind the butter sauce. Whatever is your preference. If you are preparing a butter sauce, I think this is an excellent way to prepare the pasta.

Steps:
- First, to the pasta water, add 3 pinches of salt, 1 clove pressed garlic, 2 tsp of dried oregano, veggies.
- Bring to a full boil, then reduce heat to simmer for 15 minutes.
- Then bring it back to a full boil, and add the pasta.
- It works.
- Meantime, in a saucepan, add butter, parmesan cheese, 1 tsp dried oregano, 1 clove pressed garlic, 1/2 tsp black pepper, pinch of cayenne pepper, 1/2 tsp olive oil.
- Melt on simmer, and stir well.
- Drain the pasta, place in a service bowl, add the sauce, a generous sprinkling of parmesan cheese, and toss.
- Serve.
- Enjoy.
GARLIC-BUTTERED PASTA

- Fill a large pot with plenty of cold water, about 3/4 capacity and bring to a boil over high heat. When at a boil, add in the pasta, 1/2 teaspoon salt and 1 to 2 teaspoons oil. Stir pasta continuously until the water returns to a boil. Boil pasta according to packaging, or your preference, stirring occasionally.
- Drain pasta well in colander. Wipe the pot dry with a paper towel and then add in the butter. Melt the butter over high heat until frothy, and until its color has turned to an amber golden brown color, but not dark brown or black.
- Remove the pot from the heat and add in the drained pasta, and then quickly toss it well, as to prevent the pasta from sticking to the pot, coating pasta evenly with butter. Sprinkle in the garlic powder, crushed basil, oregano and grated cheese of choice. Add salt and pepper according to taste and toss well again.
- Transfer to serving bowl and sprinkle with finely chopped parsley (optional) and serve.

BURNT PASTA
Steps:
- Heat a frying pan over medium-high heat. Melt the butter in the pan until it begins to get frothy, about 2 minutes, and then add the crushed bouillon cubes and mix together until the butter is browned slightly. Add the dry pasta and toss to coat until crisp and brown, about 3 minutes. Add the diced onion and toss, about 2 minutes. Remove the pan from the heat and add just enough water (about 2 cups) to cover the pasta in the pan. Place the pan back over low heat and cover. Cook until the water is absorbed, 2 to 3 minutes.

The best simple butter sauce - rich, creamy, fabulous! Use with any pasta recipe - fettucine with chicken, angel hair with shrimp, or just over some spaghetti noodles. Its flavor is great! I must give credit to Recipe #113017 as this is an augmentation of that recipe, which is delicious as well. As you can see, there are "necessary ingredients" and "seasoning ingredients". This is because the base of the sauce are the necessary ingredients. All of the other ingredients can be changed around, left out, substituted, etc. in accordance with your liking or what you have on hand.

- Let both butter and margarine soften.
- Using hand mixer, blend butter and margarine together with flour until well incorporated.(I generally do this blending in a glass bowl which I can then place on top of a pan of simmering water for the next steps).
- Melt the butter/flour mixture in a double boiler over med. low heat(or glass bowl over simmering pan) until just melted.
- As butter/flour mixture is melting, add it the evaporated milk, garlic powder, cayenne, salt and pepper. All of these ingredients are according to your taste - you can use real garlic and heavy cream, white pepper, whatever you prefer or have on hand. You can add up to 4 tablespoons of evaporated milk without making the sauce too thin. Lastly, add in as much paremsan cheese as you would like, my preference is about 2 tablespoons.
- Pour over noodles or whatever and enjoy!

VEGGIE PASTA WITH CHEESY FONDUE SAUCE
This recipe has a rich cheese sauce that is wonderfully indulgent poured over a bowl of pasta and colourful vegetables. It is also simple and quick to prepare. Don't worry if the cheese looks stringy when it first melts into the wine, it will become smooth and glossy when the cornflour is added.

- Bring a large pan of water to the boil, add the pasta and cook according to pack instructions. Trim the broccoli, cut into shorter lengths if desired, and add to the pasta pan 5 minutes before the end of the cooking time.
- Meanwhile, put the garlic and wine in another pan and bring gently to the boil. Blend the cornstarch to a smooth paste with 1 tbsp cold water.
- With the wine over a very gentle heat add the cheese, a little at a time, stirring until each batch is melted. This will take a few minutes. Stir in the cornstarch paste and cook gently for 4-5 minutes or until the mixture is smooth and creamy. You may need to add a little more wine to get a smooth consistency. Add pepper, then taste and add salt if necessary. Keep warm over a very low heat.
- Heat the oil in a frying pan, add the tomatoes and cook over a fairly high heat until starting to soften.
- Drain the pasta and broccoli, toss with the tomatoes and tip into a warm serving dish. Pour the cheese sauce over the top and serve with hot garlic bread.

BUTTER & SAGE SAUCE OVER PASTA
This is another cook book recipe. I love sage and during the summer we have it growing in our garden. Use fresh for this dish and use a good butter. I use an European butter. This is the perfect recipe, simple, cheap and delicious. *For the pasta try linguine, fettuccine, a stuffed pasta with a ricotta filling or potato gnocchi. I have also used a simple egg noodle.

- Put the butter in a skillet over medium heat.
- When the butter foam subsides and the butter is golden but not brown tear the sage leaves into 2 or 3 pieces and add to the butter. It is important that the butter reach this point. Resist the desire to add the sage too soon.
