PASTA WITH HALLOUMI PEPPER SAUCE
If you're tired of tomato or cream sauces with your pasta, try this little number made with roasted sweet peppers. Add parmesan on top, if you like, and maybe even a little bit of sausage in with the sauce.

Steps:
- Preheat the oven to 400 degrees F (or 200 C).
- Slice the peppers into quarters, cutting out the seeds.
- Lay on a lightly oiled baking tray, skin side up.
- At the same time, rub the heads of garlic with a little olive oil and set on the tray with the peppers.
- Bake for 25 minutes.
- When you take the tray out of the oven, cover the peppers with clingfilm and leave to"sweat" for 10 minutes.
- This helps loosen the skin.
- Peel the peppers and place in a food processor.
- Now trim the stalk end off the garlic, cutting into the cloves.
- Squeeze the soft garlic into the food processor with the peppers.
- Add a squeeze of lemon juice, a couple tablespoons water, salt and pepper to taste.
- Blitz to a purée and, while the motor is running, add a couple tablespoons olive oil.
- Transfer the purée to a small saucepan.
- At the same time, start to cook the pasta.
- While the pasta is cooking, finish off the sauce.
- Chop the halloumi into chunks and stir into the sauce over a low heat until the pieces soften.
- Drain the pasta and toss with the ricotta and most of the basil.
- Pour the sauce over and garnish with the remaining basil.

HALLOUMI WITH PESTO SPAGHETTI

- Pre-heat over to 200C. Wash the peppers, remove the seeds etc and cut into slices. Coat in olive oil and put into oven for 15-20minutes (turning halfway through) until soft
- Slice halloumi into thick chunks (about 6 slices if using a normal supermarket pack) and add to oven 5 minutes after peppers have gone in (turn halfway through)
- Cook pasta according to directions on packet, drain and stir in the pesto
- Put spaghetti onto plates, share peppers and halloumi between the plates, sprinkle rocket on top and grate over with the vegetarian hard cheese (as close to parmesan as you can get)

- Split each halloumi block through the middle lengthways (they should have a natural seam). Cut each half into four strips. Heat half the oil in a frying pan over a medium heat, and fry the halloumi strips for a few minutes on each side until golden. Transfer to a plate and set aside.
- Heat the remaining oil in the pan over a high heat, and fry the onion and peppers for 5 mins until just soft and starting to char. Add the garlic, paprika and coriander with some seasoning and cook for 1 min more. Pour in the lime juice and fried halloumi, and stir very gently so the halloumi doesn't break up. Will keep at room temperature for a few hours. Reheat over a low heat with a little water.
- Warm the wraps in a low oven wrapped in foil. Alternatively, warm two at a time for 10 seconds in the microwave (not wrapped in foil), or by holding them directly over a gas flame with a pair of tongs (this will give you flavourful charred edges).
- Pile the halloumi filling into the warm wraps, with a few slices of avocado each, some coriander leaves, and spoonfuls of chilli sauce or soured cream, if you like.
