- In a Dutch oven, combine spaghetti sauce and pepper flakes. Heat through over medium heat, stirring occasionally; keep warm., Cut peppers in half. Remove and discard stems and seeds. Grill peppers and onion, covered, over medium heat 8-10 minutes on each side or until tender. Slice peppers. Stir onion and peppers into sauce; heat through., Grill sausages, covered, over medium heat for 10-12 minutes or until heated through, turning occasionally. Place buns on baking sheets, cut side up. Top with cheese. Broil 3-4 in. from the heat 2-3 minutes or until cheese is melted. Top with sausages and pepper mixture.

SAUSAGE AND BELL PEPPERS

Steps:
- Heat approximately 1 tablespoon of olive oil in a large frying pan.
- Brown the sausage in the oil until you get a nice color on the outside and you no longer see any"pink".
- Remove the sausage and drain on a paper towel.
- Keep the heat going on the pan and add onions and peppers (do not add any additional oil).
- Cook the onions and peppers approximately 5 minutes or until onions start to become translucent.
- During this time, slice the sausage down the middle, do not cut all the way through, just enough so you can open the sausage and"fan" them out.
- Add salt and pepper over the onion/pepper mixture and turn heat down to simmer.
- Place sausage on top of onions and peppers and cover.
- Simmer for approximately 15 minutes or until sausage is cooked through.
- Serve on Italian Bread.

- Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook onion, bell peppers, garlic, salt, and pepper, stirring occasionally, until onion is golden, about 15 minutes.
- While peppers cook, preheat broiler and prick sausages all over with a fork, then broil sausages on rack of a broiler pan 3 to 5 inches from heat, turning over once, until golden brown and cooked through, 10 to 12 minutes.
- Transfer sausages to a cutting board and let stand 5 minutes, then halve lengthwise.
- Make 4 sandwiches using bread, pepper mixture, and sausages.
SAUSAGE, PEPPERS AND ONIONS
I started making this recipe as a cure for a craving i was having while pregnant. I still make it to this day. I will serve it over white rice sometimes to help "sop" up the grease from the dish. The dish doesn't need the addition of oil to cook the sausage and onions in because they give off their own juices as they start to cook down.

- Saute until the onions are tender, but still firm.

SAUSAGES & BELL PEPPERS
I've been making this dish for years & finally got around to posting! I prefer Tomato Basil Sausages from our local butcher but I've also used Italian (hot or sweet) and Octoberfest sausages. Just don't use those skinny little breakfast links. The "sauce" is delicious with plain steamed rice!

Steps:
- Prick sausages in several spots& simmer in a skillet of boiling salted water for 10 minutes; drain& slice lengthwise in half.
- Heat olive oil in skillet, brown sausages& finish cooking (about 5 minutes), remove from skillet& keep warm.
- Add onions, peppers& garlic to skillet; cook, stirring occasionally, for about 10 minutes.
- Stir in tomatoes& cook, stirring occasionally, for another 5 minutes or until veggies are cooked to your liking.
- Stir in tomato sauce, return sausages to skillet, season to taste& cook for an additional 5 minutes.
DRUNKEN SAUSAGES AND PEPPERS WITH HERO ROLLS

- Preheat the oven to 400°F. Heat a large, ovenproof, nonstick skillet (no plastic handles!) over medium-high heat. Add the sausages and cook them, turning once in a while, until they're nice and brown almost all over, about 10 minutes. (They'll curl up a little as they cook, so it'll be hard to brown them on all sides. Don't sweat it.) Poke each link 4 or 5 times with a fork as they cook to release some of their juices.
- Remove the sausages from the pan and set aside. Press the garlic into the juices in the pan, stir it around until you can smell it, and then add the peppers. Season them lightly with salt and red pepper, and cook about 8 minutes, tossing them around until they're wilted and starting to brown. Add the sausages to the pan.
- Pour the beer, bring it to a boil, and then put the pan in the oven. Cook until most of the liquid has evaporated (you'll want a little to spoon on the sandwiches), the peppers are tender, and the parts of the sausages poking up are browned, 25 to 30 minutes. You can make the sausages and peppers before people come over and then heat them over low heat half an hour beore you're ready to serve. Serve hot along with a basket or plate of hero rolls, split open and ready for stuffing.

- Grill sausages over hot coals, turning occasionally, until done, about 10 minutes total.
- Remove from grill and keep warm.
- Meanwhile, in large skillet, sauté peppers in the olive oil until softened, about 5 minutes.

SAUSAGE, BELL PEPPERS, AND ONIONS
Caught this recipe on Every Day Italian and looked so good I had to try it. It is absolutely delicious! The sauce is slightly sweet and the onions caramelize really nicely. The original recipe puts the final product into crusty Italian buns, but I prefer it with pasta. I have tried this recipe with chicken instead of sausage, but make sure the pieces are small enough that they cook evenly and stay moist. Don't worry about the time it takes - it is SO worth it!

- Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides. Remove from the pan and drain.
- Keeping the pan over medium heat, add peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes.
- Add the oregano, basil, and garlic and cook 2 more minutes.
- Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
- Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.
- Serve with pasta, or in Italian buns.
