PEACH COBBLER

Steps:

  • Sift flour, salt, and baking powder. Mix with 1 cup sugar; slowly stir in milk to make batter. Melt butter in 8x8x2-inch pan. Pour batter over melted butter. Do not stir. Mix peaches with remaining 1 cup sugar and carefully spoon over batter. Bake 1 hour at 350°. Serve hot or cold, with cream if desired.

Steps:

  • Preheat oven to 350°. Peel, halve, core, and slice pears. Combine sugar, flour, spices, and sliced pears. Add lemon juice and raspberries. Mix and spoon into 2-quart dish. Topping: Combine flour, 1 tablespoon sugar, baking powder, soda, and salt. Cut butter into small pieces and blend with pastry cutter into flour mixture until coarse meal texture; then add buttermilk. Stir, roll between 2 pieces waxed paper sprayed with Pam. Peel off waxed paper and place over fruit and sprinkle with remaining teaspoon sugar. Bake for 35-45 minutes, till lightly browned.

Steps:

  • Combine the cream cheese, butter, and flour. Divide the dough in half. Chill. Roll out half at a time, approximately 1/4 inch thick. Cut with a small square-shaped, circular-shaped, or diamond-shaped cookie cutter. Place 1/2 teaspoon of jam on each cookie. Bring 2 sides of the cookies up to meet in the middle and crimp. Bake on ungreased cookie sheets at 350° for 20 minutes or until lightly browned. Cool on racks. Sprinkle with powdered sugar. Yields 2 dozen. Variation: Recipe may be doubled using 8 ounces of cream cheese. Add 3 tablespoons sugar and 1/4 teaspoon salt.

  • Drain pineapple, reserving juice; add enough water to drained juice to make 1 cup. Dissolve cornstarch in 1/2 cup juice. Stir into remaining juice and combine with sugar, pineapple, coconut, and pecan pieces. Cook, stirring, over medium heat until thickened. Cool. Slice bananas evenly into bottom of pie shell; cover with blueberries. Pour pineapple filling over top. Top with whipped cream and sprinkle with chopped pecans. Chill thoroughly before serving.

  • Cream butter and sugar; add milk and dry ingredients. Pour batter into a 2-quart greased casserole. Place fruit, sugar, and juice over batter in that order. Bake at 375° for 45 minutes or until batter rises to top, browns, and cobbler is bubbly. Note: For filling, use enough fresh fruit of any kind, sugared, to cover bottom of 2-quart casserole, or use canned cherries, blackberries, etc. If using canned fruit, use 1/4 cup sugar and 1 cup of juice.
