- In a small bowl, cream butter and sugar until light and fluffy. Gradually add flour (mixture will be crumbly). Stir in walnuts. Press into a 13-in. x 9-in. baking dish coated with cooking spray. Bake at 350° for 14-16 minutes or until lightly browned. Cool on a wire rack. , For filling, in a large bowl, beat cream cheese and confectioners' sugar until smooth. Fold in half of the whipped topping. Carefully spread over crust. Top with peaches. , For glaze, in a small saucepan, combine cornstarch and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Gradually stir in gelatin until dissolved. Cool to room temperature. Spoon over peaches. Cover and refrigerate until firm. Dollop with remaining whipped topping.

PEACH DELIGHT CAKE
This is another of those recipes my mom and I found when cleaning out one of her kitchen closets. It was cut from a Betty Crocker cake mix box. If you like peaches you'll love this cake!

- Preheat oven to 350 degrees. Grease and flour 2 8-inch or 9-inch round cake pans.
- Drain the peaches, reserving the syrup. Add enough water to the syrup to make 1 1/4 cups. In a large bowl, beat cake mix, syrup, oil and eggs until well combined.
- Pour batter into prepared pans. Bake at 350 degrees, 27 to 32 minutes for 8-inch pans or 23 to 28 minutes for 9-inch pans. Cool 10 minutes in pan, then remove to wire rack and cool completely.
- Cut peaches into bite-sized pieces. Mix yogurt and whipped topping, then fold in peaches. Place 1 layer of cake on serving plate; top with 1/2 of the whipped topping mix. Cover with the second cake layer and frost top with remaining whipped topping mix. Refrigerate about 2 hours before serving.
RASPBERRY PEACH DELIGHT
A friend gave me this recipe years ago. She used all sugar-free, low-fat ingredients to make it suitable for diabetics. I lost the recipe but a JAP friend found it in a magazine. My original version is only slightly different. This tastes like a wonderful, light summery dessert and no one will know it's a diabetic dessert.

Steps:
- 1. Arrange cake cubes in a 13-in. x 9-in. dish.
- 2. Mix gelatin with hot water until dissolved, then add cold water. Mix well and pour immediately over cake cubes.
- 3. Arrange peaches over gelatin.
- 4. In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Spoon over peaches.
- 5. Top with Cool Whip.
- 6. Cover and refrigerate for at least 2 hours before cutting.
- 7. Top with fresh raspberries or peach slices.
- 8. Variations I have tried: Substitute sugar-free strawberry gelatin for the raspberry, use fresh sliced strawberries instead of the peaches, and top the Cool Whip with fresh blueberries for a colorful and delicious Fourth of July dessert.
PEACHES AND CREAM LAYER CAKE
Get a triple punch of peaches in a celebratory cake. Peaches flavor the cake, filling and frosting.

- Heat oven to 350°F (325°F for dark or nonstick pans). Grease or spray bottoms only of two 8- or 9-inch round cake pans. Reserve 8 peach slices for garnish; cover and refrigerate. In blender or food processor, place remaining peaches. Cover; blend until pureed. Reserve 1/4 cup blended peaches for filling; cover and refrigerate.
- In large bowl, beat remaining blended peaches, the cake mix, oil, 1/4 cup whipping cream and the eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pans.
- Bake 8-inch rounds 31 to 36 minutes, 9-inch rounds 26 to 33 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes. Run knife around sides of pans to loosen cakes; carefully remove from pans to cooling racks. Cool completely, about 1 hour.
- In small bowl, stir reserved 1/4 cup blended peaches and 1/4 cup peach preserves until blended. Set aside for filling.
- In medium bowl, beat powdered sugar, butter, liqueur and just enough of the 2 to 4 tablespoons whipping cream with spoon or electric mixer on low speed until smooth and spreadable.
- Place 1 cake layer, rounded side down, on serving plate. Spread peach filling over layer to within 1/4 inch of edge. Top with second layer, rounded side up. Frost side and top of cake with frosting.
- In small bowl, stir 3 tablespoons peach preserves; carefully spoon preserves around top edge of cake, allowing some to drizzle down side. Just before serving, cut reserved peach slices lengthwise in half; place on top of cake. Store loosely covered in refrigerator.

SYLIVA'S PEACH DELIGHT
This is a wonderful summer dessert. Everyone at the family reunion has gotten to expect it. It is easy to "lighten up" by using low fat and sugar free ingredients. If you use fresh peaches instead of canned sprinkle some lemon juice over them to prevent browning. I make the 4th layer first because it takes so long for it to cool. Is better if made a day ahead.

- Layer 1.
- Mix together first three ingredients and spread in 9'"x 12" baking dish. Bake at 375 for 15-20 minutes or until lightly browned. Cool completely.
- Layer 2.
- Mix together cream cheese , confectioners sugar and whipped topping well and spread on crust and refrigerate.
- Layer 3.
- Place peaches evenly over 2nd layer.
- Layer 4.
- Mix sugar, corn starch, and jello well. Stir in water and cook over medium heat until thick and clear. Cool completely. Pour over peaches and refrigerate.
