Sour Cream Peach Pecan Pie image

Steps:

  • Preheat oven to 425°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a large bowl, combine peaches and preserves. Transfer to crust. In a small bowl, whisk sugar, sour cream, egg yolks, flour and vanilla. Pour over peaches., Bake for 30 minutes. Meanwhile, in a small bowl, combine flour, sugars, pecans and cinnamon. Cut in butter until crumbly; sprinkle over pie. , Bake until a knife inserted in the center comes out clean and topping is golden brown, 15-20 minutes. Cover edge with foil during the last 15 minutes if needed to prevent overbrowning. Remove foil. Cool completely on a wire rack for 3 hours before serving. Store in the refrigerator.

Steps:

  • In a large nonstick skillet cook the meat over medium heat, stirring occasionally, until brown, about 5 minutes. Transfer the meat to a plate. Drain any fat remaining in the skillet.
  • Heat the oil in the skillet over a medium heat. Add the onions and carrots and cook, covered, until the vegetables begin to soften, about 8 minutes. Raise the heat to moderately-high. Add the mushrooms and thyme and cook, uncovered and stirring occasionally, until the mushrooms are soft and their liquid has evaporated, about 8 minutes longer. Return the meat to the pan. Add the flour and cook, stirring, for 2 minutes. Stir in the broth, 1/2 teaspoon of the salt and 1/8 teaspoon of pepper and bring to a simmer being sure to scrape up any brown bits from the bottom of the pan. Stir in the peas. Pour the mixture into a 12-cup shallow baking dish (about 11 by 9 inches).
  • Preheat the oven to 350 degrees F. Scrub the potatoes and cut into 2-inch pieces. Arrange the potatoes in a steamer basket, and steam for 10 minutes. Add the cauliflower to the basket and cook until the potatoes and cauliflower are tender when pierced with the tip of a knife, about 15 minutes longer. Mash the vegetables with a potato masher until smooth. Heat the milk, butter, the remaining 1/2 teaspoon of salt and a pinch of pepper and stir into the potato mixture.

  • Refrigerate pie shell until ready to use.
  • Preheat the oven to 350°.
  • Scatter the peaches over the bottom of the piecrust.
  • In a bowl, combine the sugar, sour cream, egg yolks, and flour.
  • Using a whisk, stir to mix everything into a thick, rich sauce.
  • Pour this evenly over the peaches.
  • Place the pin on the center shelf of the oven.

If you love peach pie, you must try this! I made it for a friend, and we almost consumed the whole pie between the two us! This is in the latest edition of Taste of Home magazine. Sherrell Dikes of Arkansas won the $2,500 grand prize at the magazine's sponsored "Great American Pie Show." It's very easy, especialy if you cheated like I did and use a ready-made pie crust!

Cut from our local newspaper a few years ago. It has become a family favorite. "If apple is the quintessential American pie, then peach is surely our summertime favorite, and all the more if it's served a la mode. To make a peach pie worth of the name, use fully ripe fruit and a pastry crust that's rich and tender but still sturdy enough to contain its sweet, juicy burden without collapsing. To remove the skins from peaches easily, pour boiling water over them, then quickly dip fruit into ice water. Use your fingers or a small knife to slip off the skins. This recipe calls for a crumbly nut topping, but you could substitue a classic lattice crust that lets the fruit show through. Serve the pie warm or at room temperatue, with or without ice cream. To gauge the amount of sugar and cornstarch to use, take your cue from the ripeness of the peaches; if they are very sweet-tasting and quite juicy, use the smaller amount of sugar and the large amount of cornstarch."

  • Preheat oven to 425 degrees.

  • Combine all sauce ingredients in saucepan; bring to a boil.
  • Cook for 1 minute.
  • Set aside and cool to lukewarm.

Add butter and shortening and pulse until a coarse meal forms. Add brandy and pulse to combine. Add water 1 tablespoon at a time until the dough comes together when pressed and is quite moist. Dump dough onto plastic wrap. Wrap tightly, forming into a disc as you do so. Refrigerate for at least 1 hour and up to 2 days.
  • Make the filling. In a large bowl, stir or whisk together maple syrup, peach brandy, eggs, vanilla, salt, butter, sugars, and Golden Syrup until a homogeneous mixture is formed. Stir in pecans.
  • Remove crust from refrigerator and roll on a lightly floured surface until it is large enough to fit your pie pan and about 1/8 inch thick. Place in pie pan, being sure to patch any holes. There must not be any holes. Use fingers to flute crust edge as you wish. You should use all of the dough. Place peach slices on top of crust. They should cover the entire bottom. Pour filling over peaches. Refrigerate pie for 30 minutes.
  • Preheat oven to 400 degrees F. Place refrigerated pie on foil lined baking sheet. Dab edges of crust with milk or cream using your fingers. Bake for 15 minutes. Reduce oven temperature to 350 degrees F without opening the oven, and bake an additional 1 hour to 1 hour 10 minutes, rotating halfway through if necessary. Cool pie completely before slicing. I actually like to refrigerate it overnight and eat it the next day. It may be stored in the refrigerator for up to 3 days or frozen in quarters wrapped in parchment and foil and placed in a zipper bag for up to 4 months. Thaw at room temperature for a couple hours or in a 350 degree F oven for about 15 minutes.
