Steps:
- Spray a 9 x 13" pan or glass dish with non-stick cooking spray.
- Cream the powdered sugar and cream cheese together.
- Place peaches in pan, spread cream cheese mixture over peaches.
- Sprinkle cake mix on top.
- Lightly sprinkle cinnamon, then place pats of butter on cake mix.
- Bake at 350 degrees for 25-40 minutes.
- Cool and serve. May top with whipped cream or ice cream.

Steps:
- Preheat oven to 350 degrees.
- Spread crushed pineapple with its juices in the bottom of a 13x9 inch pan.
- Next scatter one bag of frozen peaches over the pineapple.
- Dump the white cake mix on top of the peaches.
- Scatter second bag of frozen peaches over the cake mix.
- Sprinkle the optional raisins or pecans.
- Sprinkle the brown sugar over the raisins.
- Next evenly pour the melted margarine over the entire pan.
- Bake 55-60 minutes, or until the edges are crispy golden and pulling away from the side of the pan.
- Serve warm with vanilla ice cream, frozen yogurt, or whipped cream.

PEACHES AND CREAM SKILLET SHORTCAKE

- Preheat oven to 350 degrees F
- In a medium bowl, combined thawed peaches, brown sugar, 1 teaspoon cinnamon, vanilla extract and cornstarch, mix well to coat all of the peaches. Pour mixture into a cast iron skillet that has been coated in nonstick spray. Randomly place tablespoon size dollops of cream cheese on top of the peaches.
- In a small bowl, combine the sugar and the remaining cinnamon. Remove biscuits from the can and separate. Dredge each biscuit in the cinnamon-sugar mixture and set aside.
- Arrange biscuits over peaches. Place skillet in oven and bake for 20 to 25 minutes or until biscuits are brown and filling is bubbly. Remove from oven; cool slightly.
QUICK PEACHES AND GOLDEN RAISINS COBBLER

- Preheat oven to 425 degrees F.
- Place frozen peaches in an 8 by 8 glass baking dish, defrost in microwave for 3 minutes on high. While the peaches are defrosting, make the cobbler topping. In a bowl, combine the biscuit mix with a 1/2 cup of water, stir until thoroughly combined but do not overwork. In another bowl combine 1/2 cup of the granulated sugar, 1 teaspoon cinnamon, nutmeg, allspice, pepper, a pinch of salt and raisins. Remove peaches from the microwave and combine with the sugar mixture in baking dish. Top the seasoned peaches with biscuit mix, use your fingers to press out until even. Top the biscuit mix with almonds. Mix remaining cinnamon and sugar together and sprinkle over the biscuits. Bake until cobbler top is firm and lightly golden and peaches are bubbly and hot, about 20 to 25 minutes.
- Serve warm as is or with ice cream and whipped cream if you have some on hand.

- Cut each peach in half along the crease, twist open, and remove the pit. Peel and slice. Cut slices in half to get roughly 2 cups of sliced peaches.
- Bring sugar and water to a boil in a saucepan over medium-high heat. Boil until a syrup forms, about 3 minutes. Stir in peaches until coated. Bring syrup back to a light simmer, about 1 minute. Immediately remove from heat and pour mixture into a bowl.
- Transfer peaches into a large bowl using a slotted spoon. Pour in heavy cream and stir to combine. Divide mixture between serving glasses, cover with plastic wrap, and refrigerate until completely chilled and cream has absorbed all the peach flavor, at least 3 hours.

EASY PEACH COBBLER WITH CAKE MIX
This is a quick but company-worthy cobbler. So simple, yet wins rave reviews. If desired, use 2 (32 ounce) cans of peaches in place of fresh peaches. If doing this, use peach syrup instead of water and then omit the white sugar from recipe. Also, yellow cake mix can be substituted for the white.

- Preheat oven to 350 degrees F (175 degrees C).
- Spread peach slices evenly into a 9x13 inch baking dish. If using canned peach juice, pour 1 cup of it over peach slices. If using fresh peaches, combine water and sugar in a small bowl. Stir to dissolve, then pour mixture over peaches.
