EASY PEACH TART
This recipe is too easy to believe! And over the years, I've come up with a few tricks to make it even easier. It's so tasty; your guests will never know how simple it was. Or let kids make it for you! Enjoy!

Steps:
- Preheat oven to 375 degrees.
- Place pie crust on a parment paper lined cookie sheet.
- Put the remaining ingredients, except the milk, into a large zip-close bag and shake until peaches are coated.
- "Dump" peach mixture into a mount in the center of the crust and "pat down" so the peaches are about 1 inch from the sides.
- Fold the lip of the pie crust over the edge of the peaches.
- Coat the edge of the crust with milk.
- Bake 35 minutes or until mixture is bubbly and crust is golden brown.
- Allow to set before serving.
- (If your crust bakes faster than your peaches, just cover the it with some foil.).
FRESH PEACH TORTE
My all time favourite dessert that's foolproof and always loved. I've been making this for 25 years. I've made it often with strawberries, just use about 1 lb (1 litre); have also used rhubarb, blueberries, nectarines.... You can use light or regular sour cream. A guaranteed winner!

- Combine flour and salt.
- Cut in butter.
- Stir in sour cream.
- Press into bottom of a springform pan.
- Bake 20 minutes at 375 degrees F.
- Arrange peaches over base when it is ready.
- Pour mixed topping ingredients over peaches and return to oven.
- Bake 60 minutes at 375 degrees F.

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- To make the crust, mix butter, 1/3 cup sugar, flour, pecans and 1/2 teaspoon vanilla extract in a bowl. Press into the bottom of a 10-inch pie plate.
- Bake the crust in preheated oven for 5 minutes. Remove and allow to cool.
- Meanwhile, beat the cream cheese, egg, almond extract, 1/4 cup sugar, and 1/2 teaspoon vanilla extract in a bowl until smooth. Gently fold the peach slices into the cream cheese mixture. Spread the filling over the cooled crust. Sprinkle the cinnamon over the top.
- Bake in preheated oven for 10 minutes. Reduce heat to 325 degrees F (165 degrees C) and continue to cook for 20 to 25 minutes more.

- In a small bowl, combine graham cracker crumbs and brown sugar; stir in butter. Set aside 1/4 cup for topping. Press remaining crumb mixture onto the bottom and 1 in. up the sides of a greased 9-in. springform pan. , Place pan on a baking sheet. Bake at 350° for 10 minutes. Cool on a wire rack., Drain peaches, reserving syrup in a 2-cup measuring cup. Add enough water to measure 1-1/2 cups. In a large saucepan, combine 1/4 cup sugar and cornstarch; stir in syrup mixture until smooth. Add peaches. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Cool to room temperature, stirring occasionally., Meanwhile, in a large bowl, beat cream cheese and remaining sugar until smooth. Beat cream until stiff peaks form; fold into cream cheese mixture. , Spread half of the cream cheese mixture over crust. Top with half of the peach mixture; repeat layers. Sprinkle with reserved crumb mixture. Cover and refrigerate for 8 hours or overnight. Remove sides of pan before slicing.

PEACH TART
This is really a cake, there is no crust. It is baked in a springform pan. It is an Italian recipe. It is from Marcella Hazan. I have made this cake for years. Soon I am going to try it with frozen peaches, see if it produces good results, and post a measurement here for it, and any adapted method. In the summer, make sure to use slightly underripe fruit that is firm and large. Freestone peaches are best because they are easy to slice, but any good quality peach can be used, as can, I'm told, nectarines.

- Wash, peel, stone and cut the peaches into slices, no more than 1/4-inch thick. Set aside.
- Cream the butter and sugar. Beat in the eggs.
- Sift or stir together the dry ingredients, then fold into the batter.
- Stir in the vanilla.
- Grease and lightly flour a 10-inch springform pan.
- Spoon 2/3's of the batter into the pan.
- Cover with the sliced fruit.
- Add remaining batter, spreading evenly.
- Bake 1 hour at 375 degrees. Remove and cool in pan 15 minutes, before turning out to cool completely.
- This tart will keep under refrigeration for 1 week, covered.

PEACHY WALNUT TORTE
This recipe is in the South Beach Diet cookbook--Phase 3. I made it for a baby shower brunch and it went faster than all the high sugar desserts.

Steps:
- Place 1/4 cup of walnuts in small bowl and set aside.
- Place remaining walnuts in another small bowl and add the butter and sugar, mix well with fork and press the walnut mixture firmly into the bottom of an 8" springform pan.
- In a large bowl, with an electric mixer on med. speed, beat the cream cheese and sugar sub. until smooth.
- Remove half of the cream cheese mixture to a med. bowl and whisk in the raspberry yogurt--spread evenly over the walnut crust.
- Place in the freezer for 1 hour, or until firm.
- Add the peach yogurt and food coloring to the remaining cream cheese, cover and refrigerate.
- When the rasp. layer has firmed, spoon the peach mixture over it. Freeze for 2 1/2 hours, or until firm.
- When ready to serve, arrange the peach slices around the edge and place raspberries and reserved walnuts decoratively on top.

This kosher recipe is posted for the World Tour 2005 RecipeZaar event. I haven't had a chance to try this one yet. - Grease a 13 X 9 pan. Preheat oven to 350°F.
- Beat sugar with oil until thoroughly incorporated. Beat in eggs, one at a time. Add juice and vanilla extract.
- In a separate bowl, combine flour with baking powder and salt. Add to sugar mixture, and stir.
- Pour into prepared pan. Press peaches into batter in 3 rows - about 12 slices per row. Bake about 45 minutes, or until cake tests done.

- Preheat the oven to 350 degrees F. Grease a 9-inch square baking pan.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and 1 cup of the sugar for 3 to 5 minutes on medium-high speed, until light and fluffy. With the mixer on low, add the eggs, one at a time, then the sour cream and vanilla, and mix until the batter is smooth. In a separate bowl, sift together the flour, baking soda, baking powder, and salt. With the mixer on low, slowly add the dry ingredients to the batter and mix just until combined. In a small bowl, combine the remaining 1/2 cup sugar and the cinnamon.
- Spread half of the batter evenly in the pan. Top with half of the peaches, then sprinkle with two-thirds of the sugar mixture. Spread the remaining batter on top, arrange the remaining peaches on top, and sprinkle with the remaining sugar mixture and the pecans.
- Bake the cake for 45 to 55 minutes, until a toothpick inserted in the center comes out clean. Serve warm or at room temperature.

- To make the crust, combine flour, salt and cold butter cubes in the bowl of a food processor. Pulse several times until cubes become the size of peas. Transfer the flour mixture to a large mixing bowl and add ⅓ cup of ice-cold water. Stir gently, adding additional water if necessary, until dough forms a ball that is moist, but not sticky. Remove dough and wrap it with plastic wrap then shape into a round disk. Chill in the fridge at least 45 minutes.
