YUMMY PEANUT BUTTER APPLE MUFFINS
My son had the idea for these one fall Saturday morning after we had gone apple picking. They are delicious! Great for school lunches, too.

- Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper liners.
- Mix flours, baking powder, baking soda, and salt in a large bowl.
- Melt butter in a small saucepan. Stir in peanut butter and brown sugar. Remove from heat and add milk, egg, and vanilla extract. Add butter mixture to the flour mixture, mixing until just blended. Add more milk, 1 tablespoon at a time, if the batter seems dry.
- Add apple and peanut butter chips, stirring gently to distribute. Divide the batter evenly among the muffin cups.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes.

PEANUT BUTTER, APPLE AND SAUSAGE MUFFINS

- HEAT oven to 375 degrees F. Combine flour, sugar, baking powder and salt in large bowl; mix well.
- BEAT egg in small bowl; whisk in peanut butter. Stir in milk a little at a time; add oil and mix well. Pour into bowl with dry ingredients; stir gently to combine (this is a stiff batter; do not over mix).
- LINE a 12 muffin pan with paper muffin cups. Fill the lined cups 1/3 full of batter. Make a shallow indentation in the center of the batter with your finger; do not go to the bottom of the cup.
- PLACE 1 teaspoon jelly in each indentation. Top with halved sausage patties. Fill muffin cups 2/3 full with remaining batter.
- BAKE 20 minutes until done and golden brown. Remove from oven and cool in pan 5 minutes. Remove from pan and cool on wire rack; serve warm.
CINNAMON-SUGAR ENGLISH MUFFINS

- Preheat the oven to 350 degrees F.
- Add the bacon to a skillet over medium heat and fry until crisp, 10 to 12 minutes.
- Meanwhile, add the butter, sugar, cinnamon and vanilla to a bowl. Using a fork, mash everything together until completely combined. Spread the mixture onto the split side of each English muffin half, completely covering the surface to the edges.
- Place the English muffins on a baking sheet and bake for 10 minutes, then remove from the oven. Turn the oven to the broiler setting and broil until golden brown and bubbling, about 2 minutes. Watch carefully so they do not burn.
- While the bacon and muffins cook, add the peanut butter to a microwave-safe bowl. Microwave until heated through and pourable, about 30 seconds.
- Assemble by topping the muffin halves with a layer of sliced apples and drizzling the warm peanut butter over the top in a thin stream. Cut or tear the bacon rashers in half and place 1/2 piece of bacon onto each muffin half, then serve.

- Mix cinnamon and sugar together in a small bowl. Spread one tablespoon of peanut butter onto one side of 8 slices of bread.

- Preheat oven to 400 F. Grease a 12 hole cupcake pan with nonstick cooking spray or line with cupcake papers.
- In a large bowl combine both flours, baking powder, and slat and mix until well combined. In a separate bowl, beat together the eggs, agave nectar, peanut butter, milk and applesauce. Add the wet ingredients to the dry ingredients and mix until just combined.
- Spoon the batter into the prepared pan or muffin cups, filling holes 1 cm from the top. Sprinkle with a tablespoon or so of your favorite granola. Bake at 400 F. for 5 minutes and then reduce oven temperature to 350 F and bake for another 12-15 minutes or until a toothpick inserted comes out clean. The high temperature at the beginning will help ensure high-domed muffins.
- Remove from pan and cool on wire rack. Muffins will be more moist and flavorful on the second day.
