Steps:
- Preheat oven to 350 degrees F (180 degrees C).
- Cream together butter and brown sugar. Beat in eggs, peanut butter and vanilla.
- Add flour, cornstarch, salt, baking soda and baking powder. Stir in chocolate chips.
- Roll into balls about 1 1/2 teaspoonfuls (or use cookie scoop) and place onto ungreased cookie sheets about 2 inches apart. Flatten slightly because they do not flatten much while cooking.
- Bake for 10 minutes.

- Preheat the oven to 375 degrees F. Line a baking sheet with parchment or a silicone mat.
- With an electric mixer, beat together the peanut butter, brown sugar and egg until well combined. Stir in the chocolate chips with a wooden spoon.
- Lightly wet your hands and form the mixture into 12 balls. Place the balls about 1 inch apart on the baking sheet. Lightly wet the tines of a fork and press a criss-cross pattern into the top of each cookie. Lightly sprinkle them with flaky sea salt.
- Bake until just starting to brown, 12 to 15 minutes. Let sit for 5 minutes on the baking sheet, then remove to a rack to cool completely before eating.
PEANUT BUTTER HEAVEN COOKIES
I don't remember where I got this recipe from, but it has been my go-to recipe for peanut butter cookies for the past several years. After making these I can't see myself using any other peanut butter recipe! The picture isn't from my batch of cookies, if any survive long enough the next time I make them I'll post a picture.

- 1. In a large mixing bowl using an electric mixer, beat butter for about 30 seconds. Add sugars and mix until smooth. Add eggs and vanilla and mix until it starts to get fluffy. Stir in peanut butter. In a separate bowl, mix flour, baking soda and salt. Stir into combined wet ingredients in portions. If you choose, stir in the finely chopped peanuts. Cover and chill for about 2 hours. I usually make my cookie dough the day before and let it chill overnight, but 2 hours is sufficient for these.
- 2. Preheat oven to 350 degrees. Lightly grease your cookie sheets. Roll dough into about 1-inch round balls and place on cookie sheet, at least 2 inches apart. Using a fork that has been dipped in water, flatten the slightly. Sprinkle lightly with granulated or coarse sugar. Bake 12-15 minutes. I usually start checking at 10 minutes, they should look dry on top. Be very careful not to overcook!
- 3. Allow cookies to cool a few minutes before moving them to cooling racks. Makes about 3 dozen cookies

- Heat oven to 180C/160C fan/gas 4 and line 2 large baking trays with baking parchment.
- Measure the peanut butter and sugar into a bowl. Add ¼ tsp fine table salt and mix well with a wooden spoon. Add the egg and mix again until the mixture forms a dough.
- Break off cherry tomato sized chunks of dough and place, well spaced apart, on the trays. Press the cookies down with the back of a fork to squash them a little. The cookies can now be frozen for 2 months, cook from frozen adding an extra min or 2 to the cooking time.
- Bake for 12 mins, until golden around the edges and paler in the centre. Cool on the trays for 10 mins, then transfer to a wire rack and cool completely. Store in a cookie jar for up to 3 days.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, cream together the butter, peanut butter, brown sugar, and white sugar until smooth. Beat in the eggs one at a time, then stir in the corn syrup, water, and vanilla. Combine the flour, baking soda, and salt; stir into the peanut butter mixture. Fold in chocolate chunks. Drop by 1/4 cupfuls 3 inches apart onto ungreased baking sheets.
- Bake for 12 to 14 minutes in the preheated oven, or until edges are golden. Allow cookies to cool for 1 minute on the cookie sheet before removing to wire racks to cool completely.
