Poached Pears image

Steps:

  • Combine the wine, sugar, cinnamon stick, star anise, clove, orange zest and vanilla bean in a deep pot and bring to a simmer. Add the pears, cover with a heatsafe plate (making sure that it fully submerges the fruit) and cook on low heat until you can pierce the pears easily with a knife, 30 to 45 minutes.
  • Serve with whipped cream and ground cinnamon.

3 cups red wine, such as Cabernet or Merlot
3/4 cup sugar
1 cinnamon stick
1 star anise
1 clove
Zest of 1 orange
1 vanilla bean, cut in half lengthwise
4 pears, such as Anjou, Bartlett or Bosc, cored and peeled
Whipped cream, for serving
Ground cinnamon, for serving

Steps:

  • In a saucepan over medium heat, combine champagne, orange juice and sugar. Add orange slices, cloves and vanilla. Bring to a boil, and stir until sugar is dissolved. Place pears in saucepan, and reduce heat. Cover, and simmer 15 minutes. Remove cover, and simmer an additional 30 minutes. Remove pears from the liquid, and let cool.
  • Heat chocolate in a bowl over hot water, stirring until melted. Pour chocolate over the pears, and serve.

Easy Poached Pears image

Steps:

  • In a large saucepan, combine lemon zest, cinnamon stick, allspice, ground pepper, apple cider, and water.
  • Add pears. Cover with waxed paper to prevent discoloring. Bring to a simmer. Cook, turning pears occasionally, until easily pierced with the tip of a paring knife, but not falling apart, about 20 minutes. Remove pears from liquid; transfer to large bowl.
  • Raise heat to high; boil cider mixture until reduced to a syrup, about 15 minutes. Discard cinnamon. Pour syrup over pears; refrigerate. To serve, slice off a sliver from the bottom of each pear (so it stands upright). Serve pears with lemon sorbet, if desired.

Red Wine and Port Poached Pears with Mascarpone image

Steps:

  • In a large saucepan combine the port, wine, 1 cup of the sugar, star anise, cinnamon, thyme, lemon zest, the vanilla bean and seeds. Bring to a boil, then reduce the heat and simmer for 15 minutes.
  • Add the pears and simmer until the pears are cooked through, about 25 to 30 minutes. Turn off the heat and let cool in the poaching liquid.
  • Before serving, remove the pears from their poaching liquid and reduce the liquid to a syrup. Strain into a small bowl.
  • Combine the mascarpone and remaining sugar in a small bowl. Dollop a small amount of the mascarpone on each plate and arrange a pear half on top to prevent it from sliding around the plate. Garnish the pears with a large dollop of the mascarpone, and drizzle with the reduced poaching liquid. Shave the chocolate over the mascarpone and serve.
  • Voila!

Steps:

  • Peel gingerroot and slice thin. Cut slices into thin strips and in a saucepan simmer in 1 quart water 10 minutes. Drain gingerroot and discard water.
  • In a saucepan just large enough to hold pears lying on their sides bring 3 cups water to boil with gingerroot, sugar, Port, and lemon juice, stirring until sugar is dissolved.
  • Peel pears, leaving stems intact, and cut a thin slice from bottom of each if necessary to enable pears to stand upright when served. Arrange pears on their sides in poaching liquid, adding enough of remaining water as necessary to just cover. Simmer pears, turning them occasionally, until tender, 20 to 40 minutes depending on ripeness. Carefully transfer pears with a slotted spoon to a bowl and boil poaching liquid until reduced to about 3/4 cup and slightly syrupy. Pour sauce over pears. Pears may be made 1 day ahead and cooled in sauce before being chilled, covered. Serve pears warm or chilled.

  • Bring water to a boil in a saucepan. Add lemon juice and pears and let sit for 2 minutes. Remove pears from the hot water 1 at a time and carefully peel, leaving stem intact.
  • Combine wine, sugar, vanilla extract, cinnamon, and star anise in a medium-sized saucepan and bring to a boil. Reduce heat to a simmer. Rinse pears and add to the boiling wine mixture. Steps:

  • Using a small, sharp knife, score a zigzag pattern in the skin around the top of each pear, working downwards from the stalk.
  • Leaving the zigzag skin at the top in place, peel the rest of each pear very thinly so as to preserve their shape.
  • Remove the core from the base, using a corer or a small melon baller.
  • Combine all the ingredients in a saucepan big enough to hold everything, including the pears.
  • Set over a medium heat until the liquid comes to the boil, then reduce the heat so that it is barely simmering.
  • The cooking time will vary according to the ripeness of the pears.
  • Very ripe pears will only take 5 minutes; much less ripe fruit will need up to 15 minutes.
  • As soon as they are ready, turn off the heat.
  • Transfer the pears with their poaching syrup to a bowl and leave at room temperature until needed.
  • Serve one or two pears on each plate with a little orange zest and some syrup.
