Steps:
- In a large bowl, cream butter, sugar and vanilla until light and fluffy. Gradually add flour. Stir in pecans., Shape rounded teaspoonfuls of dough into 2-1/2-in. logs and shape into crescents. Place 1 in. apart on ungreased baking sheets. , Bake at 325° for 20-22 minutes or until set and bottoms are lightly browned. Let stand for 2-3 minutes before removing to wire racks to cool. Dust with confectioners' sugar before serving.

Press onto the bottom of a greased 13x9-in. baking pan., In a small bowl, beat milk, egg and vanilla until combined. Stir in pecans and toffee bits. PECAN DREAMS
These cookies are a Christmas favorite. My Mother was given this recipe from a neighbor, and has been a Christmas staple in our family ever since. Give this one a try you won't regret it.

Steps:
- Preheat oven to 300 degrees Fahrenheit.
- Combine butter, powdered sugar, vanilla, flour, pecans and water. You might have to add a little extra water if mixture is too dry.
- After all ingredients are mixed, roll into small balls.
- Place balls on an ungreased cookie sheet.
- Bake for 30 to 45 minutes.
- After cookies come out of oven, cover with powdered sugar; set aside.
- Cool completely.
- When cooled dust them with more powdered sugar.
PECAN COOKIES
Steps:
- Preheat oven to 350 degrees F. Cream together sugar and butter. Stir in 1 egg and add other ingredients. Drop from a teaspoon onto parchment-lined cookie sheets at least 3 inches apart. Bake for 8 to 10 minutes. Cookies will spread, will be thin and subject to sticking. Remove carefully while still a little warm.
BUTTER PECAN COOKIES

- Place chopped pecans and 1 tablespoon butter in a baking pan. Bake at 325° for 5-7 minutes or until toasted and browned, stirring frequently. - Sift cake flour, salt, and baking powder into a medium bowl.
- Combine butter, sugar, and vanilla extract in a large bowl; beat with an electric mixer until smooth and creamy. Add dry ingredients and mix thoroughly. Shape dough into a 1-inch diameter log, wrap with plastic wrap, and place in the refrigerator until firm, 1 hour to overnight.
- Preheat the oven to 275 degrees F (135 degrees C). Line 2 cookie sheets with parchment paper.

- Preheat oven to 350 degrees. On a baking sheet, toast pecans until fragrant, about 6 minutes. Let cool completely; finely chop.
- With an electric mixer, cream butter and 1/3 cup sugar until light, about 1 minute. Beat in vanilla, salt, and flour, scraping down sides of bowl, just until dough comes together. Fold in pecans.
- Separate dough into 12 pieces; squeeze dough to shape into balls. Roll in sugar. Place, 3 inches apart, on a baking sheet. Gently flatten with the bottom of a glass (reshape sides if necessary). Sprinkle with sugar.

- Add the butter and sugar to the bowl of a stand mixer or use a hand mixer. Mix on medium speed until combined, then mix on high speed until very light and creamy, about one minute. Add the vanilla and mix to incorporate. Add the flour and pecans and mix just until flour is incorporated.
- Using a small cookie scoop, place a scoop of cookie dough in your hand and roll it into a ball and place the ball on an ungreased large cookie sheet. Repeat until all of the dough is rolled into balls. Bake for 30 minutes or until the cookies are just lightly browned on the bottoms and remove from oven.
- Allow cookies to cool for 2 to 3 minutes, then roll the cookies, one at a time, in the powdered sugar and transfer to a piece of waxed paper. Once cookies have completely cooled, re-roll the cookies one more time in the powdered sugar. You might have to use a little bit more powdered sugar.
- Store cookies in an airtight container. These cookies will stay fresh for several days and they are an excellent cookie for making ahead and freezing.
