PECAN SANDIES COOKIES
Whenever Mother made these cookies, there never seemed to be enough! Even now when I make them, they disappear quickly. These melt-in-your mouth treats are great with a cold glass of milk or a steaming mug of hot chocolate. -Debbie Carlson, San Diego, California

- Preheat oven to 300°. In a large bowl, cream butter and sugar. Add water and vanilla; mix well. Gradually add flour; fold in pecans. , Roll dough into 1-in. balls. Place on ungreased baking sheets and flatten with fingers. , Bake 20-25 minutes or until bottom edges are golden brown. Cool on a wire rack. When cool, dust with confectioners' sugar.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, cream together the margarine, vegetable oil, 1 cup white sugar and confectioners' sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, cream of tartar and salt; stir into the creamed mixture. Mix in the pecans. Roll dough into 1 inch balls and roll each ball in remaining white sugar. Place the cookies 2 inches apart onto ungreased cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven, or until the edges are golden. Remove from cookie sheets to cool on wire racks.

PECAN TOFFEE SANDIES
I had a bag of Heath candy pieces that my husband had bought for me because he thought I could make something with it, and he loves Heath candy bars. It's not a very sweet cookie. For those who want a little more sweetness, you can sprinkle powdered sugar over them after removing them from the parchment paper before they are completely cool. My family loves them without it. I put the prep time at 4 hours due to the fact that the dough has to chill for a good long time. Hope you enjoy!

- Preheat oven to 325 degrees. Cream butter and sugar together until light and fluffy. Add in vanilla. Mix in flour a half cup at a time until all added. Stir in pecans and candy pieces. Dough will be fairly firm.
- Divide dough in half. Roll each half into a log and wrap in plastic wrap. Place in fridge and chill until firm. I usually leave it in there over night or at least 4 hours.
- Cover cookie sheet with parchment paper. Remove one log from the fridge. Unwrap and slice into 1/2 inch slices and place on cookie tray. Press down slightly with palm of your hand. You can place them fairly close together as this cookie does not spread much as it bakes. Refrigerate any unsliced dough until ready to slice.
- Bake in the oven 18 to 20 minutes. You want the cookie to be firm but not hard. They will not brown up like some cookies. Remove when the cookie is firm. Allow to cool for a few minutes on the parchment paper before removing to let the toffee firm up. Then let cool completely before storing in airtight container.
CRUNCHY PECAN-TOFFEE COOKIES

- Combine flour, baking soda, and salt in a medium bowl; whisk until well combined.
- Place butter and brown sugar in a large bowl and beat with an electric mixer until light and fluffy, about 3 minutes. Add egg whites and vanilla extract, and beat for 1 more minute. Gradually add flour mixture to the bowl and mix until completely combined. Fold in pecans and toffee bits until all ingredients are well incorporated.
- Move the bowl to the refrigerator and chill for at least 30 minutes.
- Preheat the oven to 375 degrees F (190 degrees C). Line 2 large baking sheets with parchment paper and set aside.
- Scoop dough into heaping tablespoon-sized balls with a spoon or cookie scoop. Place dough balls about 2 inches apart on the prepared baking sheet and flatten just slightly with the palm of your hand.
- Bake in the preheated oven until edges are set and lightly browned, 10 to 12 minutes. Let cookies cool on the baking sheet for 1 minute, then transfer to a wire rack to cool completely.
