Cheesy Rice-Stuffed Acorn Squash image

Steps:

  • Position a rack in the upper third of the oven; preheat to 425 degrees F. Put the squash, cut-side up, in a large microwave-safe dish with 1 tablespoon water; dot with 1 tablespoon butter and season with salt and pepper. Cover with plastic wrap and pierce with a knife to vent. Microwave until tender, about 15 minutes.
  • Meanwhile, heat the remaining 2 tablespoons butter in a large pot or Dutch oven over medium heat. Add the onion; cook, stirring, until softened, about 5 minutes. Add the garlic and cook 1 minute. Add the flour and cook, stirring, 3 minutes. Whisk in the milk until smooth, then bring to a simmer and cook until thickened, about 5 minutes. Add the cheese, stirring to melt. Add the nutmeg, 3/4 teaspoon salt and a few grinds of pepper. Stir in the rice and spinach.
  • Transfer the squash to a rimmed baking sheet and fill with the rice mixture. Sprinkle with more cheese and bake until lightly browned, about 15 minutes. Top with parsley.

AUTUMN STUFFED ACORN SQUASH

I only make this recipe in autumn since the flavors are so fall-like. The hint of maple syrup and warm cranberries really sets it off. This is nice enough for company and pairs wonderfully with crusty bread and a full bodied white wine. My hubby starts asking for it as early as late August!

Autumn Stuffed Acorn Squash image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange squash halves, cut-side up, in a roasting pan. Run a fork through the meat of each half, creating grooves. Sprinkle with brown sugar, cinnamon, salt, and pepper; dot with butter pieces.
  • Bake in the preheated oven until meat is tender enough to puncture with a fork, 30 to 40 minutes.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add wild rice, cranberries, and chicken stock; cook and stir until rice and cranberries have absorbed the chicken stock, about 5 minutes.
  • Spoon the sausage filling into each squash half. Return stuffed squash to oven and bake until flavors have blended, 5 to 10 minutes.

Steps:

  • Melt butter in a heavy large saucepan over medium heat.
  • Add shallots and celery and cook until soft, stirring frequently, about 8 minutes.
  • Add wild rice, 4 1/2 cups of broth, thyme, and the salt and bring to a simmer; cover, reduce heat to medium-low and simmer until rice is tender but firm, adding more broth by 1/4 cupfuls if dry, about 40 minutes longer.
  • This can be made a day ahead. Cool slightly; cover and chill.
  • Rewarm over medium-low heat before using, adding more broth by 1/4 cupfuls if necessary.
  • Meanwhile, preheat oven to 350 degrees F.
  • Place grapes on rimmed baking sheet/pan and drizzle with oil; toss and roast grapes until they begin to wrinkle, about 15 minutes.
  • Transfer to a bowl and toss with the balsamic vinegar.
  • This part can be made up until 4 hours ahead and let stand at room temperature.

Roasted Acorn Squash with Apples and Cranberries image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place squash into a large pot of boiling water; boil for 15 to 20 minutes. Transfer squash to a large bowl of ice cold water and set aside until cool enough to handle, 5 to 10 minutes.
  • Peel squash along the ridges using a vegetable peeler, then use a teaspoon or grapefruit spoon to dig out peel in the valleys of the squash. Slice squash in half and remove seeds and stem. Cut remaining squash into bite-sized chunks.
  • Combine squash, apples, celery, onion, and dried cranberries in a large bowl.
  • Combine brown sugar, salt, cinnamon, and nutmeg in a small bowl. Add to squash mixture and toss well to combine. Pour mixture into the prepared baking dish. Add water and dot the top with butter. Sprinkle with walnuts.
  • Bake, uncovered, in the preheated oven until squash is fork-tender, about 1 hour. Add some liquid halfway through to prevent drying out, if necessary. Serve hot.

Steps:

  • Preheat the oven to 350 degree F. Cut each squash in half crosswise. Scoop out and discard the seeds and strings.
  • If necessary, trim the top and bottom so that the squash will sit level, and place on a rimmed baking sheet, cut side up. Sprinkle each half with a little salt, pepper, and nutmeg, to taste.
  • Using 3 tablespoons of the butter, dot each half with some butter. Cover the pan tightly with foil and bake the squash just until moist and tender, about 45 minutes.
  • Meanwhile, combine the rice, chicken broth, ¼ teaspoon salt, and 2 cups of water, in a medium saucepan.
  • Bring to a boil over medium-high heat. Reduce the heat to a bare simmer, partially cover, and cook, stirring occasionally, until the rice is tender, about 40 minutes. When the rice is done most of the water should be evaporated.
  • In a 10-inch saute pan, heat the olive oil over medium heat.
  • Swirl to coat the pan and saute the onion, garlic, celery, and carrot until slightly softened, about 3 minutes.
  • Add the pears and saute 2 minutes longer. Cover the pan, adjust the heat to medium-low, and cook the vegetables until crisp-tender, 3 minutes longer.
  • Add the sage, thyme, and parsley and saute 1 more minute. Remove from the heat.
  • In a large bowl, combine the cooked rice, sauteed vegetables and pears, walnuts and dried cranberries.
  • Taste and add salt and pepper, if desired. Mound the rice mixture into the squash halves, dividing it evenly.
  • Cut the remaining tablespoon of butter into small pieces. Dot each stuffed squash with butter. Cover with foil.
  • Bake at 350 degrees F until heated through, about 20 minutes.
