- Preheat waffle iron. In a large mixing bowl, sift together flour, baking powder, sugar and baking soda. In a separate bowl, beat together egg yolks and milk. Add milk mixture, butter and oil to flour; stir gently to combine. Beat egg whites until stiff peaks have formed; fold into batter.
- Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron and sprinkle generously with chopped pecans. Cook until golden brown. Keep warm in oven while remaining waffles cook.

- In a bowl, combine flour, baking powder and salt. Combine egg yolks, milk and oil; stir into dry ingredients. Beat egg whites until stiff; fold into batter. , Sprinkle hot waffle iron with 2 tablespoons pecans. Pour 1/4 to 1/3 cup of batter over pecans and bake according to manufacturer's directions until golden brown. Repeat with remaining pecans and batter. Serve with syrup.

I found this recipe in a Bisquick pamphlet and it's become my new go to waffle recipe. Sometimes I double the recipe and freeze the leftovers for a quick weekday breakfast.

- Stir all ingredients expect pecans until blended.
- Fold in pecans.
- Pour onto center of a hot waffle iron and close lid.
- Bake for about 5 minutes or until steaming stops.
BACON PECAN WAFFLES
Steps:
- For the bacon pecans: Add butter to a skillet over medium-high heat until melted. Then add the brown sugar, pecans, bacon and vanilla. Cook until a caramel texture, 2 to 3 minutes.
- For the waffles: Spray a waffle griddle with nonstick cooking spray. Heat the griddle on medium heat.
- Whisk together the pancake mix, milk, oil, cinnamon, sugar and vanilla in a large bowl. Ladle the waffle batter into the waffle griddle and close. Cook until golden, 1 to 2 minutes. Repeat with remaining batter.
- Remove and serve with the bacon pecans poured directly over the waffles.
PECAN-RICOTTA WAFFLES
Crispy on the outside, soft on the inside, with a little crunch from the pecans. Keep waffles warm in the oven as they complete cooking and come off the waffle iron. The ricotta adds tenderness, richness, and great texture to the waffles. Breakfast, brunch, or breakfast-for-dinner never looked better! Serve with butter, maple syrup, and additional pecans, if desired.

- Preheat the oven to 200 degrees F (95 degrees C). Preheat a waffle iron according to manufacturer's instructions.
- Whisk flour, brown sugar, baking powder, baking soda, and salt together in a mixing bowl.
- Combine buttermilk, ricotta cheese, and eggs in a large bowl; blend with an electric mixer until smooth. Stir in melted butter and maple extract. Add flour mixture to buttermilk mixture and stir until just combined but still lumpy; don't overmix or the waffles will be tough and chewy.
- Lightly spray the waffle iron grids with cooking spray, if needed, following the manufacturer's instructions for cooking. Add about 1 cup of batter depending on the size of your waffle iron, spreading evenly, and sprinkle batter with about 2 to 3 tablespoons pecans.

MAPLE PECAN WAFFLES
This is a nice light and fluffy waffle--great for overnight guests. Or, make it for dessert and top it with fresh fruit and whipped cream. I found this in My Great Recipes. I didn't have any pecans so I substituted walnuts. For the maple flavoring I threw in a few squirts of maple syrup. If you have any left (might want to double the recipe), wrap in plastic and freeze. To reheat, just put the frozen waffle in the toaster (move over L'eggo My Ego).

Transfer bananas with a spatula to an oiled baking sheet and cool slightly.
- Put 4 waffles on 4 plates and divide bananas among them. Top bananas with remaining waffles.
