Penne with Spiced Tuna Sauce image

Steps:

  • Boil pasta until al dente. Saute onions in olive oil for 5 minutes or until translucent. Add hot pepper, anchovies and whisk in until anchovies dissolve into a paste. Add peppers and celery and saute for 5 minutes or until tender but still somewhat crunchy. Stir in capers and tuna and cook just to warm the tuna through. Season to taste with salt; remove hot pepper; add black pepper if you wish. Drain pasta and return to pasta pot; add sauce and toss; transfer to serving bowl & garnish with parsley.

  • Cook 1 sliced shallot in 3 tablespoons olive oil in a large skillet over medium heat until softened, 4 minutes. Add 3 tablespoons capers; cook 1 minute. Add one 14-ounce can cherry tomatoes; cook, stirring, until the tomatoes burst, 5 minutes. Smash with a spatula, then stir in one 7-ounce can Italian oil-packed tuna, breaking it into chunks. Toss with 12 ounces cooked spaghetti and 3 tablespoons olive oil, adding up to 3/4 cup pasta-cooking water to loosen the sauce; season with salt and pepper.

Steps:

  • Heat the garlic in the oil over low heat until it turns pale gold, about 15 minutes. Remove garlic with a slotted spoon to a small bowl.
  • Increase the heat to med-high and add the red onions. Cook for 2 minutes. Add the tuna strips. Increase the heat to high and quickly sear the fish on all sides, while seasoning it with the basil, oregano, and mint. Cook until the fish is done to your liking, 2 to 5 minutes. Remove fish to a hot platter or warm oven.
  • Return the garlic to the skillet. Add the tomatoes, olives, capers, and red pepper flakes. Cook for just a minute, stirring occasionally. Spoon over fish.

  • Bring a 4-quart pasta pot three fourths full with salted water to a boil for penne. Mince garlic. Finely grate enough lemon zest to measure 1 tablespoon and squeeze 1 teaspoon juice. Cut basil into thin strips. In a large bowl toss together garlic, zest, juice, basil, and tuna with oil from can.
  • Boil penne until al dente and drain in a colander. Add penne to bowl and toss with salt and pepper to taste.

Steps:

  • In a large skillet heat oil over medium heat.
  • Add in the sausage meat; cook breaking up with a spoon until the meat is lightly browned (about 12 minutes) using a slotted spoon remove to a bowl and leave some fat in the skillet.
  • Add in the onion, chili flakes, basil and oregano; saute for about 5 minutes (adding in the garlic the last 2 minutes of cooking).
  • Add in tomato paste and stir 1 minute.
  • Add in the wine and simmer for 6-8 minutes over medium-low heat, or until it almost evaporates.
  • Add in the cooked sausage meat along with the crushed and chopped drained tomatoes.
  • Add in 1 tablespoon salt.
  • Simmer uncovered for about 1-1/2 hours over low heat, stirring with a wooden spoon occasionally.
  • Season with more salt if desired and black pepper.
  • Stir in the cream and heat through over low heat.
  • Just before the sauce if finished cooking, cook the pasta in boiling salted water until just al dente (do not rinse the pasta with water).
  • Serve the sauce with cooked pasta, sprinkle with grated parmesan cheese on top.

Steps:

  • Heat 1/3 cup of olive oil in a large skillet over medium heat.
  • Add pancetta and cook, stirring, until golden, 2 to 3 minutes.
  • With a slotted spoon transfer pancetta to a plate.
  • Place skillet back on medium heat.
  • Add onion, cook, stirring, 2 to 3 minutes then add peppers.
  • Cook, stirring, until peppers begin to color and soften, 5 to 6 minutes.
  • Return pancetta to skillet, add tomatoes and season with salt and pepper.
  • Reduce heat to medium-low and cook uncovered, stirring occasionally, until peppers are tender and juices in skillet have thickened, 15 to 20 minutes.
  • Add a little water or broth if juices should reduce too much.
  • Taste and adjust seasoning and turn heat off. Makes 2 and 1/2 to 3 cups of sauce.
  • Cook pasta in plenty of salted boiling water until 'al dente'.
  • Put skillet back on medium heat.
  • Add remaining olive oil.
  • Stir to blend.
  • Drain pasta and add to skillet with sauce.
  • Season lightly with salt.
  • Mix quickly over low heat until pasta and sauce are well combined.
  • Taste, adjust seasoning and serve.

  • Place all the sauce ingredients in the bowl of a food processor. Pulse on and off until roughly chopped. Pour the sauce into a bowl, cover and refrigerate until ready to use.
  • Bring four quarts of water to the boil with one tablespoon of salt, or to taste, and add the penne. Cook, stirring down with the fork, for 10 to 12 minutes.
  • Meanwhile, place a cast-iron skillet over high heat and sprinkle the pan with one tablespoon of kosher salt.   • Bring a large pan of salted water to the boil and cook the penne for 1 min less than pack instructions. Drain, reserving a cup of the cooking water, and leave the pasta in the colander.
