Steps:
- In a large skillet, cook beef, sausage, onion, and green pepper over medium heat until meat is no longer pink, drain.
- Stir in mushrooms, and olives, set aside.
- Place one slice of ham on each tortilla, top with close to 1/2 cup beef mixture, and drizzle with 3 tablespoons pizza sauce.
- Layer each tortilla with 5 slices pepperoni, 5 banana pepper rings, and 1/2 cup mozzerella cheese.
- Fold sides of tortillas over filling, and secure with toothpicks.
- Place in two 13x9 baking dishes and bake uncovered at 400 degrees for 10-15 minutes or until cheese is melted.
- Warm with the remaining pizza sauce , serve with wraps.

- Preheat oven to 425 degrees F (220 degrees C).
- Heat a skillet over medium heat; cook and stir beef until browned, 5 to 7 minutes. Add onions and green bell peppers to beef; cook and stir until softened, 5 to 10 minutes. Pour barbeque sauce over beef mixture and simmer until sauce is slightly reduced, about 10 minutes.
- Lay 4 tortillas on a baking sheet and top each with beef mixture and Cheddar cheese. Top each Cheddar cheese layer with a tortilla.
- Bake in the preheated oven for 10 minutes; flip the quesadillas and cook until cheese is melted, about 5 minutes more.

- Heat olive oil in a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onion, tomato sauce, olives, sofrito, sazon, garlic, and oregano. Bring to a simmer and cook until mixture thickens, about 15 minutes.
- Spoon 1 heaping tablespoon of meat mixture into the middle of a disco. Fold dough over, moisten edges, and press with a fork to seal. Repeat with remaining meat mixture and discos.
- Pour oil into a saucepan and heat over medium-high heat. Fry pastelillos until golden brown and bubbly, about 3 minutes each. Drain on paper towels before serving.

PENZEY'S PIZZA TORTILLAS (QUESADILLAS)
Just got this in Penzey's fall 2008 catalog. I might suggest using a little more ground pork, like 3/4 lb (I used gr. turkey). I didn't have pizza seasoning, so I used Sharon123's Recipe #133784. I also added red pepper and sauteed the onions and pepper first. I completely forgot the olive oil, vinegar, garlic and oregano! And it still came out good. Even in the oven, the center of the tortillas were soft and messy, so be careful, and use both hands.

Steps:
- Preheat oven to 375°F.
- Mix the pork and 1 Tbs. pizza seasoning; cook over med-high heat until crispy brown and drain on paper toweling.
- Chop the onion, tomatoes and jalapeno peppers; toss with olive oil, vinegar, garlic and oregano and let stand at least 10 minutes for flavor to develop.
- To prepare, lay 4 tortillas out on baking sheets (2 per sheet), sprinkle evenly with cooked sausage, then add vegetable mix, top with shredded cheese, and sprinkle on the remaining pizza seasoning.
- Don't pile up too much cheese in the center or it won't melt properly.
- Top with another tortilla and bake for 5-8 minutes, until the tortillas start to brown. (I went 12 minutes and they weren't browned yet - use your best judgment.).
- To do in the microwave: Place 1 finished tortilla in the microwave for 1 minute, on high, until the cheese is buvbbly and melted.
- While hot, remove from the pans and slice itno wedges.
- Serves 2 if for a meal.

- In a small saucepan, cook spaghetti sauce over medium-low heat for 3-4 minutes or until heated through. , Meanwhile, spread butter over one side of each tortilla.
