- Bring 1/4 cup each honey, fresh mint and water to a boil, stirring. Off the heat, add 1 black tea bag and steep 30 minutes. Strain and chill. For each drink, shake 2 1/4 ounces bourbon, 1 ounce lemon juice and 1 tablespoon tea syrup in a shaker with ice; serve over ice and top with seltzer. Garnish with lemon and mint.
CRUISING DOWN COLLINS
Steps:
- For the cupcakes: Preheat the oven to 350 degrees F. Line a standard muffin pan with 12 cupcake liners.
- In the bowl of an electric mixer fitted with the paddle attachment, combine the butter and granulated sugar. Cream on high speed until the butter is light and fluffy, about 6 minutes. Sift together the flour, baking powder and salt. Set aside.
- Combine the coconut milk, whole eggs, egg whites and vanilla extract. Alternately add the flour mixture and the coconut milk mixture to the creamed butter in three stages, allowing the batter to mix for 30 seconds after adding the dry or wet ingredients. Fold in the desiccated coconut. Fill the cupcake liners three-quarters full with batter and bake until golden brown and baked through, about 25 minutes.
- For the dark rum syrup: Bring the granulated sugar and 1 ounce water to a gentle simmer. Remove from the heat and stir in the dark rum. Liberally douse the baked cupcakes with syrup immediately upon removing the cupcakes from the oven. Cool the cupcakes completely.
- For the pineapple filling: Preheat the oven to 350 degrees F. Sprinkle the brown sugar into the bottom of an 8-inch square baking dish. Drizzle the honey and sprinkle the cinnamon on top of the brown sugar. Peel, core and small dice the pineapple. Evenly distribute the pineapple over the brown sugar. Wrap the baking dish with aluminum foil and bake for 15 minutes. Remove from the oven, remove the foil and stir the pineapple and liquefied sugar. Replace the foil and bake the pineapple for another 15 minutes. Remove from the oven, remove the foil and stir the pineapple and liquefied sugar. Bake the pineapple, uncovered, for another 15 minutes. Remove from the oven and allow to cool completely.
- For the tangelo cream cheese icing: In the bowl of an electric mixer fitted with a paddle, beat the butter until light and fluffy on medium-high speed. Add the cream cheese and mix on medium-high speed until well combined and lump free. Scrape down the sides of the mixer bowl and add the powdered sugar. Stir on low speed until well combined. Add the vanilla extract and tangelo paste and beat on medium-high speed for 2 minutes. Place in a pastry bag fitted with a large round tip.
- To assemble: Using an apple corer, remove the center core of the baked cupcakes and fill with oven roasted pineapple. Pipe tangelo cream cheese icing generously on top of the cupcakes. Roll the cupcake icing in toasted desiccated coconut, and garnish with a mandarin orange segment and rolled fondant street sign.
TOM COLLINS WITH BLACK PEPPER AND CHERRIES

- Add the cherries, sugar, peppercorns and 1 cup water to a small saucepan. Bring to a boil, then allow that to cook until syrupy and glazed, 10 to 15 minutes. Let come to room temperature. Store any leftovers in the refrigerator for up to 2 weeks.
- Combine some ice, the gin, lemon juice, a couple dashes of bitters and 2 ounces of the cherry-pepper syrup in a large cocktail shaker. Shake vigorously and pour over ice-filled Tom Collins glasses. Top each glass with some club soda. Garnish with the cherries and a crack of black pepper.
PAN-ROASTED TURCHETTA

- In a mortar and pestle, combine 2 tablespoons olive oil, garlic, sage, fennel seeds, thyme, rosemary, 1 tablespoon black pepper, chile flakes and 2 teaspoons salt. Grind and pound the mixture into a smooth paste. Place the turkey breast skin side down on a clean flat surface. With a sharp knife, butterfly the turkey by cutting down the long side of the breast so it can open up like a book to create a large, flat rectangle of even thickness. Score the flesh lightly in a cross-hatch pattern, being careful not to cut too deeply into the flesh. Season the turkey with salt and black pepper. Rub the herb-spice paste into all the cuts on the surface of the turkey breast. Roll the butterflied breast together tightly starting with the side that does not have skin underneath it (that way there is skin on the outer layers when rolling it up). Form the turkey into a cylinder and secure with butcher¿s twine. Tie the roll every 1 1/2 inches, then place in the refrigerator for 4 hours uncovered; this will help the turkey firm up and allows the salt to do a short dry cure on the meat.
- Preheat the oven to 350 degrees F.
- Remove the turchetta from the refrigerator and bring to room temperature, about 30 minutes. Brush the turchetta with olive oil and season with salt and black pepper. In a cast-iron skillet over medium-high heat, brown the turchetta, 2 to 3 minutes per side. Arrange the turchetta skin side up and place the whole pan into the oven and cook until the internal temperature reaches 150 degrees F (carryover cooking will increase the temperature as the turchetta rests), about 1 hour 30 minutes. Remove from the oven, place on a large plate, tent with foil and rest 15 to 20 minutes. Add the chicken stock to the reserved juices in the pan and stir to combine. Keep warm.
- To serve the turchetta, remove the string and use a sharp carving knife to slice it into 1-inch-thick medallions. Shingle the slices on a large serving platter, spoon cooking juice over the turchetta, and serve immediately.

- Wash jars and screw bands in hot soapy water. Rinse well. Place jars, right sides up, on rack in bottom of boiling-water canner. Fill canner with enough warm water so it covers tops of jars by at least 1 inch. Bring water to boil; boil jars 10 min. Reduce heat to simmer. Leave jars in hot water until ready to be filled.
- Place new lids in medium saucepan filled with water; bring water to boil. Turn off heat. Let lids stand in water until ready to be used.
- Place peaches and peppers in 6- or 8-qt. saucepot. Add vinegar. Stir in pectin. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly.
- Stir in sugar. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
- Remove jars from water; drain well. Immediately ladle fruit mixture into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly. Place jars on rack, then lower into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover canner; bring water to gentle boil. Process 10 min. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing centers of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)

- Preheat oven to 375 degrees F (190 degrees C). Pour 2 teaspoons melted butter into the bottoms of two 6-ounce glass or ceramic ramekins.
- Combine self-rising flour with 1/2 cup sugar in a bowl; whisk in milk to make a smooth batter. Whisk Parmigiano-Reggiano cheese and black pepper into the batter; divide equally between the prepared ramekins.
- Place peach slices into a bowl and top with 2 tablespoons sugar and basil. Drizzle with balsamic vinegar and water; mix. Allow peaches to rest and let sugar draw out the moisture, about 10 minutes. Divide sliced peaches and their juice over the batter.
