PEPPY PIZZA PIES

Steps:
- 1. For the biscuits: whisk together the dry ingredients. Add the butter and shortening, and with your fingers, munch it in the flour until its nicely disbursed. Add the buttermilk and mix with spoon until just combined. Turn out on a floured surface. Turn a few times, kneading lightly.
- 2. Roll out to a 1/4 inch round. Using a cookie cutter, cut out twelve circles. Oil a 12 cup cupcake pan and place a circle in each, pressing down lightly.
- 3. Saute the onions, green peppers and mushrooms in a bit of oil until mostly done.
- 4. Place a tsp of sauce in the center of each dough circle. Place one pepperoni slice on top of each. Top with a tsp of the toppings.Finish with a tablespoon of shredded mozzarella.
- 5. Place in a preheated 375 oven for about 15 minutes or until the cheese has melted and the rims of the biscuits are lightly browned.
- 6. Obviously the toppings are up to you. You could also do a mexican flavored filling. Or use sausage instead of pepperoni. Easy to double or triple of course if you are having a crowd.

Steps:
- Heat the oven to 400 degrees F.
- Mix the meats, bread crumbs, egg, oregano leaves, salt and half of the tomato sauce.
- Press the mixture evenly against the bottom and sides of an ungreased 10-inch pie pan.
- Sprinkle the mushrooms and olives in the meat line pan then pour the remaining tomato sauce over the vegetables.
- Bake uncovered for 25 minutes.
- The pepperoni gives a red-flecked appearance to the meat.
- Sprinkle the pie with the shredded cheese and bake an additional 5 minutes.
- Cool for 5 minutes then cut into 6 wedges.
- NOTE: If a 10-inch pie pan is not available, use a 9-inch one but put a pan under it to catch the run off of juices.
- Also you can use an 8 oz can of cut green beans or whole kernel corn in place of the mushrooms if desired.

Steps:
- Preheat oven to 375.
- Lightly grease/spray a pie dish.
- Unroll crescent dough and scatter triangles in the pie dish. Spread dough around bottom and halfway up the sides with fingers and press seems together to form a crust in the pie plate; set aside.
- In a skillet, brown the sausage with the garlic, onions, and green pepper. Cook, breaking up sausage with a spatula until no longer pink. Drain off fat.
- Place cooked, drained sausage mixture over crescent dough crust.
- Top with the drained mushrooms.
- Evenly pour the tomato sauce over top.
- Sprinkle with the cheese.
- In a small bowl, whisk together the milk, eggs, oregano, basil and salt (to taste). Evenly pour over cheese.
- Bake at 375 for 35-40 minutes or until set.

- In a large skillet heat 2 T.
- oil over medium high heat, add the onions and saute for 8 min.
- Remove to a large bowl and salt and pepper them Same skillet add 1 t.
- oil and saute the mushrooms and peppers-remove to the same bowl and salt and pepper them.
- Add 2 t.
- to the skillet and saute the tomatoes, garlic, thyme, oregano.
- Remove to bowl and add sauce.
- Fold in the salami and cool.
- Place half of this mixture on the bottom of shell-then half the cheese-remaining mixture-remaining cheese-sprinkle black olives on top.
- Bake in a 350 oven for 25-30 minutes.
- Let stand at 15 minutes before cutting.
- Serve hot.
ST. LOUIS-STYLE PIZZA
St. Louis-style pizza has a super thin crust topped with pizza sauce, provel cheese and Italian seasoning. It's one of the quickest homemade pizzas you can make being the crust doesn't have yeast in it and it takes all of 12 minutes to bake. If you have a pizza craving at six you can be eating a fresh, hot square of pizza by six-thirty. Faster than take-out. The crust is made of self-rising flour, olive oil and water. It comes together fast and is easy to roll out. If you bake your pizza on a pizza stone it will be crispier than if you bake it on a baking sheet. The baking sheet gives the crust a little bit of chewiness. I like to sub 1/2 cup whole wheat flour to make it just a little healthier. Steps:
- Preheat oven to 425°F and lightly grease two 12" round pizza pans, or a couple of large baking sheets.
- Make the crust:
- Mix the flour, oil, and water together - the mixture will be shaggy. Use your hands to gather it together and form into a ball. Divide it in two and form each half into a disk the rounder the better.
- Cover with saran wrap and allow to rest 10 minutes to make for easier rolling - skip this step if you're in a hurry.
- Grease a piece of parchment or wax paper about 12" square and set a circle of dough in the middle. Cover with another lightly greased piece. Use a rolling pin to roll the dough very thin - 1/8 inch or less.
- Place the dough on the prepared pans. Top each pizza with 1/3 cup of the sauce.
- Mix the cheeses together and sprinkle 1/2 over top of each then season with Italian herbs or pizza seasoning.
- Bake the pizzas for 9 to 12 minutes or until the cheese is melted with a few golden brown spots and the edges/bottom of the crust are golden brown.
- Remove the pizzas from the oven and let set 5 minutes. Transfer to a cutting board, cut into squares, sprinkle over chopped parsley and serve immediately.

PEPPY PIZZA PIES
Steps:
- 1. Brown ground beef and drain.
- 2. Heat oven to 400.
- 3. Lightly grease cookie sheet.
- 4. Seperate dough into 10 biscuits.
- 5. Press or roll each to 5\" circle forming 1/4 inch rim around outside edge.
- 6. Spread 2 tablespoons sauce just to edges of pizza; sprinkle each with small amount of oregano.
- 7. Top with pepperoni, ground beef and cheeses.
- 8. Bake at 400 from 12-15 minutes until crust is golden brown and cheese is melted.
- 9. Remove from cookie sheet.
- 10. Refrigerate leftovers.
