- Preheat oven to 375°. Unroll both tubes of crescent dough and cut each into 4 rectangles., In a large bowl, combine spinach, chicken, cheese and pesto; spoon 3/4 cup in the center of 4 of the rectangles. Top with remaining rectangles; pinch seams to seal. Place on greased baking sheets; cut 3 slits in top of each turnover. Bake 18-22 minutes or until golden brown. Freeze option: Freeze cooled turnovers in an airtight freezer container. To use, reheat turnovers on a greased baking sheet in a preheated 375° oven until heated through.

CREAMY PESTO CHICKEN WITH ROASTED TOMATOES

- Heat oven to 200C/fan 180C/gas 6. Use a small sharp knife to make a slit along the side of each chicken breast to form a pocket. Mix together the pesto and mascarpone, then carefully spoon a quarter of the mixture into each chicken breast and smooth over the opening to seal.
- Brush a little oil, about 1 tsp, all over each chicken breast and season well. Tip the breadcrumbs onto a large plate and season. Place each breast on the plate and press all over with the breadcrumbs. Place in a lightly oiled shallow baking dish along with the tomatoes (kept together on the vine in a couple of bunches). Drizzle over the remaining oil.
- Cook in the oven for 20-25 mins until the chicken starts to turn golden and is cooked through. Scatter over the pine nuts and cook for 2 mins more. Sprinkle with basil leaves and serve with new potatoes or crusty bread.

- For pesto, combine the first six ingredients in a blender; cover and process until blended. Flatten chicken to 1/4-in. thickness; sprinkle with salt and pepper. , Spread each with 2 tablespoons pesto to within 1/2 in. of the edges. - First, prepare the spinach walnut pesto. Combine the spinach, garlic, walnuts, and parmesan in the bowl of a food processor. Run it for 30 seconds until the mixture becomes well ground and melded. Let it continue to run as you slowly pour in the olive oil until it is a gorgeous pesto sauce. Remove the blade and set the sauce aside.
- Heat a large cast iron skillet over medium high heat. Add the sun dried tomatoes and mushrooms. The oily tomatoes will naturally lubricate the pan! Let the veggies soften and get fragrant for a few minutes. Then add the chicken and let it cook through for about 6-8 minutes. Season with the salt and dried basil. Once the chicken is cooked through, stir in the pesto sauce to finish the filling, letting it bubble for a minute. Take the pan off of the heat and set it aside.
- Pre-heat the oven to 350 and line two baking sheets with silicone mats or parchment paper. Take the first sheet of puff pastry and cut it in half down its length to get two crusts. Scoop a very generous spoonful of the filling on one half of the first puff pastry sheet half. Add a slice of the smoked mozzarella on top of the filling, then bring the other half over to enclose it. Pinch the edges together firmly. Press down with a fork around the edges to finish the first turnover.
- Repeat the process with the next 7 halves of puff pastry sheets to make 8 turnovers total. Transfer 4 turnovers to each of the lined sheet trays. In a bowl, whisk the egg and water together to make an egg wash. Brush each turnover with the egg wash, then get the two trays into the oven to bake for about 20 minutes.
