SPICY PIMENTO CHEESE SPREAD

Pimento cheese spread definitely qualifies as comfort food. Mine is an update with ingredients like good sharp Cheddar, pickled jalapeños, and Sriracha. This recipe is inspired by the pimento cheese from a Brooklyn cheese shop that I love called Stinky (what a great name!).

Spicy Pimento Cheese Spread image

Steps:

  • In a large bowl, combine the cream cheese, mayonnaise, onion, garlic, celery seed, and 1/2 teaspoon salt with a wooden spoon. Add the jalapeños, scallions, red peppers, Cheddar, and Sriracha and combine well. Taste for seasonings and serve with crackers, corn chips, and/or crudités.

8 ounces cream cheese, at room temperature
3/4 cup good mayonnaise, such as Hellmann's
1 1/2 teaspoons granulated onion (not onion powder)
2 large garlic cloves, grated (see Cook's Note)
1 teaspoon whole celery seed
Kosher salt
3/4 cup canned pickled jalapeño peppers, drained and chopped
1/2 cup chopped scallions, white and green parts (3 to 4 scallions)
1/2 cup chopped roasted red peppers, drained (4 ounces)
4 cups grated sharp white Cheddar, such as 2-year aged Grafton (10 ounces)

Steps:

  • In a medium bowl, combine the mayonnaise, sage, lemon juice, mustard, cayenne, and Worcestershire sauce with a rubber spatula.
  • Add the two cheeses and pimientos, blending thoroughly to combine. Season with salt, pepper, and hot sauce. Refrigerate until ready to use. Spread between 2 slices of bread.
  • In a food processor fitted with the metal blade, a blender, or the jar of mayonnaise maker, combine the yolks, lemon juice, vinegar, mustard, salt, sugar, and cayenne. Pulse several times to blend.
  • With the processor running at high speed, or while quickly dashing the plunger of a mayonnaise maker, very slowly drizzle in the oil, allowing it to fully integrate as added until all the oil has been incorporated.

When I was growing up, we used to visit my Grandparents, Odie and Grandpa, every summer in Bristol, VA. She made this wonderful pimento cheese spread. In those days before food processors, she used a meat grinder. Which is how I'm posting this recipe. I process this the same way using my Kitchenaid w/ attachments or sometimes I just give the cheese and pimentos a few zaps in the processor. This makes lovely tea sandwiches using whole wheat or white bread with the crusts removed and cut in quarters. This also freezes well.

Steps:

  • Chop 1 pound sharp cheddar cheese in very small pieces.
  • Add 1 (4 ounce) jar of pimentos.
  • Chop all in meat grinder.
  • Pour dressing over cheese, mix well, and refrigerate for a few hours.
  • To make dressing:.
  • Lightly beat the egg.
  • Mix egg, milk, sugar, vinegar, salt, flour, and pepper in a saucepan.

I have tasted a lot of different brands of pimento cheese spreads & some homemade but, I still prefer my recipe. I have been making this recipe for over 20 years and it always seems to be a favorite with my family & friends, asked for often. It takes a bit of time, but totally worth it. And though it reads like it will be hard, it's not. I have detailed the steps that I use to make it easier.

Homemade Pimento Cheese Spread image

Steps:

  • First thing to do is boil the eggs and drain the pimentoes, set aside.
  • While the eggs are boiling, get a nice large bowl out with a tight lid.
  • Once eggs are cooling in cold water, get out small saucepan and mix, beaten egg, vinegar, & sugar. You will cook this on med. heat until thick. It will smell at first and then thicken quickly. Once done, place half into large bowl and set the rest aside.
  • Once boiled eggs are cool, peel and chop fine. I use a processor but watch closely so they don't over-blend to mush. You want it to be a slight bit chunky. Add half to the bowl, don't mix.
  • In a microwave safe dish, place chunks of half of the Velveeta around the outer part of the bowl and melt in microwave stirring once or twice until melted, but not burnt. It's okay not to melt 100%, you can stir it and the heat alone will melt the rest. Scoop into the bowl and stir slightly. Be sure to get the sauce underneath into the cheese.
  • Add the remaining eggs, don't mix.
  • Melt the other half of the Velveeta. Add to bowl.
  • Add remaining sauce and pimentoes, mix well.
  • Once all is together add the mayo or salad dressing. Mix in well.
  • If it hasn't cooled a bit by now, let cool enough to refrigerate.
  • Don't worry if it gets bubbles or gets a little moisture on top of the spread, this is normal. Just re-stir if needed.
  • The sauce that you have added will keep this spread "spreadable" the entire time you have it.
  • Enjoy on crackers or celery.
  • NOTE: If you need to cut this recipe in half, use 3 hard boiled eggs. It's best to have a bit extra. But, make all the sauce and use half. Throw the rest away. It is much easier to divide the sauce once it's made.
