CELERY LOGS WITH PIMIENTO CHEESE

Celery Logs with Pimiento Cheese image

Steps:

  • Combine the cream cheese, mayonnaise, Dijon, adobo and black pepper in the bowl of an electric mixer and mix until totally combined.
  • Add the Cheddar and Monterey Jack and mix gently until combined. Using a rubber spatula, scrape down the sides of the bowl to ensure all the ingredients are mixed together.
  • Chop 1 tablespoon of the dill. Add the chopped dill and pimientos to the mixture, then season with salt and mix. Place into a container with a tightly fitting lid and refrigerate until firm, at least 2 hours.
  • Mound the pimiento cheese into the celery segments. Garnish to your liking with raisins, sriracha, walnuts, cranberries and dill fronds. Serve immediately or return to the refrigerator until ready to serve.

8 ounces cream cheese
1 cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons adobo sauce from canned chipotles in adobo
1 teaspoon freshly ground black pepper
1 pound sharp Cheddar, grated
1 pound Monterey Jack cheese, grated
2 tablespoons fresh dill fronds
Two 4-ounce jars diced pimientos, drained
1 teaspoon kosher salt
24 celery stalks, cut into 3-inch pieces
Garnish suggestions: raisins, sriracha, walnuts, cranberries

Steps:

  • Mix together all the ingredients except for the cayenne. Season to taste with cayenne.
  • *Pimiento cheese is a staple of picnics and lunches throughout the South. It is spread on sandwiches, used as dip, and stuffed into celery ribs.
  • Put mustard, salt and egg in a blender and blend for about 20 seconds. Add the oil very slowly, in droplets, and blend until all of the oil has been bound with the egg mixture and the mayonnaise is thick and creamy. Add the lemon juice and blend briefly to incorporate.

1/2 pound sharp cheddar cheese, grated (about 3 cups loosely packed)
1/2 cup homemade blender mayonnaise, recipe follows
1/4 cup (1 small jar) sliced pimientos with their juice or 1/4 cup chopped roasted red bell peppers
1/2 small onion, grated (about 1 tablespoon)
Cayenne pepper
1/2 teaspoon dry mustard or 1 teaspoon prepared
1/4 teaspoon salt
1 large egg
1 cup peanut oil
1 tablespoon fresh lemon juice

Steps:

  • If using, mix hot sauce with cheese and fill each celery stick with mixture and refrigerate til the game.

6 stalks celery, cleaned and cut into 3 inch sections

3 drops hot sauce (optional)
