Sparkling Piña Colada Punch image

Steps:

  • Fill a bundt pan with 5 cups pineapple juice. Place in freezer until solid, about 8 hours or up to overnight.
  • Place the bundt pan in a large bowl of warm water for about 10 seconds to help remove the frozen pineapple juice ring, then add it to a large punch bowl, flat-side up. Fill the punch bowl with the seltzer and the remaining pineapple juice. Scatter the cherries over and around the pineapple juice ice ring. Serve, adding rum to individual cups as desired.

13 cups (1/2 gallon plus 5 cups) pineapple juice, chilled
9 cups (2 quarts plus 1 cup) coconut seltzer (from six 12-ounce cans), chilled
One 6-ounce jar maraschino cherries, strained and stems removed

This recipe came from one of the many recipe sites that I visit, but I'm not sure which one. This would make an excellent punch for all ages, if you do not add the rum. You could also make the base up ahead of time and just add the club soda as needed. I am guessing on the prep time and cook time. Cook time is freezing time.

  • Prepare ice ring in advance.
  • Fill ring mold with water to within 1 inch of top rim; freeze.
  • Arrange pineapple chunks and maraschino cherries on top of ice.
  • Carefully pour small amount of cold water over fruits; freeze.
  • In blender container, combine crushed pineapple and cream of coconut; blend until smooth.
  • In large punch bowl, combine pineapple mixture, pineapple juice and rum, if desired.
  • Just before serving, add club soda and ice ring.

Steps:

  • Place lime pieces in a 12-ounce glass and top with mint leaves and cane sugar. Using a muddler, crush the lime pieces while bruising the mint with the sugar. Fill the glass just below the rim with the ice. Add the mint syrup, coconut milk, pineapple juice, pineapple rum and the coconut rum. Use a shaker to vigorously shake the contents of the glass together for at least 30 seconds. Pour the mojito back in the glass, and top off the glass with seltzer water. Place a sugar cane stick in each glass and garnish with fresh mint leaves. Serve immediately.
  • Place the sugar and the water in a small saucepan. Bring to a gentle boil over medium-low heat, stirring occasionally to help dissolve the sugar. While the syrup heats, rinse the mint leaves to eliminate any dirt. Once the sugar has dissolved, remove the syrup from the heat, and dump the mint leaves into the saucepan. Allow the syrup to cool for at least 1 hour before straining out the mint. Store the syrup in an airtight container and place in the refrigerator until ready to use. Syrup will keep, refrigerated, for several weeks.
