PINEAPPLE CREAM ANGEL FOOD CAKE

Found this on another recipe site, just made a few changes to accomodate my family. The kids love this cake. I love that it has fewer calories and taste great! You could always top with blueberries and strawberries, or even raspberries. Hope you enjoy it.

Pineapple Cream Angel Food Cake image

Steps:

  • 1. Mix pineapple and dry pudding mix in medium bowl with whisk until well blended. Stir in Cool Whip.
  • 2. Cut cake horizontally into 3 layers.
  • 3. Stack cake layers on plate, filling layers and topping with pudding mixture.
  • 4. Refrigerate for at least 1 hour. Top with berries just befor serving.

1 can(s) 20oz crushed pineapple in juice, undrained
1 pkg 1.5oz fat free sugar free instant vanilla pudding
1 c cool whip free or cool whip lite
1 pkg 10oz angel food cake ~round~you can make or use store bought
10 fresh strawberrie

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch pan with vegetable oil spray.
  • In a large bowl, combine cake mix and pineapple (with juice). Mix until well blended.
  • Pour batter into prepared 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 25 minutes or until golden brown. Let cool.
  • Serve with whipped topping

Steps:

  • 1. Pour cake mix into large bowl. Pour crushed pineapple into cake mix and stir gently until just combined. (it will puff up and look frothy)
  • 2. Pour batter into lightly greased 13x9 inch cake pan and bake at 350 degrees for 30 minutes. Serve with dollop of whipped cream or vanilla ice cream. (I'm going to try this with diced canned peaches and maybe cherries too but haven't yet) :)
  • 3. Note: It is not recommended to use a bundt type pan for this cake as it will brown too much on the outside before it cooks in the center.
