Steps:
- Stir together bourbon, chopped mint, and sugar in a small bowl. Let stand 20 minutes (to allow flavors to develop).
- Meanwhile, trim, peel, quarter, and core pineapple, then cut crosswise into 1/8-inch-thick slices and transfer to a bowl. Pour bourbon mixture through a sieve onto pineapple. Add whole mint leaves and gently toss to combine.
JAMIE OLIVER'S PINEAPPLE WITH BASHED-UP MINT SUGAR
I first had this served to me a few years back when Jamie Oliver was just becoming known in the UK. I didn't think it would be good but I found it really tasty and very refreshing. Now I love serving it up to people that haven't tried it. It is best to serve this as soon as possible because it tastes its best when it is fresh and not sitting around.

Steps:
- Core the pineapple and cut it into quarters.
- Thinly slice of bits of the quarters. Make your slices as thin as possible.
- Arrange the slices on a plate in one or two layers. I tend to go for one.
- Put the sugar into a mortar and pestle and then add the mint leaves.
- Jamie then says to 'bash the heck out of it' until the color of the sugar changes to a greenish color. I find it smells really nice at this point.
- Sprinkle the sugar over the top of the pineapple slices and serve.

Found in the *Carnival Creations* cookbook by Cyrus Marfatia (Exec Chef of Carnival Cruise Lines), this untried recipe was described as refreshingly ideal to accompany Cajun pork chops or chicken breasts & my bet is it would also be excellent w/ham. - Grill or broil pineapple till evenly browned & chop into sml cubes.
- In a sml saucepan, heat sugar over med-heat till melted & golden. Then stir in vinegar, lemon juice + mint jelly & simmer briefly.
- Remove from heat, stir in pineapple + chopped mint & allow to fully cool for later use. Voila! All done!

- Puree the pineapple in a blender until smooth. Pour puree through a fine sieve into a bowl; discard solids. Return half the juice to blender; blend with half the ice and sugar. Add half the mint; pulse to combine. Transfer to a pitcher; repeat with remaining ingredients. Stir just before serving; pour into ice-filled glasses. Garnish with mint sprigs, if desired.

- Sprinkle chops on both sides with salt. Warm oil in a large skillet over medium-high heat. Add chops and sear on 1 side until well browned, 3 to 4 minutes. Reduce heat to medium, turn chops and continue to cook until an instant-read thermometer inserted into center of chops reads 140ºF to 145ºF, 4 to 6 minutes longer.
