- In a mixing bowl, combine pineapple w/ juice, sour cream, egg, and butter; blend well.
- In another bowl, combine the remaining ingredients; add to pineapple mixture; stir just until moist.
- Spoon batter into prepared muffin pan, dividing batter evenly.
- Bake for 30-35 minutes or until lightly browned.

- Mix together oat bran through egg subtitute and let sit for a few minutes while you mix the dry ingredients in a separate bowl.
- Add dry to wet and stir just to blend.
- Fill 12 muffin cups which have been sprayed with nonstick spray and bake at 350 degrees about 20-22 minutes, until toothpick inserted comes out clean.

- Pour boiling water over Quaker bran hot cereal and let sit 5 minutes.
- Add molasses, splenda, butter, eggs, buttermilk, and pineapple. Mix together. I don't use a mixer, I just mix together in a big bowl.
- Add flour, flax, soda, salt, All Bran, and nuts and mix together.
- Spoon into greased muffin tins (almost full, as these don't rise much).
- Bake at 400 degrees about 15 minutes. Done when top springs back.

- In a large bowl, combine the oat bran, flour, 1/4 cup sugar, baking powder and salt. In another bowl, beat the eggs, applesauce, oil and milk. Stir into dry ingredients just until moistened. Fold in raisins., Fill muffin cups coated with cooking spray three-fourths full. Combine the walnuts, cinnamon and remaining sugar; sprinkle over batter. Bake at 400° for 16-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing form pan to a wire rack. Serve warm.

This is not OATMEAL, but oat BRAN muffins. I have made these for about five years now, and I really love them. They are great made with cinnamon or cranberry applesauce, as well as plain applesauce. My daughter loves them and I hope you will enjoy them, too!

- Preheat oven to 400 degrees F (205 degrees C). Line or grease 12 muffin cups.
- Blend together brown sugar, oat bran, flour, baking powder, soda, and salt. Add eggs, chilled applesauce, and vegetable oil. Mix until well-blended. Spoon batter into muffin cups. Let stand 10 minutes.
- Bake at 400 degrees F (205 degrees C) for 15 minutes or until golden brown.
- VARIATIONS: Add 1 cup plumped raisins, with a little bit of raisin water (approximately 2 tablespoons). Or, before baking, sprinkle mixture of sugar and cinnamon over the tops of the muffins. Or, add 1 teaspoon cinnamon or nutmeg to flour mixture.

- Preheat oven to 425 degrees.
- In a large bowl combine oat bran, flour, chopped apricots, baking powder, brown sugar (save 2 tbs), and cinnamon.
- Separately beat the egg with 2tbs of sugar until fluffy and light.
- Warm up milk (just until lukewarm) and dissolve honey in it.
- Mix milk, egg, oil and vanilla.
- Blend together with dry ingredients, adding a bit more skim milk if the mixture seems too thick.
- Line a muffin pan with paper baking cups.
- Bake 18 to 20 minutes.
- NOTE: It's almost foolproof, but you can test for doneness with a toothpick if you like: they should be moist but not wet.
- To retain moisture, store in a plastic bag.
- They're best served warm; reheating with the microwave works just fine.

- Make a well in center of mixture.
- Combine pumpkin and next three ingredients; stir well.
