PIPI FRITTERS
This is a recipe I created Easter 2013 which was the highlight of our camping weekend. Absolutely delicious with a cold beer or light Savignon Blanc. I think the non negotiable ingredient is the red onion. I ran out of red onions and used 1/2 a brown onion and the result was not quite so impressive. Quantities are approximate, but the aim is to have a slightly thick, pourable batter consistency.

Steps:
- Put first 6 ingredients into a bowl.
- Stir to mix well.
- Add the milk to achieve desired consistency.
- Add heaped tablespoon lots into frying pan and fry until golden brown. Flip and cook until golden on both sides.
- Serve with a squeeze of lime juice.
- Finger licked good.
- NB: You could use any similar shellfish but the beach we camped at only had pipis.

MUSSEL FRITTERS
I found this recipe on the Geocities Website. Whipped it up for lunch today and these fritters are devine. Light and tasty and they go down a treat. The recipe notes that Basil is the secret ingredient in this recipe.

Steps:
- Lightly steam mussels until they just open.
- Remove beards, take from shell and chop roughly. (Not too fine).
- In a bowl, beat the eggs, Sift in the flour and baking powder and beat with a fork to combine.
- Stir in the mussels, salt, pepper, basil and parsley.
- Melt butter over a medium heat. Drop mixture into butter and fry pancake style until golden brown, then flip and cook until golden on other side.
- Enjoy!
CAULIFLOWER FRITTERS
These cauliflower fritters are easy to make and a different way to have cauliflower. So delicious and tasty. I've made these a number of times for my family and friends.

Steps:
- Process cauliflower in a food processor finely minced; transfer to a large bowl.
- Stir flour, eggs, baking powder, and Italian dressing mix into cauliflower.
- Heat enough olive oil to cover the bottom of a frying pan over medium heat.
- Drop heaping tablespoons of cauliflower mixture into the hot oil; fry until golden brown, about 3 minutes per side.
