Steps:

  • Preheat oven to 350°F.
  • In a large bowl combine, beef, cornflake crumbs, parsley, eggs, soy sauce, pepper, garlic powder, ketchup, and minced onion.
  • Blend well.
  • Form mixture into meatballs.
  • Arrange on a 15 x 10 pan.
  • In a medium saucepan combine cranberry sauce, chili sauce, brown sugar, and lemon juice.
  • Cook over medium head stirring constantly until mixture is smooth and cranberry sauce is melted.
  • Pour over meatballs.
  • Bake uncovered 30 minutes.

1 cup corn flake crumbs
1/3 cup parsley
2 eggs
2 tablespoons soy sauce
1/4 teaspoon pepper
1/2 teaspoon garlic powder
1/3 cup ketchup
2 tablespoons onions, minced
1 (1 lb) can jellied cranberry sauce
12 ounces chili sauce
2 tablespoons brown sugar
1 tablespoon lemon juice

These meatballs, baked in a well-seasoned sauce, are always on the menu for our family's informal Christmas Eve get-togethers. Leftovers-- if there are any-- are a cinch to reheat in a slow cooker.

  • In a saucepan, combine cranberry sauce, chili sauce and lemon juice. Bring to a boil over medium heat; cook and stir until smooth. Set aside. In a bowl, combine the next nine ingredients; add beef and mix well. Shape into 1-in. balls. Place in a greased 13-in. x 9-in. x 2-in. baking dish. Pour sauce over meatballs. Bake, uncovered, at 350 degrees F for 40-50 minutes or until the meatballs are no longer pink and sauce is bubbly.

  • Heat step 2 ingredients in saucepan. Cook until smooth and pour over meatballs.

Steps:

  • Mix together meatball ingredients and lightly shape meatballs into 1" rounds. Brown in 1/4 cup Crisco (they don't have to cook through).
  • Drain meatballs on paper towels.
  • Mix the sauce ingredients together in a large skillet or dutch oven.
  • Add the meatballs (can be frozen at this point) and simmer uncovered for 30 minutes.
  • Serve in a chafing dish.
  • Makes 30 balls.

1 lb ground beef
1/2 cup dry breadcrumbs
1/4 cup milk
1 egg
1/8 teaspoon pepper
salt, to taste
1 teaspoon Worcestershire sauce
1 tablespoon fresh parsley

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix ground beef, bread crumbs, parsley, eggs, grated onion, soy sauce, and garlic powder in a bowl until thoroughly combined. Pinch off about 2 teaspoons of meat mixture per meatball and roll into small meatballs. Arrange meatballs in a large, deep baking dish.
  • Bake in the preheated oven until meatballs are browned, about 25 minutes. Drain excess grease.
  • Combine jellied cranberry sauce, ketchup, brown sugar, and lemon juice in a saucepan and place over medium heat. Stir the sauce until cranberry sauce has melted and brown sugar has dissolved.
  • Pour the sauce over meatballs and bake until sauce forms a glaze and meatballs are no longer pink inside, 25 to 30 more minutes.

Steps:

  • Preheat oven to 375 degrees F. Line a shallow baking pan with foil. Place a rack in the pan.
  • Combine ground beef, Italian sausage, salt, pepper, oregano, basil, pressed garlic, egg, tomato paste, Worcestershire sauce, Parmesan cheese and cream. Do not over-handle or meatballs will become tough.
  • Form into 1-inch meatballs and place on racks so they are not touching each other. Bake 15 to 20 minutes until cooked through.
