PIQUANT GREEN BEANS

One of my favorite ways to have green beans. I could eat the whole pan and forget the rest of dinner! I really could!

Piquant Green Beans image

Steps:

  • Prepare the green beans for cooking by rinsing and removing tips.
  • Steam green beans 15-20 minutes or until tender.
  • In a large skillet heat fat or oil and cook onion until caramelized; add garlic.
  • Add green beans to skillet and stir thoroughly.
  • In a small bowl mix together vinegar and sugar and pour over beans, stirring well.
  • Season to taste with salt and pepper.
  • Mix in bacon crumbles.
  • Serve.

1 lb fresh stringless green beans
2 teaspoons extra virgin olive oil or 2 teaspoons bacon fat
1 medium onion, sliced
1 teaspoon minced garlic
2 tablespoons apple cider vinegar
2 teaspoons beet sugar (or sugar)
salt, to taste
freshly ground black pepper
6 slices bacon, cooked and crumbled (optional)

Sweet and Hot Quick Pickled Green Beans image

Steps:

  • Place the beans in a heatproof container.
  • In a pot, heat the vinegar and 2 cups water to a simmer. Take off the heat and add the mustard seeds, salt, sugar, red pepper and garlic. Whisk until the salt and sugar dissolve.
  • Pour the liquid over the green beans. Let cool, and then cover and place in the refrigerator. Allow the beans to pickle 24 hours before using. Pickled green beans will keep tightly covered in the refrigerator for up to 1 month.

1 pound green beans, trimmed
2 cups white vinegar
1 tablespoon mustard seeds
1 tablespoon kosher salt
1 tablespoon sugar
1 teaspoon crushed red pepper
2 cloves garlic

  • In a large skillet over medium-low heat, melt the butter. Once it’s completely melted, add the almonds. Cook, stirring constantly with a heatproof spatula or wooden spoon, until the butter has browned and the almonds are beginning to brown, about 7 to 8 minutes. (Your patience will pay off, I promise!)
  • Add the shallot and cook, while stirring constantly, for 1 minute. Stir in the lemon juice and 1 tablespoon water. While stirring, cook until the liquid thickens enough that your spatula leaves an open trail on the pan behind it, about 1 more minute.
  • Use your spatula to scoop all the mixture into a bowl, and set it aside for now. Return the empty skillet to the stovetop, and add the green beans, ½ cup water and ½ teaspoon salt. Cover and cook over medium heat, stirring occasionally, until the beans are nearly tender, about 9 to 10 minutes.
  • Remove the lid and cook over medium-high heat until the liquid evaporates, about 2 to 4 minutes.

  • Fill a large pot with enough water to cover the green beans (about 6-8 quarts). Boil the water on High. Trim the ends of the green beans with a knife or scissors and prep the other ingredients.
  • Once the water is boiling, turn down to Med-High, add the green beans, and cook in a rolling boil for 5 mins. Set a timer so as not to overcook.
  • While the beans are cooking, mix all the other ingredients in a medium bowl. Whisk until the the vinaigrette is thoroughly mixed (~15-30 secs).
  • When the beans cook 5 mins, drain them in a colander and briefly run under cold water to stop the cooking process. Toss the beans in the vinaigrette in large serving bowl or dish.
