IRISH CREAM PISTACHIO PARFAIT
Who knew that pistachio and Irish cream would be such a great flavor combination! This dessert is creamy, flavorful and perfect for St. Patrick's Day.

Steps:
- 1. Pour 1/2 box of pudding into a bowl and add 1/2 cup of milk and 1/2 cup Irish Cream. Whisk for two minutes until thickened.
- 2. Mix the other 1/2 box of pudding with 1 cup of milk and whisk for two minutes until thickened
- 3. Divide the first mixture into 4 serving dishes and add cool whip to each dish. Divide the remaining mixture into 4 servings and spoon over the Cool Whip in each dish. Chill until ready to serve.
PISTACHIO PARFAITS
My daughter made these for me for my birthday. They were great. Since I am diabetic, she used sugar free pudding and cookies.

Steps:
- 1. Preheat oven to 350 degrees.
- 2. Evenly spread the pistachios on a baking sheet.
- 3. Bake for 5 to 10 minutes or until lightly golden brown. Stirring occasionally.
- 4. Prepare the pudding as directed on the package.
- 5. When pistachios have cooled chop them roughly.
- 6. Divide the pudding, shipped topping and pistachios in half.
- 7. Spoon the first half of the pudding into 6 parfait glasses (even;y divided between the glasses)
- 8. Next eveny divide the first half of the whipped topping between the glasses and spoon on top of the pudding.
- 9. Take the first half of the pistachios and evenlt sprinkle them on the whipped topping.
- 10. Repeat the layers.
- 11. Garnish each parfait with a coolie.
- 12. Chill until ready to serve.
RASPBERRY & PISTACHIO PARFAIT
Sweet and nutty, this delicate dessert is ideal for after a big Sunday dinner, serve chilled and covered in blitzed pistachios for some crunch

- Grease a 900g loaf tin with oil, then line with baking parchment. To make the purée, blitz the raspberries to a pulp in a blender, then pass through a fine sieve into a saucepan. Gently reduce the purée on a low heat for 30 mins, stirring occasionally, until the colour has intensified and the purée has reduced to about 200ml. Remove from the heat and leave to cool.
- While the purée cools, put the egg yolks and sugar in a glass bowl and whisk over a pan of simmering water for 10 mins until the eggs are pale, thick and doubled in volume. Set aside.
- Next, put the sugar for the meringue in a saucepan with 2 tbsp water and heat until the syrup reaches 120C on a thermometer. While the sugar is coming up to temperature, use a mixer or electric whisk, to whisk the egg whites on the lowest setting. Once the sugar has reached 120C, carefully pour onto the egg whites and turn the mixer or electric whisk up, continuing to whisk until the whites are cool.
- Next, in a clean bowl, whisk the cream until it has soft peaks. Add the purée and chopped pistachios, then fold in the yolks. Once combined, fold in half the whites. Add the raspberries with the remaining whites, gently fold together, then pour into the lined loaf tin. Put in the freezer overnight.
- The next day, remove the parfait from the tin. Cover it completely in the blitzed pistachios, then place on a tray, cover in cling film and return it to the freezer. When you're ready to serve, slice the parfait and serve with a few fresh raspberries.

Steps:
- Combine cream and chocolate in a medium saucepan, sir over low heat until smooth.
- Beat the eggs, the egg yolks in a small bowl with an electric mixer until thick and creamy; with the motor operating, gradually beat hot chocolate mixture into egg mixture.
- Transfer parfait mixture to a large bowl, cover, refrigerate for 30 minutes, or until mixture thickens slightly.
- Meanwhile. cut 8 30cm squares of baking paper; fold each paper square into a triangle; then roll one point over to meet the centre point.
- Twist the second point over to meet the other two points and form a cone shape.
- Staple or tape the paper cones securely to ensure that they hold their shape. Stand each cone, upright in a tall glass, place glasses on a tray.
- beat the extra cream in a small bowl of an electric mixer until soft peaks form; fold the extra cream, liqueur and nuts into the parfait mixture.
- Divide the mixture between the cones.
- Cover the cones loosely with plastic wrap; freeze; overnight.
- BERRY COMPOTE:.
- Combine all the ingredients in a small saucepan; stir over low heat until all the sugar has dissolved.
- Cool 10 minutes.
- Place the parfaits on individual serving dishes; carefully remove and discard the paper from each.
- Serve with Berry Compote.

YOGURT PARFAITS WITH CHERRIES AND PISTACHIOS
Yogurt parfaits are easy to make, and they make great desserts and snacks.

- Combine the cherries and sugar in a bowl and refrigerate for 6 to 8 hours or overnight. The cherries should be slightly softer and sitting in a syrup.
- Place a strainer over a bowl and drain the cherries. Divide the cherries into two equal portions. Stir the syrup into the yogurt. Add the honey and the almond extract and mix together well.
- Spoon 1/4 cup yogurt into the bottom of each of four 7- to 8-ounce tumblers or parfait glasses. Distribute the first portion of cherries among the glasses. Sprinkle pistachios over the cherries. Repeat the layers but do not sprinkle pistachios over the top until you are ready to serve. Cover and chill for at least 1 hour. Just before serving, sprinkle the remaining chopped pistachios over the top of the parfaits.

- Place the pistachios in a food processor and pulse until they are finely chopped. Add them to the milk and whisk to combine.
- In a large saucepan, whisk the sugar and cornstarch together. Add a small amount of the milk and whisk until smooth. Add the rest of the milk and whisk until combined. Turn the burner to medium heat and cook the pudding until it’s thickened, stirring frequently.
- Place a strainer over a large bowl and pour the hot pudding into the strainer. Using a spatula, press the pudding through the strainer and discard the solids (it’s okay if some of the nutty bits slip through!). Add the butter to the pudding and stir until it melts.
- Divide the pound cake cubes among the serving bowls. Top with the warm pudding. Cover with plastic wrap (the wrap should touch the surface of the pudding to prevent a skin from forming) and chill for an hour or up to one day. Before serving garnish with Cool Whip or whipped cream.
