PIZZA DOUGH FOR PIZZA OR CALZONES (BREAD MACHINE)
A bread machine makes having homemade pizza as easy as using a storebought pizza! I use this for pizzas and calzones. Prep and cook time do not include time in dough cycle. My dough cycle is 1 hour and 30 minutes long. This recipe makes a ton of dough if you like a thinner crust like me, it makes 1 large thick crust pizza, it also makes six 6-inch calzones. It is crispy and flavorful, I like to sub some whole wheat flour for real artisan taste!

Steps:
- Place all ingredients except cornmeal into your bread machine according to your manufacturer's directions. For my bread machine it is in the order listed above.
- Once dough cycle has finished, turn dough out onto a floured surface. Preheat oven to 400°F and roll or stretch dough out into a 12 inch round (medium crust) or several small rounds or a large rectangle. Place pizza on a greased cookie sheet.
- Sprinkle cornmeal over top of dough. Bake pizza for 10 minutes at 400ºF.
- Remove from oven and cover with toppings. Reduce oven temp to 350ºF and bake 10 minutes or until cheese is bubbly and browned.
PERFECT EVERY TIME PIZZA OR CALZONE DOUGH
Ready in a snap and my kids love it! This can be used for pizza dough too. My dear chef friend Darrin Gleason shared this recipe with me over ten years ago while attending college. It has been a go-to recipe for my family for all these years and I thought I should share it with my cooking community.

- Mix 1/2 cup lukewarm water and yeast together in a bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
- Combine 1/2 cup water, olive oil, honey, and salt in a separate bowl; add 1 cup flour and mix well. Mix yeast mixture into flour mixture. Add remaining flour, 1 cup at a time, until dough is well combined.
- Knead dough on a floured work surface until dough is soft, smooth, and elastic, about 8 minutes. Roll dough into 4 calzone shapes.

WORLD'S EASIEST BREAD MACHINE PIZZA DOUGH
Borrowed from a handful of other pizza dough recipes and tweaked to yield a tasty, thick crust using a bread machine. If you use a pizza stone, sprinkle it with cornmeal before placing the pizza on it to help keep it from sticking. Feel free to try different spices if you don't like any of the ones in this recipe.

BREAD MACHINE THIN CRUST PIZZA DOUGH
This is a great easy recipe for anyone to try with just basic ingredients. If you love a good thin crust that still has a nice chew to it, this recipe is for you.

- Pour the warm water into the pan of the bread machine, and add the flour on top of the water. Sprinkle with salt and sugar, and top with the yeast. Set the machine on the dough setting, and push the start button. When the machine signals that the dough is finished, transfer to a well-floured work surface.
- Preheat oven to 425 degrees F (220 degrees C).
- Roll or stretch the dough out into thin crust about 14 inches across. Leave dough thick at the edge. Place the dough onto a 14-inch pizza baking sheet, and brush the dough with the olive oil.
- Bake in preheated oven for 5 minutes before removing to top with desired ingredients for final baking.

- In bread machine pan, place the first 7 ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1-2 tablespoons water or flour if needed)., In a small skillet, saute the onion, mushrooms and peppers in oil until tender; cool. , When bread machine cycle is completed, turn dough onto a lightly floured surface; divide in half. Let rest for 5 minutes. Roll each portion into a 16x10-in. rectangle; spread with pizza sauce. Top with the onion mixture, pepperoni, pizza cheese and olives. CALZONE (BREAD MACHINE)
You can create your own fillings for this very easy calzone. I don't use the pepperoni, but substitute cooked, chopped spinach. You can also add sauteed onions and peppers, olives, ricotta cheese...etc. I have also made small individual calzones to dip in Marinara Sauce...heaven! Kids love these.

Steps:
- Place water, salt, basil, oregano, garlic powder, bread flour, dry milk, sugar, and yeast in the pan of the bread machine in the order suggested by the manufacturer.
- Select Dough cycle.
- After cycle ends, roll out dough on a lightly floured surface, shaping into a 16 x 10 inch rectangle.
- Transfer to a lightly greased cookie sheet.
- In a small bowl, mix together chopped pepperoni and mozzarella.
- Spoon pizza sauce in a stripe down the center of dough lengthwise; add sausage and cheese filling.
- Make diagonal cuts 1 1/2 inches apart down each side, cutting within a 1/2 inch of the filling.
- Criss cross strips over filling, sealing with water.
- Brush top with melted butter.
- You can just fold over the sides without cutting the strips to make this process easier.
- It will taste just as good, but not look as nice.
- Be sure to seal the edges well.
- Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes.

PIZZA DOUGH FOR CALZONES (OR PIZZA )
This is a really delicious basic pizza dough. The mixture of cornmeal with white, semolina and whole wheat flours gives a great taste and texture. I mostly use it to make my Spinach & Cheese Calzones, but it also works well as a pizza base. If you want more flavor add 2 tsp of oregano.

- In a large mixing bowl, mix together the white, semolina, whole wheat flour, 1/4 cup of the cornmeal, salt & yeast.
- Make a well in the center and pour in the water and oil. Mix with the paddle of an electric mixer for about 5 minutes until dough forms. Or you can mix with a wooden spoon for 10 minutes.
- Knead by hand on lightly floured surface for 10 minutes, or in mixer bowl with a dough hook for 5 minutes. Alternatively, if you have a food processor you can mix the dry ingredients in the work bowl and then, with the motor running, add the water and oil. Process for about 45 seconds.
- Lightly spray a mixing bowl and a baking sheet with vegetable spray. Place the dough in the bowl and cover with a towel. Let rise at room temperature for about 30 minutes until dough has doubled in size.
- Punch down the dough. Then sprinkle the baking sheet with 2 tsp of cornmeal. Roll and stretch the dough on the baking sheet to form a 14-inch circle. After adding toppings, bake in a 450-degree oven until crisp, about 10-12 minutes.
- If you're making my Spinach & Cheese calzones follow this recipe until you punch down the dough. Then refer to the calzone recipe.

- To Make Dough: Place water, yeast, sugar, flour, salt and powdered milk in the pan of the bread machine, in the order suggested by the manufacturer. Select Dough cycle. After cycle is completed, roll out dough on a lightly floured surface.
- Meanwhile, brown sausage for about 8 to 10 minutes in a large skillet over medium heat. Drain excess fat and reserve.
- Preheat oven to 350 degrees F (175 degrees C).
- Shape dough into a 16 inch by 10 inch rectangle. Transfer to a lightly greased cookie sheet, and spoon pizza sauce lengthwise down the center of the dough, followed by the browned sausage and the cheese.
