PLAKI (BAKED SNAPPER WITH POTATOES)
A Greek way to prepare fish. It's very tasty and is a nice alternative to frying. Flounder, sole, porgy, any fish will basically do---I guess.

Steps:
- After your fish is totally cleaned, place it in a large baking pan and score it with a knife on each side, making three lines or incisions on its body. You can make it fancy and do another 3 lines the cross way if you're in a Jaques Pépin kinda mood.
- Season it generously with salt, pepper, and oregano, especially inside the gutted slit and on the side incisions.
- You may also add some garlic or slices in the belly and the incisions.
- Place the fish exactly in the middle of the pan. Around it, add the potatoes,onions and tomatoes in a row, alternating one after the other. Season those as well, with salt, pepper, parsley and lots of oregano.
- Place any leftovers inside the belly of the fish.
- Drizzle the food with the juice of one and a half lemons.
- Add the olive oil, evenly coating all ingredients.
- Add 1/2 cup water.
- Place in a 375 to 400 degree oven and cook until potatoes are tender for about 45 minutes to an hour. You may even foil it first for about half the time.
- The sauce shouldn't be too thick or too watery.
- The fish and potatoes should be a bit crisp and brown on their surfaces.
- Add more lemon if desired.
FISH PLAKI
Plaki is a Greek method of cooking fish with vegetables. I first had this at a little neighborhood Greek restaurant here in my hometown. It was just around the corner from where I worked, so it was a popular lunch spot. Occasionally we were lucky enough to find this on their lunch specials menu....Lucky us! I recommend using a firm white fish....I use amberjack, grouper, or snapper. If you cut all the bloody pieces out of the fillet, you won't get a fishy taste. The fresher the fish the better! Prep time does not include the soaking/marinating time for frozen fish.

Steps:
- If your fish isn't fresh, either soak it in milk for an hour or brush with 1 tbsp water mixed with 1 tbsp lemon juice and let sit for 30 minutes to help remove the fishy taste associated with frozen fish.
- Saute sliced onion in olive oil in a large skillet over medium heat, stirring constantly, until tender. Add tomato and next 5 ingredients; cook, stirring constantly, until the liquid evaporates. Remove from the heat and set aside.
- Pat the fish fillets dry. Place them in a 13X9X2 inch baking dish; sprinkle with oregano, salt and pepper. Spread the reserved vegetable mixture over the fish; top with lemon slices. Pour the wine and lemon juice over the vegetable mixture; sprinkle with breadcrumbs.
- Bake, uncovered, at 350 degrees for 35 minutes or until the fish flakes easily when tested with a fork. Cooking time depends on the thickness of the fillets and the heat of your oven! Remove and discard the bay leaf.

Steps:
- Preheat the oven to 450°F.
- Slightly overlap the sliced potatoes in a 9X13 metal pan.
- Mix oil, garlic, oregano, 1 tsp salt and the crushed red pepper in a bowl.
- Pour over potatoes.
- Pour wine and 1/4 c water over the potatoes.
- Cover with aluminum foil and bake for 20 minutes.
- Uncover and bake until the potatoes are tender, about another 35 minutes.
- Place fish on top of potatoes.
- Drizzle with remaining 1/4 c oil.
- Sprinkle with salt, pepper and 2 tbsp parsley.
- Bake uncovered until fish is opaque in the center, about 18 minutes.
- Sprinkle with the remaining 2 tbsp parsley and serve.

- Preheat oven to 350°.
- Heat 1 tablespoon oil in a large nonstick skillet over medium heat.
- Add onion; sauté 7 minutes or until tender.
- Add chopped tomato and next 5 ingredients; reduce heat and simmer, uncovered, 15 minutes or until liquid evaporates, stirring occasionally.
- Set aside.
- Arrange fillets in a 13x9-inch baking dish coated with cooking spray.
- Sprinkle lemon juice and 1/2 teaspoon salt over fillets and top with onion mixture.
- Place potato wedges over onion mixture and drizzle with 1 tablespoon oil and 1/4 teaspoon salt.
- Top with tomato slices and bell pepper rings.
- Bake, uncovered, at 350° for 1 hour and 20 minutes or until potatoes are tender.
- Place 1 fillet and 6 potato wedges on each of 8 plates.
- Divide onion mixture evenly among each serving and top each serving with 1 tomato slice and 1 bell pepper ring.
BAKED SNAPPER WITH HARISSA, NEW POTATOES, AND SPRING ONIONS

- Place an oven rack in upper third of oven; preheat to 425°F. Combine oil and harissa in a small bowl; adjust flavor with more harissa if needed (spiciness and flavor vary from brand to brand).
- Toss onions and potatoes with half of harissa mixture in a large baking dish; season with salt and pepper, then add 1/4 cup water. Roast, tossing once, until potatoes are fork-tender, 20-25 minutes. Meanwhile, score skin side of fillets about 1/4" deep; season with salt and pepper. Rub remaining harissa mixture all over fish, getting into the score marks.
- Remove onions and potatoes from oven and heat broiler. Place fish skin side up on top of vegetables and broil until onions and potatoes are tender and fish is cooked through and starting to brown on top, 8-10 minutes.
- Serve fish and vegetables with lemon wedges for squeezing over.
PSARI PLAKI
Steps:
- Arrange the fish in a baking dish. Season with salt and pepper and sprinkle with lemon juice.
- Fry the onions in 2 tablespoons of the oil until golden. Add the garlic, and as soon as it begins to color, add the tomatoes and the wine. Season with salt and pepper and simmer for about 20 minutes. Add the parsley, and pour over the fish.
- Sprinkle on the remaining oil and bake in a preheated 325°F oven for 20 minutes, or until the fish is opaque right through and flakes when you pierce it with a knife.
- Variations
- Bake a large whole fish such as bass, red snapper, gray mullet, bluefish, or pompano in the same way. Bake at 425°F for about 30 minutes, basting with the sauce occasionally.
- Add sliced or cubed potatoes to the tomato sauce.
BAKED SNAPPER WITH CITRUS AND GINGER
Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Make three slashes across each side of the fish using a sharp knife. This will keep the fish from curling as it cooks. Place the fish in a shallow baking dish or roasting pan. Cover each side with fresh ginger, then green onions and tomatoes. Season with sea salt. Slice half of the lime and place the slices on top of the fish. Drizzle with the soy sauce, and squeeze the other half of the lime over the fish. Cut the lemon in half and set in the pan. Cover the whole dish with aluminum foil.
- Bake the fish until the flesh is opaque and can be flaked with a fork, about 20 minutes. Squeeze the baked lemon halves over the fish before serving. Serve the fillet on the top side first, then gently lift out the backbone, while helping the flesh off the bones with your knife. It's much easier than trying to turn the fish over.

- over medium heat Pour oil into a medium size pot and sautee the onion until they are clear in apperance. Add the garlic and continue to sautee for another 5 minute.
- next add the tomato sauce,potatoes, water, parsley and black pepper.
- mix well cover and stir occasionally very gently until potatoes are tender.
- This recipe is even better if you cook it a day ahead. I have found that when reheating the potates the next day the flavor is richer!
