- Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper liners.
- Combine sugar, pureed plums, pecans, honey, eggs, vanilla extract, and cinnamon in a blender; blend until smooth. Pour batter into a large bowl and add baking mix; stir well. Spoon into the prepared muffin tin.
- Bake in the preheated oven until tops spring back when lightly pressed, about 25 minutes. Cool in the tin for 5 minutes. Transfer to a wire rack to cool completely.

PLUM BREAD
This is called a bread, but tastes more like a cake. I make this mostly during the holidays. The spices in this cake just lend themselves to eggnog and Christmas smells. The recipe will make 1 bundt cake, 4 small loaves, or 2 medium loaves.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a bundt pan or loaf pans.
- In a large bowl, mix together vegetable oil, white sugar, eggs, plum baby food, and food coloring. In a separate bowl, mix together flour, cloves, cinnamon, nutmeg, salt, baking soda, and nuts.
- Mix wet and dry ingredients together. Transfer batter to prepared pan(s).
- Bake in the preheated oven for 50-60 minutes or until a tester comes out clean. (Smaller loaf pans will take less time.)
- Remove from oven to cool 10 minutes in pan. Remove and place on cooling rack.
- While the cake is cooling, combine confectioners' sugar and lemon juice. Brush over top while cake is still hot.

- Pre-heat oven to gas 6.
- Line a muffin tin with 10 cases.
- Sift flour, baking powder and sugar.
- In a jug, mix melted butter, beaten eggs, vanilla and milk.

- Stone and chop the plums.
- Add to batter and do not over mix.
- Spoon into cases 3/4 fill.
- Sprinkle tops with the demera sugar.

- Preheat oven to 425°F.
- Generously grease 12 muffin cups or line with papers.
- Combine flour, sugar, baking powder, and salt in a large mixing bowl.
- Whisk to blend thoroughly.
- In a separate bowl. whisk milk, egg, melted butter, and almond.
- Make a well in the center of dry ingredients and pour in the egg mixture.
- Blend with a wooden spoon until a moist, lumpy batter is formed.
- Stir in plums.
- Spoon into prepared cups and bake for 20 to 25 minutes, or until a wooden pick inserted in center comes out clean.
- Cool on a rack for 5 minutes, then remove to a rack to cool completely.

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extracts. Combine the flour, baking powder and salt; add to creamed mixture alternately with cream. Fold in plums. Fill greased or paper-lined muffin cups three-fourths full., For topping, in a small bowl, combine the brown sugar, flour and cinnamon; cut in butter until crumbly. Stir in walnuts. - Pre heat the oven to 180°C.
- Wash the plums and cut them into small cubes. Crush 100g of the amarettinis in a freezer bag until they are very small. Crush the remaining 50g coarsely and put aside.
- Mix the small crumbs with flour and baking powder in a big bowl. Add the plums.
- In a second bowl mix the eggs, yoghurt, sugar and oil. Add the flour mixture.
- Either grease the muffin pan or line it with muffin paper bun cases. Fill in the dough and sprinkle it with the coarse biscuit crumbs.
- Bake the muffins for 20-25 minutes until they are golden brown.

SUGAR PLUM MUFFINS

- Place the plums into a saucepan with the golden syrup. Bring to the boil and then stew and simmer until the plums are deliciously soft but still holding some shape. Reserve to cool.
- Set the oven to 180C/fan. Line a deep muffin pan with 12 cases.
- Place the butter and sugar in a large bowl and using either a wooden spoon or hand-held electric mixer, cream together until fluffy. Add the egg and beat the mixture (adding a little flour if it curdles) to blend. Stir in the cooled plums and all the syrup liquid. Place the flour, ginger, baking powder and salt together in a sieve and shake into the mix. Mix well and divide between the 12 muffin cases. Bake in the middle of the oven for 20 minutes.
- Remove the cooked muffins from the pan after 5 minutes and cool on a wire rack. When almost completely cooled, sieve a good dousing of icing sugar over the muffins (or top with sugar crystals if you prefer) and serve.
PLUM PUFFS
This recipe, from Bluebird Hill Farms, was named for Marilla's famous plum puffs in the Anne of Green Gables books by L.M. Montgomery. They are a plummy muffin, dipped into butter and then cinnamon sugar; I've seen other muffin recipes called "puffs", too, and they seem to me a more likely produce from an old-timey farm kitchen than something more akin to cream puffs--which is how some fans envision plum puffs. Since there is no "official" recipe, we can only guess--but this recipe fits my vision to a "T"! Instructions for preparing plum pulp are included at the end of the recipe; it may be frozen or used for jam, as well. While the recipe doesn't specify, I'd think a cooking or dual-purpose English plum, such as Victoria, would be ideal. Times are estimated, and do not include preparation of plum pulp or cooling time.

- Preheat oven to 375°F Grease a 12-cup muffin pan.
- Mix together flour, baking powder, salt, 1/2 cup sugar, and 1/2 tsp cinnamon. Add 1 cup plum pulp (see instructions at end of recipe), cream, egg, and 1/4 cup melted butter and stir until combined (should still be lumpy, not smooth).
- Spoon batter into muffin cups to about 2/3 full. Bake about 20 minutes or until centers are set. Remove puffs from pan immediately.
- While puffs are baking, combine cinnamon and sugar. As soon as the puffs are removed from the pan, dip tops into melted butter, then into cinnamon-sugar mixture.
- To make plum pulp: Wash plums and place in a large pot. Add a little water (about 1/4 to 1/2 cup) to pot--just enough to make some steam. Cover and heat over very low heat until the fruit is soft. Pour the juice and some fruit into a colander set over a large bowl (to catch juices and pulp). Mash the fruit around with a potato masher (not too hard--you don't want to break the pits!) until most of the pulp and skins have been pressed through the colander. Discard the pits, add some more fruit to the colander, and repeat until all the fruit has been pressed through. 2 lbs of plums should yield about 3 cups pulp, which may be used for this recipe, frozen in containers or freezer bags, or made into jam. Look for European plums, not Asian plums as they are not as good for cooking.

FRESH PLUM OR PEACH COBBLER MUFFINS
This is an variation on a recipe found in The Muffin Lady cookbook. I used plums, because that's what I had, but peaches would be delicious, too. She says to use unripe fruit, as it will ripen up and get sweet during cooking. Also, use sliced fruit rather than chopped, because chopped will tend to "get lost" during baking. These muffins are like a hand held fruit cobbler. So good!

- Heat oven to 350 degrees.
- Peel and slice fruit into 6 slices each.
- Sift the dry ingredients, making a well in the center.
- Pour wet ingredients into the well, and blend by hand.
- (Batter will be thicker than regular muffin batter.) Scoop batter into lightly greased, large 6 muffin pan.
- Insert 2 plum or peach wedges into each muffin.
- (They will be sticking out over the batter. This is ok) Sprinkle muffin tops with cinnamon.
- Bake for 30 minutes, or until center of muffins is resistant to touch.
- Cool 5 minutes in pan, then turn out on rack to cool.

- To keep the chopped fruit in an even layer, the muffin cups are first partially filled with batter then topped with fruit and another layer of batter. The tops are sprinkled with cinnamon-sugar before baking.

- Put milk, oil, and egg in a bowl and mix hard with a fork. Add flour and sugar and mix again, but leaving lumps.
- Toss the sliced plums in cinnamon and ginger, then stir about 2/3 of them into the mixture, including any leftover spice.
- Spoon mixture into 12 muffin cases. Lay the rest of the plums on top of the mixture.
- For the topping, combine all the ingredients except oats together with you fingers, until it looks like breadcrumbs, then add the oats. Spoon onto the tops.
- Put in the oven for about 15/ 20 minutes at 180 degrees.
