Poached Halibut with Vegetables a la Paysanne image

Steps:

  • In a medium saucepan, combine chicken stock, 3/4 cup water, and 3 tablespoons butter. Add onion, carrot, celery, and potatoes; cook over medium-low heat until tender and most liquid is absorbed. Season with salt.
  • In an 8- to 10-inch skillet, bring 1/2 cup water and remaining 1 tablespoon butter to a simmer. Season halibut on both sides with salt. Place halibut in poaching liquid; cook until just well done, 3 to 5 minutes. Using a slotted spatula, transfer halibut to plate, and serve with vegetables.

3/4 cup homemade chicken stock, or canned low-sodium chicken broth
4 tablespoons unsalted butter
1/2 onion, finely chopped
1 carrot, peeled and thinly sliced into rounds
2 ribs celery, thinly sliced crosswise
2 Yukon gold potatoes, peeled, thinly sliced crosswise, and quartered

Poached Halibut With Green Beans and Red Potatoes image

Steps:

  • Place the potatoes in a large pot with enough cold water to cover them by 2 inches.
  • Add 2 teaspoons of the salt and bring to a boil.
  • Reduce heat and simmer until almost fork-tender, about 15 minutes.
  • Add the green beans and cook 5 minutes more, until just tender.
  • Drain and set aside.
  • In the same pot, melt the butter over low heat with the chives, 1/4 tsp of the salt, and 1/8 tsp of the pepper.
  • Quarter the potatoes and return them to the pot with the green beans.
  • Stir gently to combine.
  • Season the fish with the remaining salt and pepper and place in a large skillet.
  • Pour in just enough wine to reach halfway up the sides of the fish.
  • Bring to a simmer over medium-low heat.
  • Cook 6-8 minutes, covered, until the fish is opaque.
  • Serve with the beans and potatoes.
  • Spoon any extra chive butter on top of the fish.
  • TIP: You can replace the halibut with any firm-fleshed white fish, like swordfish. The fillets should be 1 inch thick.

These green beans and potatoes are a spectacular dish. I have been making them for years in large quantities for special events at my church. The smoked turkey tails make an excellent broth that is seasoned beyond words. Let the meat cook until it falls off the bone for the ultimate flavor, at least 2 hours.

Steps:

  • Place the turkey tails and onion into a 4 quart Dutch oven and fill half way full with water. Season with salt, pepper and garlic powder. Bring to a boil, then cover and simmer over low heat until meat falls off the bones, about 2 hours. Remove the bones and skin; return the meat to the pot. Discard bones and skin.
  • Add the green beans to the Dutch oven and simmer for 20 minutes, then add the potatoes. Simmer for 10 to 15 minutes more, or until they can be easily pierced with a fork.

  • Preheat the oven to 450˚F (230˚C). Arrange the oven racks the top third and bottom third of the oven.
  • Bring a large pot of salted water to a boil. Add the potatoes and cook until fork-tender, about 20 minutes, then drain.
  • Transfer the potatoes to a rimmed baking sheet and gently smash so they flatten halfway. Drizzle a generous amount of olive oil over the potatoes, then season with salt, pepper, and 1 tablespoon of the Zesty spice blend. Spread on a baking sheet and set aside.
  • In a small bowl, mix together 2 tablespoons of the Zesty spice blend, 1 tablespoon salt, and 2 teaspoons pepper. Gently the pat halibut fillets dry with a paper towel. Season the fillets on all sides with spice mixture.
  • Arrange the halibut and green beans in a single layer on a rimmed baking sheet. Drizzle olive oil over the fish and green beans. Sprinkle salt and pepper over the beans and toss to coat. Turn the fish over to ensure all sides are coated in olive oil.
  • Place potatoes on the top rack of the oven and the fish and beans on the bottom rack. Roast until the potatoes are crispy, the fish is opaque in the center, and the beans are crisp but tender, 15-18 minutes.
