Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment.
  • Combine the cream of chicken soup, frozen vegetables, garlic powder, shredded chicken and some salt and pepper in a bowl.
  • Unwrap the pie crusts and cut off the round edges of each to create a square. Cut each square into quarters, then trim the edges to create rectangles. Put 1/4 cup of the chicken mixture in the center of 1 rectangle and brush the pastry with water around the perimeter. Top with another piece of pastry and use a fork to press down on the edges to completely seal closed. Brush with the egg and poke a few fork holes in the top. Repeat with the remaining rectangles and filling to make 8 pot pie pockets. Transfer to the prepared baking sheets. Bake until golden brown, 20 to 30 minutes.

Two 10 1/2-ounce cans cream of chicken soup
One 10-ounce bag frozen vegetables (carrot, corn and green bean mix)
1 teaspoon garlic powder
1 small rotisserie chicken, meat shredded, skin and bones discarded
Kosher salt and freshly ground black pepper
2 boxes refrigerated pie crusts (2 crusts in each box)
1 large egg, beaten

Steps:

  • Preheat the oven to 375 degrees F. Line baking sheets with parchment.
  • Lightly flour your work surface. Unfold 1 puff pastry sheet at a time and roll each into a 10 by 15-inch rectangle. Using a ruler, cut each into 2 (5 by 15-inch) rectangles, then cut each rectangle into 5 (5 by 3-inch) rectangles. Transfer the 20 rectangles on to the baking sheet and chill in the fridge until cold.
  • Peel, halve and core the pears, and then cut them into 1/4-inch thick slices. Toss them with the almonds, cherries, sugar, cornstarch, salt, lemon juice and almond extract.
  • Remove the rectangles from the fridge, place 5 of them on a new baking sheet and evenly spoon half the fruit mixture onto them, leaving a little bit of a border all around. Beat the egg and lightly brush the borders. Lay 5 more rectangles of dough over the filling. Use a fork to press them gently sealed. Repeat with the remaining dough and filling. Refrigerate for 20 minutes.
  • Brush the tops with the beaten egg. Cut 3 vents, about 1/2-inch long, in the top of each pie. Sprinkle with sugar. Bake, rotating once, until the crust is golden and you see the juices bubbling, 25 to 30 minutes. Cool the pies on a cooling rack at least 20 minutes before serving.

All-purpose flour, for work surface
2 (7-ounce) sheets frozen puff pastry, thawed
2 to 3 Bartlett pears
1/2 cup blanched and sliced almonds
1/2 cup dried sour cherries
1/3 cup sugar, plus more for sprinkling
4 teaspoons cornstarch
1/8 teaspoon fine sea salt
1 tablespoon fresh lemon juice (from 1/2 a lemon)
1/4 teaspoon almond extract
1 egg

This was shown on Food Network by Alton Brown, posting the recipe here for all those who are looking for those pies to take on the road, picnic, or in your lunch box. There are several fillings so will add them in the directions, these can be desserts or lunch pockets. They can be baked, fried, or even deep fried. How versatile can you get? Now add to this that you can make these up and freeze them prior to cooking for OMAC's Ohhhhh yah, now this is one of those really welcome recipes with all around appeal.

Once heated, place 2 to 3 pies at a time into pan and saute until golden on both sides, approximately 3 to 4 minutes per side. Allow to cool 4 to 5 minutes before serving.
  • To deep-fry pies, heat vegetable oil in a deep fryer or a large heavy pot to 375 degrees. Once hot, add 1 to 2 pies at a time and fry until golden brown(they will float to the top when ready) approximately 3 to 4 minutes.
  • To bake pies, preheat the oven to 350 degrees. Place finished pies onto an ungreased cookie sheet and bake for 25 to 30 minutes or until golden brown.
  • Mango Filling:.
  • Place all of the ingredients into a small saucepan over high heat and bring to a boil. Reduce the heat to low, cover and simmer for 30 minutes, stirring occasionally. Transfer to a bowl and place in refrigerator to cool completely before using as filling.
  • Chocolate Filling:.
  • Place the sugar, cocoa powder, salt and butter into a large zip-loc bag and squish to combine. Cut a hole in the corner of the bag.
  • For each pie pipe 1 to 2 tablespoons of mixture onto the center of the dough.
  • ***Note***.
  • For a lunch type of pie, use left over stew, or hash instead of the sweet fillings, and cook as desired.

Steps:

  • For the dough: Sift together the flour, baking powder, garlic powder and salt in a mixing bowl; cut in the shortening. Blend in a mixer until the shortening fully mixes with the flour. Separately beat the egg with 2 cups cold water. Slowly add the beaten egg and water to the flour mixture while mixing until a firm dough ball forms, about 5 minutes. Allow to rest and chill for at least 1 hour.
  • For the filling: Roast the poblano pepper directly over a flame until they blister and blacken. Let cool, then peel the char off with a paper towel. Rinse the roasted pepper under water. Remove the stem and seeds and cut into 1/2-inch pieces.
  • Saute half the onions in cooking oil in a large skillet over medium heat, 1 to 2 minutes. Add the ground chicken. Cook the chicken all the way through; set aside in large mixing bowl.
  • Add a bit more cooking oil, the remaining onions, the poblano peppers and garlic and saute until the onions soften. Add the butter and cook until melted. Add the flour, slowly coating the onions and peppers. Gradually add 1 cup water while stirring, until the mixture has a gravy consistency. Add the ancho chile powder, paprika, oregano, ground cumin, white pepper and salt to taste. Stir well and cook, 3 to 5 minutes. Mix the gravy with the cooked chicken, add the corn and allow to cool. Combine the cooled chicken and gravy with the cheese and lime juice.
  • Heat oil in a deep-fryer to 350 degrees F. (Or, if baking the pies, preheat the oven to 350 degrees F.)
  • Roll out the dough about 1/4-inch thick and cut out 12 to 15 discs, re-rolling as needed. Spoon some chicken filling onto each disc. Pat the edges of the dough with water. Crimp with a dough press or fold dough over and press the edges firmly with your fingers.
  • Fry until golden, 4 to 5 minutes (or bake 15 to 20 minutes).
  • Let cool and enjoy with friends and family!

6 cups all-purpose flour
2 tablespoons baking powder
1/4 teaspoon garlic powder
Dash salt
1 cup shortening
1 egg
1 poblano pepper
1/2 cup diced yellow onion
Cooking oil
1 pound ground chicken breast
2 cloves garlic, minced
2 tablespoons butter
1/4 cup all-purpose flour
2 teaspoons ancho chile powder
1/2 teaspoon paprika
1/4 teaspoon oregano
1/8 teaspoon ground cumin
Dash white pepper
Salt
1/2 cup corn kernels
1/2 cup Monterey Jack cheese, shredded
Juice from 1/2 lime

SWEET POTATO POCKET PIES

This recipe is taken from "the ultimate GULLAH cookbook", a book about the African American Gullah people, a taste of Food, History and Culture from the Gullah people of southeastern USA. I have slightly embellished the original recipe to put the sweet potatoe into a pastry to be a finger food vegetable. These pocket pies will be served at the Northside Farmers Market JuneteenthFest. A great tasting food combining USA's low country cooking and Australia Pocket Pies. Options are to combine sweet potatoes with a can of sliced small white potatoes. Pies are less sweet and more like a side vegetable. Or put any other vegetables you'd like to combine with sweet potatoes-bell peppers, hot chili's, leeks, etc.
