Steps:

  • Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add the ham, barbecue spice and scallion whites. Saute for 2 to 3 minutes.
  • Lower the heat to medium. Toss the rice with the remaining 2 tablespoons oil in a medium bowl. Add to the skillet and quickly stir so the ham and scallions get evenly distributed in the rice. Cook without stirring for 5 minutes so the bottom gets crispy.
  • Combine the hoisin, soy, chile sauce and ginger in a small bowl and whisk together. Add the sauce to the skillet along with the peas and pineapple. Stir gently to combine, retaining the crispy bottom. Serve immediately topped with the fried egg, french-fried onions, sesame seeds and scallion greens.

3 tablespoons vegetable oil
4 to 5 slices deli ham
1 teaspoon barbecue spice rub
3 scallions, sliced thin on the bias, white and green parts separated
4 cups cooked rice
2 tablespoons hoisin sauce
2 tablespoons soy sauce
1 tablespoon chile garlic sauce, chile paste or curry paste, optional
1 tablespoon grated fresh ginger
1/2 cup frozen peas
1/4 cup fresh, frozen or canned pineapple, chopped
1 large egg, cooked sunny-side up
1 teaspoon canned french-fried onions
1 teaspoon black sesame seeds

HAWAIIAN FRIED RICE

Growing up in the South Pacific, rice was the mainstay of our diet. When my husband and I moved stateside, we created this Hawaiian fried rice recipe. We bring this dish to every potluck, and it's always the hit of the party. -Janice Edwards, Plainville, Illinois

Steps:

  • Cook rice according to package directions. Meanwhile, in a Dutch oven, heat 1 tablespoon margarine over medium-high heat. Whisk eggs until blended; pour into pan. Mixture should set immediately at edge. As eggs set, push cooked portions toward center, letting uncooked portions flow underneath. When eggs are thickened and no liquid egg remains, remove to a cutting board and chop., In same pan, heat 1 tablespoon margarine over medium-high heat. Add Spam and onion; cook and stir until Spam is lightly browned, 6-8 minutes. Add mixed vegetables, garlic and pepper; cook until heated through. Stir in cooked rice, soy sauce and remaining 1/2 cup margarine; cook and stir until margarine is melted. Gently stir in eggs. If desired, top with sliced green onion.

This delicious fried rice recipe is from the Westin Maui, Hawaii; where they serve it in a fancy version of a Chinese take-home box. It makes an neat party dish since it's easy to walk around while munching on the fried rice in a box.

HAWAIIAN RICE

A wonderful dish that brings back the flavor of the islands. A side dish that dresses up plain old pork chops or can be used as a bed for seafood like grilled scallops or shrimp.

Steps:

  • 1. Pour syrup from the can into a sauce pan. Bring to a boil for approximately five minutes.
  • 2. Lower heat and stir in brown sugar untill it disolves completely. Add ginger and soy and allow to sit on very low heat to keep warm.
  • 3. On a grill place pinapple rings and cook for about four minutes on one side and one minute on the other side. ( you can broil them in the oven, but you should baste the rings with the sauce before broiling to help pinapple turn golden brown) place pinapple rings on top of rice, pour sauce over rice.
  • I highly recommend adding grilled scallops or shrimp to this dish. enjoy.

PRIZE-WINNING POLYNESIAN PORK OVER RICE

I recently inherited my Great Aunt's recipe collection. This is a recipe from her recipe box that she clipped out of the Chicago Tribune. It had won the "$5 Favorite Recipe prize." From the splatters on the clipping, I imagine my Aunt enjoyed this one. These days,I might try browning the meat in a little olive oil instead of the bacon drippings. Despite the name, I doubt this is a traditional Polynesian dish, but rather is one inspired by Polynesian cuisine.

  • Heat 2 tablespoons of oil in a large nonstick skillet over medium heat, and stir in the rice. Toss the rice with the hot oil until heated through and beginning to brown, about 2 minutes. SPIRIT OF ALOHA FRIED RICE RECIPE - THE MOUSE FOR LESS BLOG

  • First, cook your rice according to its directions. For this recipe, we wound up using instant rice, simply for speed purposes. No matter what type of rice you use, make sure all of its water is fully absorbed. Once your rice is fully cooked, set it aside.
  • While your rice is cooking, chop your onion, carrots, cabbage, and green onion. You will want to make sure the pieces are small enough to cook quickly and blend into the fried rice.
  • Once everything has been chopped, take out a large saute pan or wok. We used a cast iron wok, which worked very well for distributing heat and containing the whole recipe. Melt your butter in the pan over medium to high heat. Then add the chopped vegetables. You will want to cook the vegetables, stirring continuously, until they just begin to soften (about 5 minutes). If you cook the vegetable too long, they will turn mushy and burn!
