I found this in a pamphlet from the orchard (about Maryland apple orchards) a few years ago when we were picking apples. It is one of the tastiest things I have ever made!

- Peel, core, and slice the apples.
- Preheat the oven to 350 degrees.
- Melt the butter in a skillet.
- Brown the pork chops on both sides in the butter.
- Grease (or spray) a large baking dish.
- Put the apple slices in the bottom of the dish.
- Mix the brown sugar and cinnamon.
- Sprinkle the cinnamon and sugar over the apples.
- Place the pork chops on top of the apples.
- Cover with foil and bake for 1 and 1/2 hours.

- Sprinkle pork chops with salt. In a large skillet, brown chops in oil; set aside. Place apples and raisins in a greased 13-in. x 9-in. baking dish. Combine 2 tablespoons brown sugar, cinnamon and cloves; sprinkle over apples. Drizzle with lemon juice. Arrange pork chops on top. , Bake, uncovered, at 325° for 40-45 minutes or until chops are tender and juices run clear. , In a small saucepan, combine the apple juice, orange juice and remaining brown sugar; bring to a boil. Reduce heat and simmer for 10 minutes. Serve with pork chops just before serving.

- Preheat the oven to 400ºF.
- Place the potatoes, onion, garlic and oil in a large roasting tray or dish. Toss together and season with salt and freshly ground black pepper.
- Bake for 15 minutes.
- Remove from the oven, then stir in the apple slices and lay the pork steaks on top.
- Season and sprinkle over the sage and then return to the oven and bake for a further 20 minutes or until the pork is golden and the apples and vegetables are tender.

ROAST PORK LOIN WITH APPLES

- Preheat the oven to 400 degrees F.
- In a large ovenproof skillet heat the vegetable oil over high heat. Season the pork loin all over generously with salt and pepper. Sear the meat until golden brown on all sides, about 2 to 3 minutes per side. Transfer the meat to a plate and set it aside.
- Add the onion, carrot, celery, garlic, herb sprigs, and 2 tablespoons of the butter to the skillet. Stir until the vegetables are browned, about 8 minutes. Stir in the sliced apples, then push the mixture to the sides and set the pork loin in the middle of the skillet along with any collected juices on the plate. Transfer the skillet to the oven and roast the loin until an instant-read thermometer inserted into the center of the meat registers 140 to 150 degrees F, about 30 to 35 minutes. (See Cook's Note.)
- Transfer the pork a cutting board and cover it loosely with foil while you make the sauce. Arrange the apples and vegetables on a serving platter and set aside. Remove and discard the herb sprigs. Return the skillet to a high heat and add the vinegar scraping the bottom with a wooden spoon to loosen up any browned bits. Reduce by half then add the cider and reduce by about half again. Pull the skillet from the heat and whisk in the mustard, and the remaining 2 tablespoons of cold butter. Adjust the seasoning with salt and pepper, to taste.
- Remove the strings from the roast and slice into 1/2-inch thick pieces and arrange over the apple mixture. Drizzle some sauce over meat and serve the rest on the side.
- Cook's Note: Pork cooked this way will be slightly pink. If desired, cook the pork to 160 degrees F, but be aware that this lean cut will not be as moist at the higher temperature.

PORK CHOPS AND APPLE BAKE
This is a simple put together meal that tastes like you cooked for hours! I made these tonight using what I had in hand and what I knew I liked. A different taste with the sweet aroma of baked apples and the tanginess from the garlic and balsamic vinegar. It provided a suttle differences with each bite. My DH and DS liked this very much. I served with baby sweet peas and smashed potatoes. The sauce can be made into a gravy but the family was hungry so I used the remaining juice as an au jus.

Steps:
- In bowl whisk egg.
- In separate bowl mix together wheat germ, basil, rosemary, garlic powder.
- Rinse and pat dry pork chops (may be pork loin chops or pork steaks).
- Dip chops in egg wash.
- Dredge through wheat germ mixture.
- Put into 9X13 roasting pan, add water to pan.
- Drizzle with balsamic vinegar.
- Put in oven at 350 degrees for 1-1 1/2 hours.
- In the meantime, quarter apple and remove cores.
- In a separate bowl, mix together cinnamon and nutmeg.
- Put apple in bowl and stir to cover apple with mixture.
- 1/2 hour after chops are in oven, flip chops over and put apples on top of chops, return to oven and continue to bake.
- **NOTE: check after 1 hour total baking time for doneness depending on thickness of chops and oven variations time can vary 1- 1 1/2 hours.
- Serve with side dish and vegetables.
- Au jus from baking can be dripped over chops and apples on a platter or can be made into a tasty gravy.

- Rub the pork steaks with a little oil and season with pepper and salt to taste. Heat a large frying pan and fry the steaks for 2 mins on both sides until golden. Transfer to a plate. Adding a little more oil to the pan, fry the apples, onions and sage for 5 mins or until the apples have softened.

- Heat oven to 220C/200C fan/gas 7. Tip the onion into a roasting tin and put the pork shoulder on top. Rub the pork skin with the oil and sprinkle with salt and the fennel seeds, if using. Tuck the garlic cloves under the side of the pork. Roast for 30 mins or until the skin begins to crackle up, blister and brown.
- Reduce heat to 180C/160C fan/gas 3, add the apples to the tin, and roast for about 2 hrs or until the meat is very tender when tested with a sharp knife. Lift the pork out to rest and spoon out the apple and onion.
- While the pork rests, make the gravy. Tip all the fat out of the tin, then put it over a low heat. Add a splash of stock, scraping any sticky bits off the bottom with a wooden spoon. Pour in the remaining stock, then bring everything to the boil. Squash in the garlic and remove the skin. Strain the gravy through a sieve into a jug. Serve the pork and crackling in slices with the roasted apple, onion and gravy, and either roast or mashed potatoes.

- Preheat oven to 375 degrees F (190 degrees C).
- Heat oil in large skillet. Saute onion in oil for 1 minute, or until tender. Remove onion and set aside. Brown pork chops on both sides in oil.

This is a delicious, very easy way to bake pork chops. I've found that some people like to also eat the apples that are cooked along with it, some prefer the pork chops and sauce without the apples. - Preheat the oven to 350.
- Spray a pan large enough to hold the chops in a single layer with non-stick spray.
- Season the pork steaks or chops with salt& pepper.
