ROLLED PORK FLORENTINE

- Heat the oven to 375 degrees F. Set the pork on a cutting board and imagine you're going to cut an upside-down letter T into it: in other words, slice half-way through, lengthwise, then half-way through to the left and the right. Open out the meat. Lay plastic wrap over it, and pound flat with a mallet. Season with salt and pepper, and set aside.
- Rinse the spinach and spin dry, allowing a little water to remain clinging to the leaves. Put it in a saute pan, cover, and wilt, about 5 minutes. Lay the spinach on a clean tea or kitchen towel and squeeze dry. Chop, and set aside.
- Wipe out the pan and put if back on the stove. Fry the bacon until cooked, remove to drain. Pour off all but a tablespoon or 2 of the fat and fry the onion until golden. Add the garlic and cook 1 minute. Stir through the bread crumbs and spinach. Season with salt and pepper.
- Pat the stuffing over the meat, leaving a 1-inch border. Roll and tie the pork at 2-inch intervals. Wipe out the saute pan and heat the oil in it. Brown the meat on all sides, pour in the wine, and then transfer to the oven and roast until done, about 45 minutes. Remove from the oven and let the meat rest 10 minutes. Wrap for later, or slice and serve with the pan juices poured over.

- Heat the oil in a heavy large skillet over medium heat. Sprinkle the pork chops with salt and pepper. Add the pork chops to the skillet and cook until they are brown and an instant-read meat thermometer inserted horizontally into the pork registers 160 degrees F, about 3 minutes per side. Transfer the pork chops to a plate and tent with foil to keep them warm.
- Add the onion to the same skillet and saute over medium heat until crisp-tender, about 4 minutes. Add the tomatoes with their juices, herbes de Provence, and 1/4 teaspoon red pepper flakes. Cover and simmer until the flavors blend and the juices thicken slightly, stirring occasionally, about 15 minutes. Season the sauce, to taste, with salt and more red pepper flakes. Return the pork chops and any accumulated juices from the plate to the skillet and turn the pork chops to coat with the sauce.
- Place 1 pork chop on each plate. Spoon the sauce over the pork chops. Sprinkle with the parsley and serve.
SKILLET PORK CHOPS FLORENTINE
I got this recipe from Campbell's Kitchen. They gave a tip on thawing the spinach - microwave on high for 3 minutes, breaking apart with a fork halfway through the heating.

Steps:
- Heat 1 tbsp of olive oil in a large skillet over medium-high heat.
- Add the pork chops and cook until browned on both side, then remove and set aside.
- Reduce the heat to medium and add the remaining oil.
- Add the onion and cook until tender.
- Stir in the pasta sauce and spinach and heat to a boil.
- Return the pork chops to the skillet, reduce heat to low, cover, and cook until pork chops are done.
- Sprinkle with cheese.

Steps:
- Brown the chops in a skillet without adding any oil.
- Add salt and pepper to taste and then add the water. Cover and simmer till tender.
- Chop the spinach and mix with the onion and mix.
- Meanwhile, mix the flour, butter and milk and add it to the noodles.
- Spread spinach over the bottom of a casserole, pour noodles over that and arrange the chops on top of the noodles.
- Pour pan gravy over all.
- Sprinkle with grated cheese and bake at 375 degrees F. for 15 minutes.

- Trim fat from meat. Make a pocket in each chop by cutting horizontally from fat side almost to the bone. Place pork chops in a 2-gallon heavy resealable plastic bag set in an extra-large bowl; set aside. In a small bowl combine oil, lemon peel, the 2 tablespoons rosemary, the four cloves garlic, the salt, and pepper; pour over pork. Seal bag. Chill for at least 4 hours or up to 6 hours, turning bag occasionally.
- In a large skillet cook and stir pancetta and onion over medium-high heat for 6 to 8 minutes or until pancetta is brown and crispy. Stir in bread crumbs, the 2 teaspoons rosemary, the snipped oregano, and the two cloves garlic. Stir in the lemon juice.
- Remove chops from marinade; discard marinade. Spoon 1/4 of the pancetta mixture into the pocket in each chop; press top of chop lightly with fingers to secure filling. Allow chops to stand at room temperature while preheating grill.
- For a charcoal grill, arrange medium-hot coals around a drip pan. Test for medium heat above pan. Place chops on grill rack over drip pan. Cover and grill for 25 to 30 minutes or until chops are slightly pink in center and juices run clear (145°F.) (For a gas grill, preheat grill. Reduce heat to medium. Adjust heat for indirect cooking. Place chops in a roasting pan on a rack over burner that is turned off. Cover and grill as directed.) Let chops stand for 5 minutes before serving. If desired, garnish with oregano leaves.
