TENDER SWEET 'N' SOUR PORK CHOPS

Steps:
- Sprinkle pork chops with pepper. In a large skillet coated with cooking spray, cook pork over medium heat for 4-6 minutes on each side or until lightly browned. Remove and keep warm. , Add the water, vinegar, brown sugar, soy sauce and Worcestershire sauce to skillet; stir to loosen browned bits. Bring to a boil. Combine cornstarch and cold water until smooth; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. , Return chops to the pan. Reduce heat; cover and simmer for 4-5 minutes or until meat is tender.

EASY SWEET AND SOUR PORK CHOPS
A simple recipe I learned from a friend in California several years ago. Serve with rice or fried rice.

Steps:
- 1. Preheat oven to 350 degrees.
- 2. Mix soy, chili sauce, and honey. Place pork chops in a greased casserole. Pour sauce over all. Cover and bake for 45 minutes. Remove cover and continue baking for 15 minutes more. Serve over rice or fried rice.
- 3. OPTIONAL: When you uncover dish you may add 1/2 cup sliced green bell pepper and 1/2 cup drained canned pineapple chunks. Continue baking as above.

- In a small saucepan, combine the first five ingredients. Bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, for 10 minutes or until slightly thickened. Meanwhile, in a large nonstick skillet, brown pork chops in oil; drain. , Line an 8-in. square baking dish with foil; coat the foil with cooking spray. Place pork chops in prepared pan; sprinkle with half of the green pepper, onion and carrot. Pour sauce over all. , Cover and bake at 350° for 30 minutes. Uncover; sprinkle with the remaining vegetables. Baste with sauce in pan. Bake 10-15 minutes longer or until meat and vegetables are tender. Serve with rice if desired.

- Brown pork chops in a little oil or coat the pan with cooking spray.
- Mix together brown sugar, vinegar, water and soy sauce.
- When pork chops are browned, pour the sauce over them and let it come to a boil.
- Reduce heat to low, cover and simmer. For 1/2" chops, cook 45 minutes. For thicker pork chops, cook 1 - 1 1/2 hours.
- Remove chops to a plate.
- Stir 1 teaspoons of cornstarch in 1 tablespoons water and add to liquid in the pan. Stir until it thickens and clears. If you want a thicker sauce, add a little more cornstarch.
- Return the chops to the pan, turning to coat in the sauce. Let cook for a couple of minutes.
- Serve with rice.

- Heat oil in a large skillet over medium-high heat. Season pork chops all over with salt and black pepper and add to hot pan. Cook chops 2 minutes per side, until golden brown. - In a small bowl, combine the brown sugar, vinegar, ketchup and soy sauce. Pour half into a large resealable plastic bag; add pork. Seal bag and turn to coat; refrigerate for 30 minutes. Set remaining marinade aside., Drain and discard marinade from pork. In a large skillet, cook pork in oil for 3 minutes. Add the onion, carrots, green pepper, garlic and ginger; saute until pork is tender. Add reserved marinade. Bring to a boil; cook for 1 minute. Stir in the pineapple. Serve with rice if desired. Freeze option: Cool pork mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. PORK CHOPS WITH APPLES AND SWEET AND SOUR SAUCE

- Sprinkle the chops with salt and pepper to taste. Set aside.
- Cut each apple into quarters. Peel the quarters, and discard the core of each.
- Dredge the chops in flour. Heat the oil in a large heavy skillet, and add the chops. Cook until well browned on one side, about 5 minutes. Turn the chops, and continue cooking about 5 minutes.
- Remove the chops, and add the quartered apples. Cook about 2 minutes, turning the apples often. Remove the apples, and pour off the fat from the skillet.
- Add the shallots and vinegar and cook briefly, stirring with a wooden spoon. Add the broth and honey. Cook about 1 minute, and stir in the tomato paste.
- Return the chops and apples to the skillet. Bring the sauce to a boil, spoon the sauce over the chops, and cover closely. Cook 10 minutes. Transfer the chops and apples to a serving dish, and pour the sauce over.
